Herbal Profile of the week: OREGANO Benefits of Oregano Oregano has anti oxidant properties. Oregano contains thymol and rosmarinic acid that work on the body to minimise the destructive effects of free radicals. There is a lot of current medical interest in the ability of antioxidants to help repair damage to the body on a cellular level and combat cancer, heart disease, high blood pressure, macular degeneration and help slow geriatric muscle deterioration. Anti-Fungal Properties of Oregano Historically used as a food preservative, oregano has some impressive credentials as an anti-fungal. Oregano has been used as both an internal and external preparation in treating fungal infections and has been tested successfully in inhibiting the growth of yeasts like Candida Albicans. Kitchen Rescue Remedies tips to fix a dish that is not right or ‘needs something’ Sympton Treatment Not particularly tasty.”Needs Something” If tasting a dish prompts you to say "it needs something", that something is usually salt. Seasoning – a term which, as Western chefs use it, means the addition of salt – is all-important, but perhaps because it's repeated over and over, the message sometimes falls on deaf ears. Most dishes that seem a little off can be fixed simply with a little more assertive seasoning. Symptom A watery dish can be one where the seasoning isn't quite right (as above) or it might just have too much liquid. Try removing solids and Watery or weak reducing down the liquid until it's rich and flavourful. If reduction alone isn't going to get you there, you might have to thicken your sauce so that it clings to the ingredients. The classic French finishing of beurre manié (kneaded butter) thickens and enriches anything from a coq au vin to a beef Bourguignon. Make it by mixing together equal volumes of plain flour and butter (for example, 1 tablespoon of flour and 20 grams of softened butter) and whisking it into your sauce or stew towards the end of cooking. Symptom: Adding richness to a dish usually means improving the mouthfeel. In Insipid, lacking richness French cooking this is often done by "mounting" a sauce or dish, by whisking cubes of cold butter into a hot liquid to emulsify it. For foods from the Indian subcontinent, one step that's often missed is tadka, or tempering. Spices are flashed in hot ghee or oil before they are added to a braised curry or stew. The addition of ghee and spices adds richness and layered flavour. In many dishes from Lebanon, Turkey or the Middle East the addition of nuts fried in butter or ghee has a similar effect. A dish described as "flat" can often mean that the cooking process has Symptom: driven off the volatile aromas and this can easily be fixed by the Flat, one-dimensional addition of acidity or a touch of bitterness. Our mouths work in strange ways. Our taste buds work relative to each other, so a bit of clever seasoning can fix a lot of problems. I remember as a child if we were eating fruits that were too sour, my grandmother would sprinkle them with salt. The result was magical. The initial taste was salty, but as it went away our tastes compensated and all of a sudden the sour fruit would taste sweet. Saltiness and sourness can counteract bitterness. Sourness and savouriness work in opposition to sweetness. Sweetness pulls in the opposite direction to sour. If your bolognese is suffering from some particularly sour passata, a spoon or two of sugar will pull it back into line. Symptom: Burned Throw it out and have sandwiches

Salmon and creamed spinach en croute New Zealand farmed salmon is among the best in the world. With creamy spinach and buttery pastry, this is a simple, celebratory fish dish that punches well above its weight. Ingredients 2 tbsp butter 1 brown onion, peeled and finely chopped 2 garlic cloves, finely chopped 75g cream cheese, cubed ½ cup milk ‘Pastrami’ salmon fillets with 280g baby spinach leaves horseradish mashed potatoes 4 x 180g salmon fillets, skinless and pin-boned (centre cut The time-honoured flavours of the Jewish deli have seen a preferred) renaissance, from smoked meats and crunchy pickles to 4 sheets frozen puff pastry, thawed pretzels and smoked salmon bagels. Place a salmon fillet on one side 2 tbsp horseradish cream of the pastry and top with a quarter of the spinach Pastrami spice rub mixture. Fold the ends of the pastry in and then fold the 1 tbsp coriander seeds side of the pastry over to create a pocket, trimming any 1 tbsp black peppercorns excess (use offcuts to decorate the top of the pastry if you 1 tbsp mustard seeds like). Crimp the edge with a fork to seal. Repeat with 1 tbsp brown sugar remaining fillets. Brush the pastries with beaten egg and 1 tbsp garlic powder bake for 20 minutes until golden brown. Serve with lemon 1 tsp sea salt wedges. 1 tsp smoked paprika Method 1. To make the pastrami spice mix, toast the coriander seeds, peppercorns and mustard seeds in a dry pan over medium heat for two minutes or until the mustard seeds start popping. Coarsely crush or grind, mix with the sugar, garlic powder, sea salt and paprika, and set aside. 2. Brush each fillet with a little olive oil and press firmly into the spice mix until coated on all sides. Refrigerate for one hour or overnight. 3. Cook the potatoes in simmering salted water until tender, drain well and mash with butter. Beat in the milk and horseradish cream and season well. 4. Heat the remaining oil in a heavy fry pan and cook the salmon for four minutes over medium heat until golden. Turn and cook the other side until gently pink in the centre, and serve with the mash and green beans. 8
