Hotel Honours T he Highway Hotel stole the spotlight at the 2012 AHA|SA Hotel Industry Awards of Excellence held on July 24 at the Adelaide Entertainment Centre. 13 It’s not an easy challenge to combine casual elegance and urban cool under the same roof but Martin Palmer has achieved just that with the new-look Warradale Hotel. T he Diagonal Road hotel, which dates back to 1963, merges stylish interiors with polished concrete to create a new vibe in hotel design. The Warradale has unveiled a variety of innovative goodies, including wine vats, a customised chocolate fountain and bunk rooms, but food is the hero. Palmer Hospitality Group Director Martin Palmer said while the cost of the project was significant, it was essential as it had been almost 20 years since the last renovation. “I think it’s appropriate to say that the cost was extensive because it is a part rebuild, part refurb. But having said that, it was in dire need of it.” The new building, designed by Mark Folland at Folland Panozzo Architects and built by Dave Georgio of ABH Contracting, has softened the edges of the once rough and ready hotel, with each room possessing its own quality charms. The structure is powered by the use of timber and concrete, giving a real rawness to the Warradale Hotel, almost taking you back to the days of the old western saloons contrasted with the stark modernism of the design. As you walk through the complex you quickly realise the magnitude of the hotel’s facelift, filled with innovative concepts. The old sign still sits above the bar, vaguely noticeable from the beer garden, which is referred to as the Garden Veranda Bar, as a reminder of what the hotel once was. 17 The hotel staff work hard to create the lively environment well-known of the funky hotel and truly believe in what the business has to offer. The all-embracing refurbishment of the Warradale Hotel includes the additional outdoor space, and restoration of the existing building with plans to also extend the hotel’s car park. “In the last five years we acquired the old site next door. “We are in the process of cleaning that and opening up the hotel, so the site is going to be pretty big and have very extensive car parking,” Martin said. Each of the 14 accommodation rooms also underwent a radical makeover, with the Warradale offering accommodation for groups. 18 Food is the hero The Warradale Hotel has so much on offer, but Martin said the main focus is food, offering three menus and a wide selection to suit everyone’s taste buds. “We’ve got the Bistro, then we’ve got what we call the Garden Veranda Bar and that’s got a fairly extensive menu but more informal dining, and we also have a strong offer in the Tavern Bar,” he said. “We have a strong emphasis on casual dining. The food is the hero. “The menu is traditional with our own flair added to it. But that’s probably just a small part of it. The offer is a bit more cosmopolitan.” The Bistro features a more advance selection of fine dining where you can choose from traditional pub meals to a wide selection of mains, pizzas and pastas, plus a fabulous dessert menu including a list of options from the abstract, specially designed chocolate fountain. 24 Reaching goals With a long history but an event brighter future, the Warradale Hotel is certainly hitting new heights with its new façade, and the people behind the scenes couldn’t be happier with what they have achieved. Martin said the venue speaks for itself. “I am a bit of a believer of letting the people that come here do the work for you,” he said. “I am not a big mass advertiser. The core of our marketing strategy is to have people actually come here and have a good experience that they go and tell other people. Social media is quite complementary to that. “Today, I think the offer itself is distinctive. Everything about it – the environment, the food and beverage, the venue itself is unique. All of it has an element of uniqueness about it. “The aim of the renovation and refurbishment was to broaden the appeal of the venue through the style, the food, the drink and the ambience and I think we’ve achieved that. 29 W hat started with an investment opportunity has become one of Adelaide’s finest hotel clusters. Sitting on one of the famous green upholstered booths in the Walkers Arms Hotel, surrounded by quirky interior settings exuding an environmentally friendly and technologically savvy atmosphere, company Director Tim Dean reminisced about the way he fell into an industry he is now so passionate about. With more than 15 years experience in the South Australian hotel industry, Tim started his career in large hotels and accommodation venues in Adelaide. A country boy, originally from the Riverland, his expertise was initially in computing and mathematics. After a stint working in Canberra, he moved back to his home Walkers Arms Hotel. town to work in the family jewellery business, where he stayed for 12 years. He began investing in motels, eventually moving on to buy hotels and now owns four of South Australia’s popular destinations. The family owned and operated group purchased the London Tavern in January 2001, the Walkers Arms Hotel in July 2002, the Largs Pier Hotel in November 2004 and Mac’s Hotel in May 2010. “It was a bit by accident really,” Tim said. “I was just an investor and we were involved in motels at the time. “I fell into it as an investment and seemed to have a good return on investment.
