LAS Good Food Just as with many other occasions throughout the year, food plays a big part in Easter celebrations, even more so as Easter Sunday marks the end of Lent, a period traditionally of 40 days of fasting, although today it is more common to give up a particular favourite food such as chocolate, confectionary or cakes. There is no reason why you can't enjoy some treats over Easter, but it can be easy to overdo it with all the chocolate on offer. Here are some helpful tips on how to enjoy the Easter break without overindulging. Opt for mini sized Easter eggs, or share a larger one with friends and family. If you’re a fan of Hot Cross Buns at Easter opt for wholemeal versions to boost your fiber intake. When enjoying your Easter Roast fill your plate with colorful vegetables, and choose lean meats like chicken, white fish or Vegetarian Quorn. Make your recipes healthier by using reduced fat, lower calorie options. Remember it can take 20 minutes for you to register that you feel full. Eat mindfully – savor each bite, focus on the flour and enjoy what you are eating. Keep reading for healthy recipes to try over the Easter period. 3
Easter Breakfast Baskets These Easter Breakfast Baskets are not only cheap and healthy, but they are gluten free and suitable for vegetarians. Healthy Food Guide Method Ingredients Preheat oven to 160°C. Grease a large 6- Oil Spray hole muffin tin with oil. Line the base of 2 Small Grated Courgettes each hole with a small circle of baking paper. 2 Small Grated Carrots Squeeze grated carrot and courgette of 30g Grated Cheese excess moisture and place together in a 1tbs Rice Flour large bowl. Add cheese, rice flour and 1 1 Egg, beaten beaten egg. Mix well. 9 Eggs, hardboiled Press mixture firmly into the base and up the sides of each hole of the baking tray to Basil leaves make baskets. Bake for 30mins. Reduce heat to 150°C for another 20 minutes, or until lightly golden and crisp. Leave in baskets for 10mins before removing. Serves: 6 Place baskets on baking tray lined with Prep Time: 30mins baking paper and return to oven for a Total Time: 1hr 25min further 10 minutes to crisp bases. Remove and set aside to cool. Calories: 166cal Fill each basket with 1 ½ boiled eggs, Protein: 14g garnish with basil leaves. Carbs: 10g Enjoy! Fibre: 2g 4
Easter Nest Cookies These healthy no-bake chocolate peanut butter cookies are quick and easy to make and will quickly become an Easter favourite in your household! They are Gluten-Free, Dairy-Free, Vegan Friendly, and can be made refined sugar free too. JoyFoodSunshine.com Ingredients Method ½ cup Natural Peanut Line a baking sheet with wax paper. Set Butter aside. ¼ cup Honey or Maple Combine peanut butter, honey/syrup, salt Syrup (vg) and coconut oil in a saucepan and heat until combined. 1/2tsp Sea Salt Add vanilla and cocoa powder. Stir until well ¼ cup Coconut Oil combined. Add quick-cooking oats and mix well. 1 tsp Vanilla Add coconut and stir until completely 2 tbsp Cocoa Powder combined. 1 cup Oats Drop 1 tbs portions of mixture onto your prepared baking sheet. Press into the shape ¼ cup shredded of nests. Continue until you’ve used all your Coconut or just cookie mixture. increase Oats by ¼ cup Let cool in the refrigerator or freezer until hardened. Serves: 14 cookies Top with your favorite candy eggs (optional) Prep Time: 5 mins Serve cool or at room temperature. Total Time: 15 min Store in an airtight container in the fridge. Honey-Mustard Steamed Green Medley This vibrant all in one side dish of vegetables will tickle your taste buds and can be prepared in under 10 minutes! BBCGoodFood.com Ingredients Method 4 tbsp Extra-Virgin Olive Oil Bring a large pan of water to the boil. 1 tsp Wholegrain Mustard Whisk the oil with the mustard, 1/2tsp Honey honey and vinegar in a large bowl 1 tbsp Cider Vinegar and season. Put the leeks in the water, bring Salt & Pepper back to the boil, then simmer gently 2 Leeks, trimmed & sliced for 1 min. into chunky rings Add the beans and cook for 2 mins, 400g Green Beans then add the broccoli and simmer everything for 4 mins. 140g Tender Stemmed Broccoli Finally, add the peas, bring back to the boil and simmer for 1 min more. 200g Peas Drain really well, then tip into the large bowl and toss through the dressing. Serves: 8 Prep Time: 10 mins Serve straight away. Total Time: 20 min Enjoy! Calories: 92 cal (per serving) 6
Chocolate Fun Facts! 1. Chocolate comes from a tree; it’s made from a seed. Each cacao tree produces approximately 2,500 beans. 2. It takes 400 cocoa beans to make one pound of chocolate. 3. A farmer must wait four to five years for a cacao tree to produce its first beans. 4. Spanish royalty gave cakes of cacao in their dowries. 5. Chocolate has over 600 flavour compounds while red wine has just 200. 6. Chocolate milk is an effective post work-out recovery drink. 7.
