The 2021 harvest looks promising as the estates have successfully
dealt with this challenging year. In addition to producing
wines with a lower alcohol content and a refined framework,
the vintage is unique in that phenolic ripeness coincided with
aromatic ripeness in many places, a phenomenon that has
become quite rare with sunny vintages that are most often
characterised by richness and opulence. As a result, the 2021
aromatic profiles showcase an enfolding and refined expression.

Revival of an estate
OLIVIER LEFLAIVE VALENTIN LEFLAIVE
Valentin Leflaive is a young Champagne brand, but it is affiliated in two ways with the famous Burgundy institution, Olivier Leflaive. First, it bears the name of Olivier
Leflaive’s son and, second, it is an extension of Burgundian craftsmanship applied to champagne production. The shift towards the north to work in another fine Chardonnay
terroir, the Côte des Blancs, marks a subtle evolution in how champagne is understood and produced. Unlike Burgundy, where terroir is the major determining factor in
a wine’s reputation, Champagne is a region that emphasises brand identity. Thus, the Valentin Leflaive champagne house is daringly applying the plot-driven approach
that predominates in Burgundy to the fine terroirs of the champagne region in order to capture their quintessence in champagnes from named plots. This new endeavour
under the Leflaive name, is like a breath of fresh air for Champagne. The Valentin Leflaivre brand is one to watch and serves as a prism through which one can rediscover
the legendary region.

Pio Cesare, the iconic estate in Italy’s Piedmont region, suffered an abrupt shift in management in April
2021 due to the tragic and unexpected passing of its owner, Pio Boffa, from Covid-19. At the tender age of
23, his daughter Federica Boffa was thrust into the leadership role at the estate, which was celebrating
its 140th anniversary that same year.
With support from her cousin Cesare Benvenuto Pio, who had been Pio Cesare's right-hand man since
2000, Federica Boffa took on the responsibility of preserving the identity of the family estate while
carrying it into the future. Her objective was clear: continue to honour the singularities of each terroir and
each plot while intensifying the sustainable management programme already begun at the vineyard
by Pio Boffa.
Beginning this year, the Barolo and Barbaresco blends will be sold as Barolo Pio and Barbaresco Pio,
which is what wine lovers have been calling these wines since the 1960s. It is an homage to the high
quality and distinctive styles of these cuvées with branded identities.

INGREDIENTS FOR 16 ROLLS
For the spring rolls
16 sheets rice paper, 200 grams rice vermicelli, 16 cooked prawns, 2 carrots, 50 grams soybean sprouts
10 small lettuce leaves or hearts, 30 young mint leaves
For the sauce
2 cloves garlic, 1 tbsp soy sauce, 1 tbsp rice vinegar, 1/2 tbsp granulated sugar, 4 tbsp water, 2 tbsp minced coriander
METHOD
