COMMUNITY NEEDS DAY Cumberland County will have a Community Needs day for families in August. PROJECT GRADUATION SNACKS Project Graduation would like to ask Cumberland County Homemakers for individually wrapped snack items - such as cookies, brownies, etc. Snack items will be used for the seniors throughout the night of project graduation. 20-40-60 Mile Challenge Get healthy with us! Prizes: The Cumberland County Health Coalition 20 Mile invites you to participate in the 20-40-60 Fishing Pole and Tackle Box Mile Challenge. Use the 20-40-60 Mile Challenge form to track your miles walked 40 Mile during the month of May 2021. 4-Person Tent Prize Giveaway Participants who walk 20 miles will be entered 60 Mile to win a fishing pole and tackle box. Participants who walk 40 miles will be entered 1-Night Stay at Dale to win a 4-person tent. Hollow State Park Participants who walk 60 miles will be entered to win a 1-night stay at Dale Hollow State Park. THE BURGER BOWL Dressing 1. Chop romaine lettuce and set aside. 1/3 cup low-fat mayonnaise 2. Place ground beef and seasoning salt in medium 1/4 cup ketchup bowl. Mix and divide the ground beef into 15 1 tablespoon olive oil mini burger patties. 1/2 tablespoon apple cider vinegar 3. Heat a medium-sized skillet over medium high 1/4 teaspoon sugar heat. Add the burgers (cooking them in batches 1/4 teaspoon salt if needed), and cook about 4 minutes on each side, or until well browned. 1. In small bowl, stir together all ingredients. 4. To make the salad, place lettuce in 5 salad Set aside. bowls and top with 3 mini burgers, red onion slices, cheese, and tomato slices. Place salmon in a medium mixing bowl. Use a 1 cup crushed whole-grain cereal fork or clean fingers to flake salmon until very or crackers fine. Remove skin and large bones. 2 lightly beaten eggs 2. Add cereal or cracker crumbs, eggs, milk, and 1/2 cup skim milk pepper to salmon. Mix thoroughly. 1/8 teaspoon black pepper 3. Shape into 8 patties. 1 tablespoon vegetable oil 4. Heat oil in a skillet on medium. Carefully brown both sides until patty is thoroughly cooked. Cooking tips: Replace the salmon with canned tuna fish. Or, combine the salmon and tuna. Other optional additions to patties: ½ teaspoon lemon pepper, ½ cup finely minced celery, 1 tablespoon finely minced bell pepper, ½ cup chopped onion, or 4 finely chopped green onions. KEHA STATE MEETING Dates: June 22-23, 2021 Location: Sloan Convention Center and Holiday Inn University Plaza, Bowling Green Registration: Priority registration through May 10th: Only registration for current State Board members, candidates for state officer and chair positions, and two voting delegates per county will be processed through May 10th. Open registration beginning May 11th: Beginning May 11th, registration for additional members and Extension agents will be processed as space allows. COVID 19 guidelines will necessitate limits on the number of attendees. Key points: Voting delegates, current KEHA Board members, and candidates for state officer and chair positions are encouraged to mail registration before May 10th. Additional registrations may be submitted within the general deadlines and will be processed in the order received beginning May 11th. KEHA is staying current on Kentucky guidelines for convention centers and event venues. Those guidelines will dictate the maximum attendance and are subject to change as the meeting approaches. Please be patient and understand that ensuring we can safely conduct the needed business of the organization in an enjoyable manner is our priority.
