Your Executive Chef Darby Brooks Darby’s philosophy of food is simple; “Great food starts with good wholesome ingredients”. He has built a culinary team that not only supports this philosophy, but is passionate about providing outstanding service, innovative ideas and exceptional worldly cuisine. Following graduation from the New Hampshire University, Darby’s Culinary career has flourished internationally with positions in New York, Paris, Munich, London, Geneva and Auckland. Since joining Wainui in 2016 Darby’s main focus is to deliver a unique culinary experience for all guests. His inspiration derives from the freshest ingredients and his drive to present a creative and memorable experience in every bite. Darby is a local food pioneer and has dedicated his passion to support local businesses, growers and suppliers, utilizing their goods at every chance.
