 with taking the class. At the end of the day our programs are about
 $7,000 for the two years and the one-year associate certificate is
 looking at about $4,000.”

   An important part of the program is their partnership with Sysco, this

 their practices.

  As I write this story, UTEP is preparing for their big match up against
their longtime rival, the NMSU Aggies, who are coming off last year’s 26-7
season (15-1 WAC Conference). Senior guard/forward Ariona Gil is mentally
and physically ready for the upcoming trip to Las Cruces, NM, to take on
the Aggies. Gil believes it’s a good match-up between two competitive
and athletic teams. “Wednesday is the test to see who we really are,” said
Gil. Gil has made quite an impact on the team over the years, and this

                       with Bourbon Pecan Glaze

 1. Preheat oven to 350 F. Grease a 3.5-quart capacity Bundt pan with cooking spray.

  2. In large bowl, whisk together flour, baking powder, baking soda, cinnamon, salt, nutmeg and allspice.
In the bowl of an electric mixer fitted with a paddle attachment, combine sugar and margarine. Beat on
medium speed for 3 to 5 minutes or until creamed and flu y. Add eggs one at a time, allowing each to
fully incorporate. Add vanilla and stir to combine. Slowly add dry ingredients and mix well to combine,
scraping down the sides of bowl. Add molasses and hot water and mix just until completely combined.

  3. Pour batter into prepared Bundt pan and bake 40 to 45 minutes or until a cake tester comes out
clean. Cool 10 minutes in the pan. Invert onto a wire rack and cool completely.

  4. In a small bowl, stir together sugar, bourbon and water until smooth. Pour over cake and let sit 10

 1 tablespoon vanilla extract
 1 cup unsulfured molasses
 1/2 cup Hot water
 1/2 cup confectioner’s sugar, si ed
 1 tablespoon bourbon
 1 Tablespoon water
 1/4 cup coarsely chopped pecans glaze hardens. Sprinkle with pecans and slice to serve.
