Staying in for Sleep Easy… Well done, you! Last year a young person was made homeless every hour in England and hundreds of young people spent at least one night on the streets. Yet for every person who sleeps rough in Exeter there are at least another five people sleeping on their friend’s sofa, in a car or on the move night after night to find somewhere to shelter. They are known as the ‘hidden homeless’. Tonight, Saturday 10th March, there are about 100 people who are sleeping outside with the YMCA to raise awareness about rough sleeping, but by 'Staying in for Sleep Easy' you too are raising awareness about the ‘hidden homeless’ and doing your part in giving them a brighter future. Y YMCA? Every year YMCA Exeter provides homes and support for young people who have been homeless. Some of the young people who live at YMCA don’t have a family, some of them did not get the opportunity to finish school and some of them struggle with things like numeracy and literacy, making it hard for them to find jobs. When a young person comes to live at YMCA Exeter they are given a home and the chance to start again. They are looked after by a YMCA Support Worker and they get to make many new friends who encourage and care for them. YMCA Exeter needs to raise lots of money though to continue supporting young homeless people in Exeter and by taking part in ‘Stay In for Sleep Easy’ you have helped YMCA to care for more young people in 2018. Activity 1 What do I need, what do I want? You will need: • Paper • Pen or pencil • Worksheet 1 • Scissors Imagine you have to move home tonight with just one bag. Cut out the items on Worksheet 1. On a piece of paper draw a line down the middle. On one side write ‘Need’ and on the other side write ‘Want’ With each item, decide if it is essential or would it be just nice to have. If it is not essential, can you find a way around it? Eg washing machine/laundrette Now, If you could keep only five things from your bedroom, what would they be? Why do you think they are essential? 4
Activity 2 Design a Living Space You will need: • A cardboard shoe box • Plain paper • Magazines • A pair of scissors • Smaller boxes and pieces of cardboard and paper • Glue/sellotape • Coloured felt-tips or crayons Imagine someone has to move into a single room. They are going to have everything in that one room. When they move in it is like your empty shoe box, with nothing in it. What will they need? Perhaps go back to Activity 1 to decide what is essential, what would be a bonus and what is a luxury. You could: • Draw your ideas on a plan. • Cut out photos from magazines and make a picture of your room • Make a model of the room with simple furniture. What will be inside your room? How would you decorate it? What simple luxuries could you add to make it more comfortable? 6
Leek and potato soup Ingredients Serves: 4 • 1 knob of butter • 2 large leeks, chopped • 4 medium potatoes, peeled and diced • 900ml (1 1/2 pints) stock, either chicken or vegetable • single cream, if desired Method Prep:5 min › Cook:25 min › Ready in:30 min 1. Heat butter slowly in pan till melted. Add chopped leeks and cover, cooking slowly for about 5 minutes. 2. Add potatoes and cover, cooking slowly for another 5 to 10 minutes till soft. 3. Pour in stock and bring to the boil. Simmer for 10 to 15 minutes. 4. Mash with potato masher for a chunky soup. 5. If a creamed soup is preferred simply blend the soup with a hand blender and bring back to piping hot. Add a spoon of single cream to each bowl as served and stir thoroughly. Tip You can add an onion and a chopped clove of garlic at the same time as the leek. Sprinkle with chopped parsley and a swirl of cream for a big finish! 7
Cheese Scones Ingredients Serves: 6 • 225g self-raising flour • 1 pinch salt • 55g butter • 25g mature Cheddar cheese, grated • 150ml milk Method Prep:10 min › Cook:15 min › Ready in:25 min 1. Preheat the oven to 220 C / Gas 7. Lightly grease a baking sheet. 2. Mix together the flour and salt and rub in the butter. 3. Stir in the cheese and then the milk to get a soft dough. 4. Turn onto a floured work surface and knead very lightly. Pat out to an oval 2cm thick. Cut into 6 - 8 pieces depending on how large you like your scones and place on the baking sheet. If you prefer you can also use a cutter to stamp out rounds. 5. Brush the tops of the scones with a little milk. 6. Bake until well risen and golden, 12 to 15 minutes. Cool on a wire rack. Tip If you don't have any self-raising flour, use the same amount of plain flour, add 1/2 teaspoon of baking powder and add 1/4 teaspoon of salt. Let the scones cool for 10 minutes before gently prising open and smothering in butter. Delicious! 8
Mini chocolate cakes Ingredients Makes: 24 • For the mini cakes • 60g good quality (70%) cocoa powder • 4 or 5 tablespoons boiling hot water • 175g unsalted butter, softened • 175g caster sugar • 120g self-raising flour • 1 level teaspoon baking powder • 3 eggs • For the buttercream icing • 100g dark chocolate, melted • 60g butter, softened • 250g icing sugar • Chocolate sprinkles, for decorating Method Prep:20 min › Cook:10 min › Ready in:30 min 1. Preheat the oven to 200 degrees C / Gas mark 6. Line 2 - 12 hole bun trays with colourful paper cases. 2. Sift the cocoa into a large bowl; add 4 tablespoons of boiling water and mix into a thick chocolate syrup, adding more water if you needed. Add the softened butter, sugar, self-raising flour, baking powder and eggs. Mix with electric beaters until smooth and evenly mixed. 3. Spoon teaspoons of the mixture into the paper cases, filling them 3/4 full. Bake for 10 minutes, or until the sponge mixture has risen and the cupcakes spring back when you touch them. Remove from the oven; cool on a wire rack. 4. To make the chocolate icing: Mix the melted chocolate and softened butter in a large bowl; sift in the icing sugar, beating with a spoon or an electric beater until smooth. Spoon into a piping bag with a number 5 star nozzle. Pipe buttercream icing evenly on top of each cupcake. Decorate with chocolate sprinkles or however you like. Tip Use whatever type of chocolate you prefer for the chocolate buttercream icing: dark, milk, or even flavoured chocolate such as mint or orange work well. 9
Warm spiced apple juice Ingredients • 1 litre apple juice • 1 cinnamon stick or 2 teaspoons of powdered cinnamon • sugar or honey, to taste Method 1. Simmer the apple juice with the cinnamon for about 5-10 mins until the flavours have infused. Sweeten to taste. Tip. You can add cloves and a little nutmeg for a more spicy drink or ginger for a warming punch. Adding strips or orange or lemon peel make it more fruity. 10
