Welcome From the BADN President to our Virtual Anniversary Afternoon Tea! A s you know, BADN is 80 this year – having been founded by Jacqui Elsden dentist Philip Grundy and his dental nurse Madeleine (Bunty) Winter in Leyland, Lancashire, in 1940. MSc FBADN BADN President We had all sorts of things planned to celebrate, but unfortunately due 2019-2021 to the Covid-19 pandemic, our celebrations have had to be postponed until next year. We shall be celebrating our 81st anniversary in 2021 instead, with the Dental Nurses’ Forum, chaired as usual by BADN, and the BADN Lounge and stand at the 2021 Dentistry Show; and our Anniversary Afternoon Tea at the NEC Hilton. We do hope to be able to hold our Annual General Meeting on 3 November 2020 at the Naval & Military Club, St James’s Square, London, followed by a Drinks Reception. Those members attending the AGM will also be invited to attend the Drinks Reception. Details will be published later in the year on our website and in the British Dental Nurses’ Journal. So how does a Virtual Afternoon Tea work? Inside your box, alongside this booklet, is a BADN brownie and a tea bag. On 22 August 2020, you make your own afternoon tea (we’ve put some suggestions and some recipes in this booklet), perhaps with a glass of something fizzy, and then log into our Zoom room via the link sent to you. (If you are not familiar with Zoom, we will hold a trial run the previous evening – details will be sent to you.) During the virtual Tea, we will be presenting the BADN Outstanding Contribution award and long service badges to participants who have been BADN members for 5, 10, 15, 20 and 25 years. There will also be a Quiz, with a prize of a £80 afternoontea.co.uk voucher, courtesy of Parliament Hill; and a baking competition (see page 9) with a bottle of fizz to be won! Afternoon tea was traditionally an occasion for ladies to dress in their best, with hats and gloves, so do feel free to carry on tradition! A SHORT HISTORY OF AFTERNOON TEA Tea drinking was popularised in England by Charles II and his wife Catherine of Braganza, the Portuguese Infanta. Samuel Pepys mentioned it in his famous diary in 1660: “I did send for a cup of tee, (a China drink) of which I had never drunk before”. But the invention of afternoon tea, with sandwiches and cakes (scones were only introduced in the 20th century), is credited to Anna Russell, 7th Duchess of Bedford, in 1840. The gap between the morning meal (breakfast) and the evening meal (dinner), became ever wider as it became fashionable to eat later and later in the evening, often as late as 9pm. The Duchess began inviting friends to take tea and “light refreshment” in her rooms at Woburn Abbey. When she continued the practice upon her return to London, afternoon tea became a fashionable ritual among the ladies of the upper classes. In the late 19th century,“tea rooms” were one of the few places for respectable ladies to meet without a chaperone. Much later, “tea dances” – afternoon tea with music and dancing – were held in fashionable hotels up until the Second World War. Nowadays, afternoon tea is usually a special occasion, in a posh hotel or restaurant, and a glass of champagne or prosecco is often also included. 33 VIRTUAL ANNIVERSARY AFTERNOON TEA 2020

WHAT DOES AFTERNOON TEA INCLUDE? Sandwiches – traditionally with crusts removed and cut into fingers. Traditional sandwich fillings include cucumber, egg and cress, smoked salmon with cream cheese, ham with mustard, and chicken. Everyone has their favourite afternoon tea sandwich filling! President Jacqui Elsden and Chairman Jane Dalgarno both favour smoked salmon with cream cheese - Debra Worthington prefers her salmon poached with watercress. Cream cheese is also popular with other Exec and Panel of Reps members – with peeled cucumber for Rhian Slaymaker, chopped dates for Chief Exec Pam Swain or plain for Claire Kaur. Katie Joyce, Michelle Brand and Treasurer Joan Hatchard prefer egg – Katie and Joan with cress and Michelle on gluten free bread; whilst Immediate Past President Hazel Coey opts for prawn mayonnaise. ….. Scones with jam and cream – whether you should put the jam on first or the cream, is entirely up to you! Traditionally, in Devon the cream is spread on first with the jam on top of it, whilst in Cornwall the jam comes first. ….. sweet pastries and cakes A traditional Victoria sandwich is the cake of choice of Chairman Jane Dalgarno and IPP Hazel Coey, with Claire Kaur preferring lemon drizzle and Rhian Slaymaker coffee cake. Treasurer Joan Hatchard opts for Dundee cake, whilst Debra Worthington likes a vanilla slice and