Overview:
The Amber Approved Stampede Breakfast is a gourmet-inspired healthy
alternative to the traditional Stampede breakfast. The dream of Holistic
Nutritionist, Author and healthy food crusader Amber Romaniuk became a sold-
out hit in its first year in 2014. Once again Amber collaborates with the team at
Hotel Arts: award-winning Executive Chef Duncan Ly and Pastry Chef Karine
Moulin who was seen on Top Chef Canada season four. These talented chefs will
be creating the sumptuous breakfast creations.

Located in downtown Calgary, at the heart of all the Stampede action, Hotel Arts
is a sumptuous blend of modern luxury and intuitive service in a premier designer
boutique-style hotel. A White Hat of the Year 2013 award winner, Hotel Arts is
passionate about transforming ordinary events into extraordinary experiences.

 Amber Approved foods are gluten, sugar and dairy-free. The breakfast includes
Stampede favourites with a healthy yet delicious twist (i.e. gluten –free pancakes,
nitrite-free sausage, free range eggs) and other decadent additions of fruit
smoothies, organic juice shots, infused waters and more...

Who will be attending: The anticipated attendees are health-conscious foodies
which include those with food sensitivities, allergies and geared toward the
principles of Amber Approved recipes that are gluten, sugar and dairy free. The
demographics are anticipated to be around 60% woman and 40% men. Invitees
include the Mayor of Calgary, Naheed Nenshi and City Councillors and food
industry bloggers, writers, chefs, nutritionists and other leaders in the field of
food, health and wellness.
Attendees: Attendance will be limited to 200 people. The first breakfast in 2014
sold out in 3 weeks. Get your tickets early!
Tickets: Tickets for this gourmet buffet are $50.00 per person and must be
purchased in advance. Tickets will not be available at the door due to the
preparation and presentation of the exquisite menu.
Giving: Amber Approved is a proud supporter of Calgary Meals on Wheels. A
portion of the proceeds from the Amber Approved Stampede Breakfast will be
donated to Calgary Meals on Wheels. (Watch for more news on the Charity
Bachelor Auction in support of MOW during the event. Early word is celebrity
bachelor’s include radio station DJ fan favourites and one or more Calgary

Menu: The menu is being created by Executive Chef Duncan Ly, Pastry Chef
Karine Moulin and Executive Sous Chef Craig Boje.
Breakfast Format: Amber Romaniuk will be hosting the breakfast with Special
Guest Emcee, Global TV reporter, Jenna Freeman . Honoured guests and select
sponsors will speak throughout the morning. A local country band is planned to
entertain guests with live music to keep the capacity crowd in the Stampede
spirit. As details are confirmed they will be posted online at Amber Approved and

Executive Chef, Hotel Arts Group, Duncan Ly
Duncan Ly is the Executive Chef of the Hotel Arts
Group. Chef Ly started his culinary career at the
Wickaninnish Inn in Tofino and has worked over the
years at Diva (Metropolitan Hotel, Vancouver), Catch
(Hyatt Regency, Calgary) and the Elbow River Casino
(Calgary) before joining Hotel Arts Group in 2005 as
Executive Chef

In his tenure with the Hotel Arts Group, Chef Ly has
opened and influenced the cuisines of four separate
restaurants: the Vietmodern cuisine of Raw Bar by
Duncan Ly, the intimate and award-winning Chef’s
Table at Kensington Riverside Inn, as well as the 200-
seat Olives Restaurant and most recently, Yellow Door Bistro. He has also overseen the creation
of a new banquet kitchen to support hosting on-site events for up to 700 attendees, as well as
off-site catering functions for up to 1,400 guests

Chef Ly has won numerous accolades during the course of his culinary career. He competed at
Gold Medal Plates: Canada's Culinary Championships, numerous regional competitions and was
part of Team Alberta in Luxembourg at the World Culinary Olympics. Chef represented
Calgary’s exciting dining scene at the Canadian Culinary Championships in February 2014 taking
home the silver medal after winning Gold Medal Plates in Calgary November 2013.

Pastry Chef, Hotel Arts Group,
Karine Moulin
Pastry Chef Karine Moulin re-joined
the Hotel Arts Group in 2012 and is
one of Western Canada's great
talents preparing exquisite desserts.
A graduate of SAIT's Culinary
Program, Karine has worked at
diverse restaurants and hotels
honing her craft. Over the years,
Karine has worked with St. Germain
Bistro, Hyatt Regency Calgary and
the ATCO Culinary Kitchen. She has
worked with the Hotel Arts Group
helping to launch an array of new
desserts for Raw Bar by Duncan Ly,
Yellow Door Bistro, the group's
growing banquet and catering
division as well as all those amazing
in-room welcome amenities for VIP
guests. Karine has been developing
an array of gluten free desserts for
our restaurants and our banquet
operations.
Karine was announced as one of
fourteen competitors on Top Chef
Canada season four set to air March
10 of 2014.
