As a newcomer to the fish and chip industry, Rob viewed attending the NFFF Three-Day Training Course as the first logical step in setting up his shop. Rob said “I took over a shop which had a terrible reputation and had been closed for six months. I could see the potential and the footfall on the parade. I have followed the procedures I was given when on the course and the results speak for themselves. Now after reopening for seven months the turnover has increased five times from the previous owners, regular I would highly recommend attending this course before customers now returning and we have new customers you make an offer on a fish and chip business and every day. especially if you are new to the industry.” WIN AN NFFF IN SHOP TRAINING! More Fish & Chip shops Are Turning to Vito For Their Oil Management The VITO oil filtration system works by maintaining & prolonging the life of your oil to the highest standard by filtering the oil at cooking temperature when the oil is at its thinnest. This enables the Vito to remove the carbon that you cannot physically remove. The process takes 5 mins and cuts down on valuable time draining and wiping out your pans every day. Using VITO twice a day every day will ensure you fry in the best possible quality oil for a fresher, crisper and better looking product as well as cutting down on your oil costs. The VITO is used fully automatically with no supervision, you simply lift the VITO in to your pans after each service and press the button, the vortex operation and 5 micron, multi-use filter paper will do the rest and remove all that nasty carbon from the oil, fully automatically in under 5 minutes per pan. With VITO you simply filter multiple times each day and top up with fresh oil. You will still need to empty and change your oil occasionally but this labour time will be cut down dramatically. We work closely with the NFFF as Associate Members and attend their Training Academy courses demonstrating our system. Operational videos are on our website and we are here to answer any questions. Still need further convincing, speak to our many happy clients successfully using the VITO every day who are more than happy to share their experience with you. DAY IN THE LIFE... Andrew Crook, NFFF work with many other different organisations and as we get more effective at what we do, President and owner of the workload seems to increase. We are Skippers Fish Bar, Euxton getting increasingly involved with government departments to help keep legislation sensible. In the early part of the week we often conduct Skype meetings at 9am for the subcommittees we now have to help run the NFFF. These meetings are usually monthly and are kept quite short to keep them productive. By using technology it not only reduces the cost for holding meetings but also lessens the impact it has on the attendees own businesses. 10.30 – 13.30 I then go to my day job, the majority of the board have their own fish and chip shops to run, it helps ensure we are current and that we understand pressure the industry faces as we face them ourselves. Between 14.00 and 15.30 I usually spend time catching up on office work for both the NFFF and my own shop. There is always something to do when you run a business as you know! There were lots of intermittent quality problems manifesting in the oils breaking down too soon, going dark and foaming after little use, not to mention the exorbitant cost of groundnut oil. A number of different specifications and permutations were tried over time eventually leading to the TQ Omega Plus frying oil that is used today. An oil with all the good qualities magnified – a highly stable, good quality frying medium with no odour and none of the breaking down or going dark issues with little use. For further details take a look at our dedicated comparison page: omegafryingoil.co.uk As well as being a superior product to other liquid oils its long life means that it also costs less over all whilst also producing a superior end product for the fish and chip shop. In addition, users of solid oils have seen advantages to switching over even going as far as commenting on how much less clogged ducting and filters are after using TQ Omega Plus frying oil for a period. 28

Top Tips from the Fryers Fresh Crisp Days of Spring As the fresh shoots of spring emerge, and our customers brave the evening air to come and buy their favourite take away, it’s a good time to think of ways you can help your food quality and your pocket. At Frymax, we want to help wherever we can, so why not check through this list of tips from the Frymax fryers and see how you can make the most of your oil, and also help you save costs. Keeping it fresh… If Spring makes you think of spring cleaning, that’s also something you can do to help your oil last longer. No customer likes to see specs of dark or blackened crumbs coating their food. But it doesn’t have to get to that stage before particles of older food can start having a negative effect on your oil and your fried food flavour and quality. If you have an inbuilt filter system on your fryers, make sure it is used frequently - and always, but safely, filter your oil when shutting down. Every time you fry a batch of food, especially anything sweet or salty like onion rings or battered items, be very careful to remove all possible crumbs, as these rapidly increase the rate your oil goes off. A good skimming tool and instructions to all your staff to use it often can really help extend the life and quality of your oil. Keeping it clean... But also be wary when you are doing a full clean down. After cleaning fryers with detergent or degreasing agents and even when wiping down surfaces, make absolutely sure none of the detergent gets into your oil or is left in the system. Rinsing and drying are critical to removing the detergent which is another enemy to your oil’s life, and can cause safety issues when it promotes foaming. If you have any questions or want to add any of your own top tips, please contact us via the details below. “The Fryers’ Favourite For Over 60 Years.” For information, advice, or customer support material please contact ADM Trading (UK) Limited.
