L o r i n cz t he Dr. Stefan Lorincz and wife, Cornelia, are both accomplished famil y A Family Centered On Faith, Learning and Togetherness Sofia, the oldest at 17, is currently studying pre-nursing through Cornelia uses late spring and summer to plan the curriculum her kids will be pursuing the following school year. “We have school five days each week beginning right after breakfast. We do establish a regimen for learning,” she explained recently, “and start each day’s learning with a devotion and a light breakfast.” She says she spends a little more one-on-one direct instruction with ecology and how man affects his environment. He doesn’t have his own phone yet, but when he gets a chance, he hungrily searches the internet for topics that interest him. Although he doesn’t watch a lot of television, he enjoys some of the silly stuff that’s out there on YouTube. They love to travel and relish past beach trips to the Emerald Coast of Florida and are looking forward to future trips, which the kids hope will include a visit to the Grand Canyon. When they began to feel a little cooped up during the Covid-winter months, they would sleigh ride on the snow-covered hills around Glade, head to the slopes for some family skiing at Winterplace, or jump in the car to go to Charleston for some ice skating, a skill they picked up when they resided in Wisconsin. companion as being “very smart.” Sadie has also learned to be tolerant of her other real animal friend, her bunny Biscuit, who has been trained to use a litter box just like a kitty. Winter and the pandemic allowed this active outdoor family to spend a lot of time on the slopes at Winterplace. Stepdad Curtis is a skilled snowboarder, and mom Sarah, a former semi-pro skier out west, is a master of the slopes. Many would find such an adjustment difficult, but Ian Whited. Not far from that bench is town square where he and his buds like to “just hang out, talk, listen to music, and mostly just W laugh.” The 17-year-old lives with his grandparents, Rhonda Reed and Jack Whited, and loves the amenities here at Glade, especially Lake Chatham and the Neely Hole. Although he is a transplanted South Carolinian, his family roots in West Virginia run deep, and he is a loyal Mountaineer fan, citing for- mer gold and blue greats Pat White and Tavon Austin as his favorites. Born in Parkersburg, he lived his first 12 years in the Mountain State. His dad was a talented pitcher in his own right and gave his son an opportunity to excel at the game, but travel teams, off-season camps, and private baseball tutors left him “a little burned out on baseball.” Between that and getting a little behind academically during the pandemic, he’s spending his spring getting caught up in the class- room and concentrating on getting stronger in the weight room under the eye of Coach Phil Cullicerto, who evaluates his young Tiger this way. “He came to us with some natural gifts. Good feet and excellent hands. If he decides to really get stronger this spring and summer, he could really help us next fall.” Last season Ian stepped into the lineup when the injury bug hit Shady and responded with several interceptions from his position at corner- back as well as several fumble recoveries. He also saw some time at wide-out where he could utilize his speed and soft hands. If not hanging with his pals, Ian likes to spend free time watching sports or playing sports games like 2K Basketball or Madden NFL. He listens to rap and lists Little Skies and Young Bands as his favorite artists. A trip to Chick-Fil-A usually results in a couple spicy chicken sandwiches and large fries. Ms. Sizemore teaches his favorite class, English 11. “She makes class fun and challenges us,” he says with gratitude. After high school, he plans to return to South Carolina to continue his education at Trident Technical College. “I’d like to do two years there and then transfer to a four-year school with the possibility of law school after that,” he hints. The Chinese version is to use pork belly and chopped it to almost a paste form and then add corn starch for binding. Bread crumb was not used until Western cooking influence came in from the ‘80s. Lion’s Head is a classic one-pot large meatball dish from Shanghai. The idea is that – a little imagination would help here – a large meatball presented on a bed of braised Chinese Bak Choy, vaguely, resembles the head and mane of a lion. This recipe is the “red-cooked” version using dark and light soy sauce combined for braising. The dark soy sauce is to add color and aroma, and the light soy sauce is to add flavor. If you don’t have dark soy sauce* don’t go and buy a bottle, just call me and I will gladly share. Or substitute with low-sodium soy sauce. Rock sugar also acts as a thickening agent, which I have plenty to share.
