Recipes Diet Coke Chicken serves 4 Low calorie cooking spray 2 diced chicken breasts 1/2 tsp Chinese 5 spice Sea salt 1 red onion 1.5cm piece of root ginger, peeled and finely chopped 3 finely chopped cloves of garlic 6 mushrooms, quartered 1/2 deseeded red pepper—cut into strips 1/2 deseeded green pepper—cut into strips 1/2 deseeded yellow pepper –cut into strips 6 baby corns, halves lengthways 2 tbsp. tomato puree 2tbsp dark soy sauce 1tbsp Worcestershire sauce 1 tbsp. sherry or rice vinegar 1 x 330ml can diet cola 1/2 chicken stock cue 1 chicken stock pot 5 trimmed and roughly chopped spring onions Over a low heat, spray a frying pan with cooking spray and then add the chicken, sprinkle over the Chinese 5 spice and season with salt. Stir and cook for a few minutes until the chicken has started to brown. Remove the chicken from pan and set aside on a plate , spray pan again with cooking spray and add the onion, ginger, garlic and mushroom s and fry over a medium heat for 3-4 minutes until they start to soften, then add the peppers, baby corn, tomato puree , soy sauce, Worcestershire sauce and vinegar. Stir, then add the cola and bring to the boil. Crumble in stock cube and stock pot and simmer uncovered for 10 minutes. When the sauce has started to thicken and go syrupy, return chicken to the pan and stir in the spring onions. Simmer for another 10 minutes., for a thicker consistency simmer for a bit longer until the required consistency is reached, ensuring the chicken is cooked through.
Living with lockdown Poetry and Dementia corner A poem by Harry Pleavin Living with Lock Down and Dementia, is an experience so strange, With all life’s crazy normalities and pastimes rearranged. Being within two metres of where people gather, is strictly forbidden, Worries, the missing of family, dark thoughts come, albeit unbidden. The television churns out repeat after repeat, Plans for the future must take a back seat. First weeks and now months of conversation lacking, No stimulation, social discourse nor social interacting. Humdrum and boring most of the time, Joking or cheerfulness seen as a crime. May be met with a snarl and eyes that glinting anger, Or by fear and confusion when I am seen as a stranger. Loneliness abounds though I’m not living on my own, Happier with my walks, my books; and maybe living alone. Rather than this serfdom that binds me to dementias needs, As on the brain of my life partner Alzheimer’s feeds. Hang on, think on, what now has changed, How has Covid 19 our lives so rearranged? The answer is little, other than the occasional shopping, Dementia diagnosis, the cause of a normal life stopping.

All your own work I've been spending time making cheesecakes and cookies for family, friends and neighbours during this lockdown with my daughter Lauren who is isolating because of ongoing medical problems.
WIRED Young Carers during lockdown Our Young Carers in Warrington have been extremely creative during lockdown. Some of the activities that they have engaged in include on–line Art Classes, Poetry, Baking, Craft Sessions and Exercise. We have some very talented Young Carers in Warrington. Coronavirus Poem by Jess Corona virus has come It's made everybody scared People are getting sick But our whole country cares We stand on our doorsteps Every Thursday night We clap and we cheer Thank You NHS Rainbow By Jess For the NHS fight My mummy could get sick So I can't see my dad It's things like this That really make me sad I know it's because they love me And are trying to keep me safe But Being inside all day Makes me want to escape Alice and Abi engaged in a rainforest research While we can't go out project for school and made a jungle scene out We'll make memories at home of paper and card. And talk to our family And friends on the phone One day this will be over And we'll be happy once more But until that day We'll stay behind the door Well done to our Young Carers in Warrington By Katie
