CORONADO CAYS YACHT CLUB www.ccyc.org ISSUE 1 Januar y NAVIGATOR MAGAZINE 2021 From the Pilothouse Commodore Dave Murree T he new year is upon us. Every year is unique and brings with it new challenges and new opportunities. As a yacht club we will face each challenge head on for the good of our club and our members. You have elected a good Board of Directors and can be confident that we will navigate the club safely through each challenge. Opportunities, however, don't often present themselves like challenges, but rather are made. This month I would like to discuss some of the opportunities our club is taking advantage of. First, we have re-discovered our patio and open air spaces. We adapted quickly when the state shut down indoor dining and we moved outside. We borrowed propane heaters from our members to make it toasty warm for the Commodore's Ball and C-Gull's Holiday party. We created an outdoor bar area to enjoy Sunday football games and were able to safely re-open outdoor trivia and bingo. Vice Commodore Jerry Rosenbusch and Port Captain Van Peterson came together to propose installing permanent overhead heaters and a temporary wind wall for our entire patio area to ensure we can continue to enjoy our outdoor spaces until the weather gets warmer. We'll keep you posted as orders get placed and the materials are installed. General Manager Dan Parker contracted to have the pool resurfaced and it is now heated and open for your enjoyment. Rear Commodore Sue Steven started a weekly zoom virtual get together to engage and inform our members on varying topics. Other Board members have moved their committee meetings online. Our Regalia team continues to find ways to make merchandise available to our members, even during the stay at home orders. Long time member, Bob Littleton, has repaired our radio controlled sail boats so we can safely start spring RC races in our basin. Our Sail Captain and Staff Commodore RG Head has kept the sail fleet racing. Our Fleet Captain Lance Rodgers worked with another long time member, Kathy Schreiber, to get boats out for the Cays Holiday Boat parade. The list goes on and on and I apologize for those I was not able to mention in this short article. In the face of adversity, we all continue to come together as a community during this pandemic. In that same spirit, I will be hosting Friday night tastings with the Commodore. Starting this month, when the club is open for either take-out or in person dining, I will be offering a wine tasting for anyone that orders food from the club. Our Bar Manager and Chef have paired food specials with different wines so watch the menu flyers. We will take all appropriate precautions and ensure everyone is MORE THAN 6 feet apart. Or if you prefer, you can take your wine tasting with you and enjoy at home. We will also offer beer and wine to go, similar to the way we did during our last take-out service last summer. So come safely enjoy a tasting and chat with the Commodore as you wait for your dinner.

THE NAVIGATOR 5 H ere we go again…. When I wrote my December article for the Navigator I had much higher hopes for a better outcome than for our club to be shut down for outdoor dining beginning last month, and after having a member of our kitchen staff test positive, we weren’t able to serve our members again until late December. I hope you were able to re-engage in some of the routines you created back this past spring/summer that kept you busy and entertained. We are watching and waiting to see when we can safely re-open the club for in-person dining. I hope you were able to enjoy the holidays with your families and rang in the New Year in a different way. We missed having our usual club celebration and look forward to being able to start those again as soon as the health orders are lifted. Watch your email for announcements and updates. I want to thank all the members who have ordered take-out and kept our staff busy working. The food has never been better and Chef Lily will continue to provide updates on her specials each week. By now you have already received emails from Courtney (our new club coordinator). She is doing a great job learning about our club and our members. In a normal year I would ask you to stop by and say hello, but this year…. Finally, Pedro and the maintenance staff are hard at work during our shutdown. Maintenance projects are continuing: carpet cleaning, patio power washing, completion of the storage shed and movement of all items to be stored, and more. Thank you all for being the best part of our club. -Jerry From the Quarter Deck Vice Commodore Jerry Rosenbusch

12 THE NAVIGATOR Boat Appetit With Floating Chef Carole Jensen and special guest Tammi Murree T he inspiration for this month’s recipe comes from the galley of our commodores: Lady Tammi Murree. Although we have included both the recipe and cooking videos to h elp you prepare this delicious, authentic Italian dish, truly the secret ingredient is Tammi. She demonstrates ‘un servizio di qualità e un savoir faire vincente’ or, what I would call, that ‘je ne sais quoi’ that without, the recipe would not be quite the same. So, I am including a ‘little bit of Tammi” in the recipe, because her laughter, joy and finesse in the kitchen filled her boat and spilled into my heart! While stationed in Naples in 2004, Dave, Tammi, Sarah, Cameron and Tye dove into Italian culture and attended a cooking school. The mother and daughter chefs Christina and Sylvia wanted to share their love for Italian cooking with other Americans stationed at the base. I loved hearing Tammi’s recollection of strolling to the market daily, the sounds of church bells and her appreciation of Italian food, which certainly brought to life this recipe. Spaghetti, Aglio, Olio e Peperoncino ❖ 500 g spaghetti ❖ 1 scarce cup of extra virgin olive oil ❖ 5 sliced garlic cloves ❖ Salt for water ❖ 1 red hot pepper ❖ Freshly minced pepper Brown the garlic in a pan with oil, add the red pepper. Remove the pan from the stove. While the pasta cooks, add a ladle of pasta water to the pan. Drain the pasta and flavor with the sauce from the chicken recipe on the next page:
THE NAVIGATOR 13 Scaloppine di pollo con provola ❖ ½ kg of chicken breast (petti di pollo) in thin slices. (See Chef’s Note) ❖ 1lb thinly sliced Provolone cheese (1 sliced provola) ❖ 1 cup white wine ❖ 2 tbsp of EVOO ❖ 30 g of butter ❖ One vegetable bouillon cube ❖ A little flour ❖ A little bit of Tammi Dust the slices of chicken in the flour, put them in a pan with the melting oil and butter. Add the bouillon cube. Let flavor, and then add the white wine. When the liquid has evaporated, put a slice of ‘provola’ on each slice of chicken. Cover and leave it for some minutes on the stove. Chef ’s Note: You may need our Commodore Dave Murree to come by and scallop the chicken perfectly and of course, to bring some traditional Italian Limoncello for dessert. 18 THE NAVIGATOR Ahoy Bookworms! Join us every 3rd Sunday for our discussions on our nautical book. We are currently doing these on ZOOM and they are a lot of fun. So… mark your calendars and make the mimosas! All are welcome! DECEMBER SELECTION The Sea Around Us - by Rachel Carson Published in 1951, The Sea Around Us is one of the most remarkably successful books ever written about the natural world. Rachel Carson's rare ability to combine scientific insight with moving, poetic prose catapulted her book to first place on The New York Times best-seller list, where it ruled for thirty-one consecutive weeks. It remained on the list for more than a year and a half and ultimately sold well over a million copies, has been translated into 28 languages, inspired an Academy Award-winning documentary, and won both the 1952 National Book Award and the John Burroughs Medal. JANUARY SELECTION Ghost Ship - by Brian Hicks In Brian Hicks’ skilled hands, the story of the Mary Celeste, a 100-foot brigantine discovered drifting through the North Atlantic without a soul on board, becomes the quintessential tale of men lost at sea. Hicks vividly recreates the events leading up to the crew’s disappearance and then unfolds the complicated and bizarre aftermath. What happened on board the ghost ship Mary Celeste has baffled and tantalized the world for 130 years. FEBRUARY SELECTION Journey of a Hope Merchant - by Neal Petersen Neal Petersen was born physically disabled and impoverished in apartheid-era South Africa, but was introduced to healing and equality in the waters surrounding Cape Town. Journey of a Hope Merchant recounts the epic journey that took this misfit kid from a racially segregated, working class neighborhood to the prestigious world of solo yacht racing.
