The main, place Rossetti, is home to two places of pilgrimage: the Cathedral de Ste-Réparate, Nice’s patron saint, and the Fennicchio ice-cream palour. The heart of the old city lies to the south, along Cours Saleya, where cut flowers perfume the air and the stalls piled high with lush fruit and vegetables, olives and candied fruit operate from dawn to lunch, Tuesday to Sunday; Niçois institution Chez Thérèse cheerfully touts her chickpea socca – the cheap but fulfilling snack that is to Nice what the hotdog is to New York – from a stand every morning. Option: Rising up the eastern side of Vieux Nice is the Château Mountain (60 minutes) A grassy park with an impressive waterfall but no château: this was destroyed in the 18th century. It is all about visual and sensory appreciation of different wines and wine tasting techniques. A Nice institution, this place has been regaling its clientele since the 1970s with great local cuisine that includes Pan-Bagnat (a kind of sandwich), stuffed sardines, courgette and aubergine fritters, small fried fish, Swiss chard pie and Socca (a kind of soft pancake made from chickpea flour). The restaurant is self-service: diners order and help themselves at the bar, then sit down to eat at one of the large wooden tables outside. Tapas lunch with Nicoise specialities : Pissaladiere (oignon pizza), pizza, stuffed vegetable, pain bagnat ('salad nicoise' in a roll), socca (chickpea pancake), friture (small fried fishes), tarte aux blettes et pignons (kind of spinach tart with pine tree seeds). You will be enchanted by this privileged site, with its contrasting colors and landscapes, which will become the scene of unforgettable receptions. Evening Scenario: You are welcomed by the winemaker. With your guide, you will visit the ancestral cellar then the production area. The reception is organized outside on the terrace overlooking the bay of Nice, and in case of wind or bad weather, the Coco Chanel room is available. Some artists play music, others prepare bouquets of flamboyant flowers of roses, sunflowers, and lavenders. There will also be artists making bags of fresh lavender that are offered to wives. The sunset over the hills and vineyards gives the signal to close the cocktail party and sit down to eat. It is at this moment that the garlands of lights illuminate the tables. The butlers arrive in brigades and serve each table simultaneously. The drinks buffet is organized around a huge barrel, each dish is served with a different wine.