Katie Joyce goes for a banana and dark chocolate loaf. Many afternoon tea venues offer a very wide range of teas, including some very rare and exotic ones. The more usual varieties of tea are: Assam A strong full-bodied tea from India, with a distinctive malty flavour Breakfast A traditional blend of black teas, blended to go well with milk and sugar, full-bodied, robust and rich Darjeeling An aromatic, astringent tea from India Earl Grey A blend of black teas scented with bergamot oil, named after the 2nd Earl Grey, Charles, who was Prime Minister from 1830 to 1834 Keemum a light Chinese black tea, with slightly fruity, smoky notes Lapsang Souchong A black tea from China, traditionally smoked over pine needles, with a smoky odour and flavour Oolong A semi-oxidised Chinese tea, which can vary from sweet and fruity to green and fresh, depending on the type of production Russian Caravan A blend of oolong, keemum and lapsong souchong teas, aromatic and full bodied, with a sweet, malty, smoky taste. Breakfast tea is popular with the BADN Exec and Panel of Representatives, being the preference of Chairman Jane Dalgarno, Immediate Past President Hazel Coey, Treasurer Joan Hatchard, Debra Worthington and Rhian Slaymaker; whilst Michelle Brand and Katie Joyce both prefer Earl Grey. HOW TO MAKE A POT OF TEA For best results, use a teapot and loose leaf tea. Fill the kettle with fresh water and boil. Pour boiling water into teapot, swirl around and pour out. Put one spoonful of tea per person into the teapot plus one for the pot (for the more scientifically minded, the recommended ratio is 5g tea to 400ml water!). Pour water into pot – boiling for black tea, cooled down to 85° for green tea. Stir once, then leave in a warm place (or under a tea cosy) to brew for 3-4 minutes for green tea, 3-5 minutes for black tea. Pour into cups using a tea strainer. Add milk, lemon, sugar (or even rum!) to taste. MILK OR LEMON? In the UK, whether milk, sugar or lemon – any, all or none - should be added to tea is a matter of endless debate. Generally speaking, milk is added to bold, astringent black teas and a slice of lemon to more delicately flavoured or green teas, but it is a matter of personal taste. Connoisseurs prefer their tea plain – and dental nurses, of course, don’t add sugar! According to YouGov, whether a person poured their milk in first or last used to be an indication of social class and wealth – apparently back in the day only the most expensive china would not shatter when boiling tea was poured into it, so the lower classes protected their less expensive cups by pouring their milk in first! Nowadays, the majority of people put milk in after the tea. 73 VIRTUAL ANNIVERSARY AFTERNOON TEA 2020
RECIPES The Womens’ Institute are of course famous for their baking, and have very strict rules about what is, and isn’t, a Victoria Sandwich cake! Their recipe below is available at https://www. thewi.org.uk/life-at-the-wi/food-and-cookery/recipes/recipes/baking-bread,-cakes-and- treats/victoria-sandwich VICTORIA SANDWICH • 3 medium eggs weighed in their shells (probably 6oz/170g) • the weight of the eggs in Butter /Soft Margarine • the weight of the eggs in Caster Sugar • the weight of the eggs in SR Flour • Raspberry Jam to fill – homemade/ good quality 1. Set oven Gas 4 160C (fan oven) or 180C. 2. Grease and baseline the bottom of 2 20cm/8” sandwich tins. 3. Cream butter/margarine and sugar. 4. Beat the eggs then gradually add to the mixture beating well each time. 5. Sieve the flour and fold into the mixture with a metal spoon. 6. Divide equally between the 2 tins and bake 25mins in the middle of the oven. 7. They are ready when they are golden, shrunk from the sides of the tin and spring back when touched. 8. Remove from the tins and fill with raspberry jam when cold to avoid jam bleeding into the cake. 9. A light dusting of caster sugar on the top will finish it. CLASSIC SCONES • 8oz self raising flour • 2 good teaspoons baking powder • 2oz butter • 1oz sugar • 2oz cherries or sultanas • ¼ pint milk 1. Rub butter into flour and baking powder, add sugar and fruit. Mix in milk. 2. Turn onto floured board, then with hands flatten into circle about ½ inch thick. Cut into 8 scones using 2 ½ inch (7cm) round cutter. 3. Brush with a little milk and bake at 210° for approx. 13 minutes. VIRTUAL ANNIVERSARY AFTERNOON TEA 2020 8

A prize of a bottle of fizz will be awarded to the photo chosen by the Executive Committee. DRESS CODE It was traditional for ladies to wear hats when going out to tea – so please feel free to wear your best posh frock, hat and little white gloves!
