A Flashback to Smoky Hill Country Club History Offered by Wilmer Kellogg, January 2021 I was civilian manager of the Officers Club at Schilling Air Force Base for 11 ½ years before accepting the manager’s position at the Smoky Hill Country Club. We were judged best club in the Air Force. I met with Dr. Watts who was president of Smoky Hill at that time. We met at the Elks Club for dinner. He explained the shape that the Club was in at the time. I met with the Board of Directors next evening. Evidently, they held a meeting before. They explained that they had five managers that had hidden all the bills instead of paying them. They owed most of the businesses in Hays. The kitchen was closed but the bar was open. The Board of Directors offered me the bar and dining room as my business, and I could have all the profit. They told me that the dues would run the golf course. They also told me that there were only about a hundred members at the time. I said that would not work as I had an employee who took the same set up at Junction City Country Club and he made so much money they let him go and tried to run it themselves. Needless to say, they tried to run that club themselves and it went under again. They tried to hire him back, but he had taken another position. I told the directors that I knew all the food and beverage people in Salina and could charge under my name. It would be a challenge to see if I could make a little country club successful and see it stay in business after running a club that had eighty-five employees working under me. I said I would give it a try. They could pay me later. I took the back seat out of my big Buick and filled it and the trunk, which I had to tie down, and I made a lot of trips to Salina to stock the kitchen storeroom and walk-in cooler. I already knew Gene Baird as he was a liquor wholesaler from Hays. Gene was the one that talked me into meeting with the SHCC directors after the Air Force base closing. First thing, we did not have enough members to be successful. We lowered the dues to $19.80 a month and did not require any stock purchase. Our members were mostly businesspeople from Hays. The Fort Hays municipal course (the “South Golf Course”) was only a nine-hole course at that time and SHCC with its clubhouse made our course pretty attractive to them. After that, we purchased the south nine holes and started to develop it. The next thing I did was to start an Entertainment Committee with four couples from our club and four new couples. We planned a theme party for every month or so like a Western, Hawaiian, Valentine’s or a pool party. Then we would get many of their friends’ names to call for reservations party reservations. We would pack the place! Then I came up with the idea of taking a bus trip to see KU or K-State play a game, then onto see a Kansas City Chiefs game. It would all be in the same package. We started out with one bus and it did not take long before we needed to book two buses. They always filled and we had a waiting list. These two activities accomplished what I had in mind, mixing up the membership and making a lot of new friends that would use the Club more -- and did they ever! People really did drink back then and I would send the bartender home around 10 o’clock if we had four or five couples who wanted to stay and drink. After working nine and a half years, I turned in my resignation to the directors and told them I was starting a restaurant. They told me to go ahead and start it and keep my job at the club. I told them that I would always have a manager that would run it. That business turned out to be the Taco Shop, which I had for 31 years. I went back to Smoky Hill Country Club five times and helped them find a new manager, working several months each time between managers. The last time I was interim prior to current Manager Weakland starting. I never charged the Club a dime. That was how much I loved the Club and its members, but for that last time as the interim manager the Club gave Lorena and me a week’s trip to the Caribbean!
