COLOMBIA GLOSSARY Common Varieties A quick overview of steps from fruit to “green bean”: Colombia Bourbon Pulping is defined as the act of removing the outer layer of fruit skin and exposing the mucilage layer that remains adhered to the parchment enveloping the coffee seed. Castillo Typica Fermentation is a biological process whereby microbes consume compounds and Caturra produce by-products. Washing removes the remaining mucilage after pulping from the parchment layer. Drying utilizes heat to lower the moisture content of the coffee seed to around 10-12%. Harvest Period Hulling is defined as the step of removing the parchment layer from coffee. Huila: October to January (Main) & April to July (Fly) Grading occurs after hulling once the coffee is dried to a stable point. Density, color, size, and shape are all aspects that are used to create different grades or standards. Antioquia: October to January (Main) & April to July (Fly) Tolima: April to July (Main) & October to December (Fly) Glossary of Processes - Regional terminology may differ* Washed (sometimes referred to as Fully Washed) is when a cherry is pulped, fermented, Cauca: April to July (Main) & October to December (Fly) washed clean, and then dried. Eje Cafetero: September to December Semi Washed is when a cherry is pulped, mucilage removed (without full fermentation process), washed, and then dried. (Main) & April to July (Fly) Natural (sometimes referred to as Unwashed) is when the entire coffee fruit remains intact and dried Valle del Cauca: September to December to a stable moisture content. Once the coffee is dried, these cherry pods are hulled and graded. (Main) & April to July (Fly) Pulped Natural is when a cherry is pulped and sent straight to drying without removing Santander: November to February (Main) & May to June(Fly) all of the mucilage. Fermentation occurs as the coffee is drying. Honey is the same as the pulped natural process but dried with mucilage completely intact. Nariño: April to July (Main) & October to December (Fly) Wet Hulled (popular in Indonesia) This process can be the same as washed, semi-washed, pulped natural/honey, or natural; the difference is the hulling happens prior to the drying.
