Look forward to alpine delicacies, such as Kellermann's Alm Bazi, duck with dumplings,

                   Summer party                                                          Tegernsee char tartare
                         in the Dichterstub'n                                                      with canned apples and radish

                                                                                  Preserved apples and radishes
                                                                                  ½ green apple
                                                                                  8 radish
                                                                                  150 ml white wine
                                                                                  vinegar
                                                                                  sugar
                                                                                  salt
                                                                                  Cut the cored half apple and the radishes into approx. 3 mm thick slices.
                                                                                  Warm up the vinegar with sugar and salt, pour it over the cracks and leave
                                                                                  to stand for at least 30 minutes (better overnight). For the tartare,
                                                                                  cut half of the slices into cubes and use the other half as garnish.

                                                                                  250 g fresh char filet, finely diced
                                                                                  The diced, pickled apples and radishes
                                                                                  1 pickle, diced
                                                                                  5 tablespoons crème fraîche
                                                                                  salt
                                                                                  white ground pepper
                                                                                  white wine vinegar
                                                                                  1 tablespoon grape seed oil
                                                                                  Mix crème fraîche with salt, vinegar and oil. Season again.
                                                                                  Then fold in the diced ingredients.
