RECIPES Submitted by Carolyn Rubino I found this terrific cookbook just sitting on the shelf perbowl and we like to snack on Super Bowl Sunday. I’ve in the bookcase waiting to be discovered. The title, The copied a few recipes that struck me as fun and delicious, HUNGRY FAN’S GAME DAY COOKBOOK by Daina so try one or more when you and whomever you share this Falk, struck me immediately because February is the Su- American Sunday with get together. Bon Appetite Fig And Prosciutto Flatbread Serves 10 To 12 This fangate-friendly recipe is a spin on an incredible tart I had in a little café in Lyon, France. many years ago. A little savory, a little sweet – the combination of flavors on this flatbread seems to hit every taste bud on your tongue. If you are making this recipe when figs are in season. I highly recommend replacing the fig jam with real, sliced figs. This makes the flatbread so much tastier and fresh. In the absence of seasonal figs, the fig jam works great and yields a nice sweet change-up from my savory flatbreads, Pair one of those flatbreads with this sweeter dish and you’ve got some great options that should please everyone! 2 (12-inch) homemade flatbreads Preheat your broiler to high. ¼ cup fig jam Place your flatbreads on a baking sheet. Spread half the fig 8 ounces goat cheese, crumbled by hand into small chunks* jam onto each flatbread. 4 ounces thinly sliced prosciutto di Parma Top with the goat cheese and prosciutto. Sprinkle with Freshly ground black pepper pepper. - If goat cheese isn’t your thing, no problem. Replace it with Broil for 3 ½ minutes, until the bottoms are slightly triple crème cheese or even a Brie. charred. Serve! Chicken Rollatini Contributors: Kevin And Rosalie Boothe Serves 6 Kevin Boothe is another NFLer friend of mine from grad school. Kevin—or KB as we call him—is a smarty-pants. He played college ball at Cornell and may have been the only Ivy Leaguer in our whole cohort. KB has two Super Bowl rings (one of which he let me wear one day in school!), both of which he won with the New York Giants (Super Bowls XLII and XLVI). What you might not know by looking at him is that KB is a giant teddy bear. Perhaps I shouldn’t share that because offensive linemen are meant to be hulking, scary dudes on the gridiron. But off the field, he is a wonderfully kind friend. a loving husband to Rosalie and the sweetest dad. Here is a favorite dish of KB’s and the Boothe household. Serve with spaghetti squash, linguine or fettucine. 3 tablespoons extra-virgin olive oil, plus more for greasing 2. Carrot Cilantro Hummus Makes about 2 CUPS I developed this recipe for March Madness a few years ago. I was playing on the word dunk and made up a couple of dip recipes (in which you could dunk Nod). Cheesy:1 know. Butt happened to really like how this recipe came out so I went with it. You could also serve this at your next NBA All-Star Weekend party. To keep with the theme, I’d suggest serving it during the Dunk Contest. Da dun dun ding,. Okay, now I’m just being silly... 1 cup chopped carrots, steamed Place the carrots in a microwaveable bowl with ¼ cup 1 (15.5-ounce ) can chickpeas, drained and rinsed water and microwave on high for 3 minutes. Hailing from Brooklyn, New York, Keeth competed for the United States in the 1999 Pan American Games, where his team won a bronze. In 2002 and 2004, Keeth won the US National Sabre Championship and in 2003, he became the first American to be the top-ranked fencer worldwide. Keeth competed in three Summer Olympic Games, earning his silver in Beijing in 2008. It’s your choice how to cook the shrimp. Submitted by Holly Williams I did not write this and I’m not sure who did - but WOW does it speak to my heart!!! Worth the read. Don’t wait to read it later! Barely the day started and... it’s already six in the evening. Barely arrived on Monday and it’s already Friday. ... and the month is already over. ... and the year is almost over. ... and already 40, 50 or 60 years of our lives have passed. ... and we realize that we lost our parents, friends. and we realize it’s too late to go back... So... Let’s try, despite everything, to enjoy the remaining time... Let’s keep looking for activities that we like... Let’s put some color in our grey... Let’s smile at the little things in life that put balm in our hearts. And despite everything, we must continue to enjoy with serenity this time we have left. Let’s try to eliminate the afters... I’m doing it after_ I’ll say after... I’ll think about it after... We leave everything for later like “ after is ours. Because what we don’t understand is that: Afterwards, the coffee gets cold... afterwards, priorities change... Afterwards, the charm is broken... afterwards, health passes... Afterwards, the kids grow up... Afterwards parents get old... Afterwards, promises are forgotten... afterwards, the day becomes the night... afterwards life ends... And then it’s often too late.... So... Let’s leave nothing for later... Because still waiting see you later, we can lose the best moments, the best experiences, best friends, the best family... The day is today... The moment is now... We are no longer at the age where we can afford to postpone what needs to be done right away. So let’s see if you have time to read this message and then share it. Or maybe you’ll leave it for.. “ later “... And you’ll never share 32 THE GREENBRIAR TIMES february 2021
Aperture, Shutter, Program This month we’ll discuss controlling the exposure for a desired effect. Most cameras have a mode dial with many settings including aperture, shutter, and program priority. But which should you use and why. For a pleasing overall effect and even exposure you can use the program or auto mode and let the camera make the decisions for you. We’ll discuss Aperture and Shutter priority in the coming months. In Auto mode the camera makes all the decisions for you. You frame your shot, focus, and push the shutter button. this will work well in most situations and give you a pleasing image. In Program mode the camera will make most of the decisions for you. You can still choose to over and under expose and control whether to use the flash, among other things. this gives you more control of your image and can come in handy in tougher photographic situations. If you’re new to photography, I suggest you start with Auto and move to Program when you feel more comfortable making some changes. After you’ve mastered these modes it may be time to go to Aperture or Shutter priority. As always you can email to bill@kirmsphotography.com with any photographic questions. You can visit my web site www.kirmsphotography.com if you’d like to see more of my images. Keep shooting and improving your images, but most importantly, have fun with your camera. february 2021 THE GREENBRIAR TIMES 33
