FE ATURE o m e c o m i n g f o r S C C H u l A s k e w ! Ch ef Pa Chef Askew with his son Harry. With over three decades of experience working in the restaurant industry, Chef Paul Askew has a firm reputation as a pioneer of excellent modern British cuisine, and he has become a stalwart of Liverpool’s burgeoning culinary scene, helping the city to grow to become the gastronomic hub that it is now, and cementing him as one of the country’s most popular chefs. However, Chef Askew’s roots started in the Middle East and Asia – he moved to Dubai at 11, followed by Singapore, with his family. And it was here that his fascination with good quality food and ingredients began after being exposed to different cultures and foods – finding both cities centres of culinary excellence and diversity. This October, the SCC welcomes Chef Askew home as he joins us in commemorating Singapore’s Bicentennial! Chef Askew will be conducting a cooking demonstration during the Ladies’ Luncheon on 22 October and serving a luxurious dining experience at the SCC Heritage Charity Ball on 25 October. You spent some of your childhood years growing up in Singapore and your parents were members of the Singapore Cricket Club. What are some of your fondest memories of your time in Singapore? Arriving in Singapore was a fantastic experience – the culture, the hustle & bustle, the warmth of the welcome from so many friendly people instantly made me feel at home. We lived in Kheam Hock Road, off Bukit Timah and Dunearn Road. I loved shopping in Holland Village and Orchard Road, the trips to Malaysia and Sentosa Island and, of course, there was no Marina Bay Sands then. Some of my favourite memories are visiting the Singapore Cricket Club for dinner with my mother and father, who would often entertain guests there, and mixing with its diverse community of members. In my younger days I also enjoyed going in for a game of squash or, more latterly, lawn bowls. I very much enjoyed visits with my Dad to Newton Circus to eat chilli crab and satay and drinking Anchor or Tiger Beer. The theatre, the food, the smells were just Chef Askew’s parents at the Singapore Cricket Club. fabulous and so vibrant! 14 THE PADANG SEP / OCT 2019
FEATURE How did your time in Singapore influence your love of food and cooking? Well I can honestly say that Singapore provided me with one of my first and greatest inspirations to become a chef. I travelled with family from very early on and was exposed to the markets and hawker centres of Singapore which, with its vibrancy of colours and flavours, was literally like being in Aladdin’s cave – it’s like the New York of Asia! The freshness of the seafood, vegetables and meats, the experience of having food cooked in front of you while you watch, the aromas, the theatre of it all just made me want more and more. So, I guess my fascination and obsession with great food and its presentation started here (in Singapore). It gave me the starting platform to the restaurant of my dreams at the age of 16 until when I opened The Art School five Chef Askew’s parents entertaining guests at The Padang Restaurant. years ago. How would you describe your style of cooking? Just as when I think of Singapore, I think of satay, chilli crab and chicken rice, I want my city to be known for its great seabass, lamb, Two words: “Experimental” and “precise”. I love to find new ingredients beef, asparagus and watercress etc. We have amazing ingredients to include in my dishes and also to find new ways of using the much- right on our doorstep, often overlooked, that I want local people to loved locally sourced seasonal ingredients. Experimentation is part of use, helping to cut down on air miles, carbon emissions and to the creativity of being a chef and in inspiring others to do the same. help maintain national and regional identity. I think of it as edible art. I like to think that I have Charity Ball menu that you are preparing? more art than science in my food. When I sit down to create a menu for such a special occasion I try to choose dishes and ingredients that are celebratory in their nature and fitting to the event. As chefs think of ingredients as crown jewels of what we do, I want to share my repertoire of flavours, colours and textures, and in this case, with some British colonial elements mixed with Singaporean highlights from the local markets. I used exactly the same approach when I cooked for Her Majesty The Queen, Condoleeza Rice and Quentin Tarantino. I cook from the heart and try to create memorable moments through the enjoyment and celebration of food. For me, this is a night to say “Majulah Singapura!” but with food, wine, conviviality, the heritage of a great city, an inspirational country and an amazing foodlovers’ heaven. Describe your favourite meal. I’m a diner of contrasts. I love simple, well cooked meals rather than elaborate food cooked badly but if I’m treating myself I would start with a glass of Charles Heidsieck Champagne (my favourite), then a turbot and lobster starter with a glass of Meursault, onto a venison Wellington and all the trimmings with a hearty Californian Ridge Monte Bello and then round the meal off with some Colston Chef Askew getting ready for some bowling action at the Singapore Basset Stilton with truffle honey and a glass of Dows ’66 port. Cricket Club. What is the one ingredient you cannot live without? It’s hard to pick one single ingredient as I love and use so many, but Onwards I suppose the one I reach for first and use most often would be and Upwards Maldon sea salt flakes. I have even packed some in my suitcase…. Haha! Chef Askew’s debut book, “Onwards and Upwards” What do you wish people cooking at home would try is part autobiographical, more of? documenting his early I would love to see people be more adventurous & experimental and years in the industry cook with more fish and shellfish at home. FE ATURE DECONSTRUCTING … PERANAKAN BELT BUCKLES By: Matthew Elton These stunning 22 carat gold Peranakan belt buckles were made in Singapore between the 1930s and the 1950s. Worn by Peranakan women with a gold or silver belt, they were used to hold up their sarong which was traditionally worn with a kebaya. Typical of the time, one of the buckles features an intricately carved dragon and phoenix, motifs in Chinese mythology for marital harmony. They represent the yin (dragon) and yang (phoenix) balance essential for married life and were often commissioned as wedding gifts by wealthier Peranakan families. These days, belt buckles are heirlooms, passed down from grandmothers with the promise they will never be removed from the family. However, if these were to come to market, we would estimate the smaller version could achieve $8,000 – $10,000 and the larger $15,000 – $18,000. Matthew Elton is the founder and dynamic personality behind HotLotz Auction House. As Singapore’s only full-service auction house, HotLotz offers a simple solution for buyers and sellers alike. For more information download the HotLotz app or visit hotlotz.com. HotLotz are coming to the SCC Open House Fun Day! Have you got an item at home you’re curious about? TAX STRATEGY AND PLANNING FOR RETURNING TO THE UK For those considering an eventual or imminent return to the UK, consideration of the tax implications compared to the Singapore tax environment is important. After enjoying low-income tax on earnings, no tax on investment income and no National Insurance deductions, moving back to a high tax jurisdiction like the UK can often end up being a shock and a huge setback. However, with a little care and planning, the UK can actually be surprisingly tax-efficient. The British Chamber of Commerce and Select Investors, a Division of St. James’s Place (Singapore) Private Limited, invites you to join this special presentation from Martin Rimmer, Head of Tax for Select Investors, where guests will be educated on the main issues and planning opportunities which will make a real difference in your UK repatriation. The event will also be valuable to non-British nationals who are considering a move to the UK. Hosted at the Singapore Cricket Club, we would be delighted if you could join us and we encourage the invite to be shared with others who would also like to attend. TUESDAY, 3 SEPTEMBER 2019 Registration with drinks and canapés at 6:30pm and presentation will commence at 7:00pm.
