Beach’s Pineapple Pecan Cake Beach and Linda, our Westbrook neighbors, came for dinner one night. Beach made this dessert and we fell in love with it! It’s sort of a cross between pineapple upside down cake and fruit cake. We have embellished it a bit with some of our favorite things. Cake Ingredients: • 20 oz. can crushed Icing Ingredients: • 2 cups flour pineapple with juice • 1 stick butter, softened • 2 cups sugar • 1-1/2 cups chopped • 8 oz. cream cheese, softened pecans • 2 tsp. baking soda • 2 cups powdered sugar • 1 cup golden raisins • 2 eggs • 1 Tablespoon vanilla • ½ cup shredded coconut PROCEDURE FOR CAKE: PROCEDURE FOR ICING: • Mix the dry ingredients • Combine all icing ingredients and beat • Add in the eggs, pineapple (along with its juice), until smooth pecans, raisins and cocoanut • Frost cooled cake using all the icing • Stir just until moistened. • An added embellishment is to finely chop • Pour into a buttered 9 x 13-inch baking pan. some pecans and dust the top of the iced cake Delicious! • Bake in a preheated oven 350 degrees for about • 35 minutes or until toothpick comes out clean • Cool completely 4 | Westbrook Village LIVING September 2021

VIETNAM WAR MEMORIES BARRY STRACHAN In 1966 Barry Strachan joined the U.S. Air Force and began training as a Radio Intercept Analyst at Goodfellow Airforce Base in San Angelo, Texas. He then was sent to Kadena AFB in Okinawa, Japan for 18 months. He became a part of the USAF Security Service and was sent for temporary duty to Danang, Vietnam and Udorn, Thailand. He worked there with Vietnamese and Mandarin Chinese languages as a communication analyst, using his crypto analysis and linguistics training to serve there. He also spent 14 months stationed in Taiwan in the same capacity. Upon his discharge in 1970, Barry joined Williams International, the aerospace company that developed and produced cruise missile engines. There he enjoyed 22 years in a variety of engineering and administrative positions. He then was hired by Chrysler Corp to troubleshoot their supplier issues. Barry traveled extensively throughout the eastern U.S., Brazil, and Europe for Chrysler. Barry and his wife, Dianne, retired to WV in 2001 to play golf and bridge, and for Dianne to join Village Voices and enjoy quilting. They also sometimes avoid the summer heat by staying at their condo in Flagstaff. Life Without Limits with Chuck Morse T wenty-five years ago Chuck Morse and his wife Pat purchased their first WV home, situated between two vacant lots. “We met Lori Reiland at the Westbrook Village New Home Sales office, and the rest is history!” Chuck had retired from Kraft Foods, and the pair followed family to the Valley, where they were delighted to settle in the brand new community. “We played golf and joined the Pickleball Club soon after it was formed in 2010. Pickleball became a mainstay for Chuck, which he enjoys playing to this day. Chuck ran away to join the U.S. Army when he was 17 and just out of high school. WV Pottery Club “May your hands be full of clay and your hearts be full of imagination.” – Carol Wright Club members create all different types of pottery including bowls, vases, boxes, trays, dinnerware, sculptures, totems and wall plaques. These can be functional or decorative. Many of these items can be viewed in the window of the studio. The club always welcomes new members and will give novices an orientation and introductory lesson to see if they want to continue pottery and become a member. Classes are offered in both the techniques of hand building and wheel throwing. The pottery studio is located at the Lakes Rec Center and is available to members whenever the rec center is open. The annual dues are $50.00 and that includes use of all equipment (slab roller, extruder, wheels, forms etc.) plus glazes and firings.
