While in India, this was one of my favorite dishes. It is a common dish, quick, easy to make and very nutritious. Serve with Naan, an Indian flat bread which you can find ready made in the grocery store, or you can substitute with flour tortillas. Lentils can be found in the grocery store in the dried beans aisle. Indian Dahl (Vegetarian Lentil Stew) Ingredients: Proceedure: 1 tablespoon sesame oil In a 3-quart or medium-sized pot, heat the oil over medium 1 cup white onion (finely chopped) heat. Once the oil is hot, add the onion, garlic, and ginger. Cook, 2 cloves garlic (finely chopped) stirring often, until the onions are translucent, about 6 minutes. 1 tablespoon fresh ginger (finely chopped) 4 cups water (or vegetable broth) • Stirring constantly, add the water or broth, lentils, spices, and 1 cup dried red or yellow lentils (rinsed and picked over) salt. Bring to a low boil, then turn down the heat to low, cover 1 teaspoon ground cumin and let stew simmer for about 20 minutes, or until lentils are 1 teaspoon ground coriander very tender. 1 teaspoon ground turmeric • Stir in the tomato paste until well combined. Cook several 1/4 teaspoon ground cardamom minutes more, or until desired temperature and consistency, 1/4 teaspoon ground cinnamon adding more water to the dahl if needed. 1/4 teaspoon cayenne pepper (omit this if you don’t like spicy) 1 teaspoon salt • For a bright finish, serve hot dahl with sprinkling of freshly 2 tablespoon tomato paste chopped cilantro. 4 | Westbrook Village LIVING October 2021

VIETNAM WAR MEMORIES COLONEL RICHARD BOIVIN In 1954, Richard Boivin joined the U.S. Air Force, not yet aware that his years of service would take him across the globe in several capacities. He was stationed numerous locations stateside, and also in Germany, Japan, Taiwan, Vietnam, Philippines, and Korea. Richard started out as a Communications Electronics Officer at the first automated Air Defense Operations Center in Germany during the Berlin wall and Cuban crisis. He supervised operations and maintenance at Vandenberg Satellite Support Station during early spy satellite operations. He also worked as a navigator on C-130’s in Southeast Asia, performed flight test engineering at Edwards AFB flight test center, and was Director of the USAF Central Inertial Guidance Test Center in New Mexico. He was also the program manager for USAF/ROKAF, developing a hardened tactical air control center in Korea during the time the Korean President was assassinated. He was Director of Avionics division of Air Force Avionics Lab for research. Richard was promoted to Colonel during his service, and also received a BS and MS in Electrical Engineering. He retired from his military career in 1982. Richard has lived at WV since 1992, when he moved here from Anaheim, California. The most rewarding aspect of his military service was the integrity of the people He served Richard Boivin with and the responsibilities he was given. Hummingbird, Hummingbird, Don’t Fly Away! By Patsy Inskip – Every day holds the possibility of a miracle As I was leaving the 2nd Sunday Marketplace at the Lakes in April, I saw a hummingbird in the street. I stopped and got out of the golf cart and went over to the hummingbird. I put my hand out and the bird got onto my hand. It looked like it had been stunned or injured. I walked back to the golf cart and held the hummingbird in my hand for about 20 minutes. Several people saw me pick up the bird and came over to see it. I was so thrilled that this little bird let me hold him. It felt like a once in a lifetime experience. Eventually, the bird flew to a nearby yucca plant. I went over to the bird again and held out my hand. He hopped on my hand once again, then he flew to a higher branch. My late friend, Shirley Theander, stopped and told me that the hummingbird was a gift from God. Top: The little beauty stayed on my hand to recover. Middle: Resting so that he could fly again.
