INTRODUCTION
Welcome to Dickie’s ledger of libations –
the finest of snifters, gargles, tipples and bracers.
Being somewhat of a stickler, Dickie has arranged
them in classic single-entry bookkeeping style:
After a strenuous day’s plant-hunting or something
equally arduous – bonsai carpentry or goldfish
milking perhaps – Sergeant Taylour and Donal
agree there’s nothing better to help one unwind,
and to stiffen the resolve for the next day’s valiant
endeavours.

Using the best of the season’s harvest
and a jigger or two of the finest ambrosias.
Every month we offer you a unique insight in to the
expertise and secrets of the Dickie’s Bar team and to
discover a glimpse in to the hard work and passion that
goes on behind the scenes.
The monthly classes are held on a Saturday 15:00 -
17:00pm. Each masterclass includes the teaching and
making 2 cocktails per person, canapés fresh from the
Corrigan’s kitchen and a recipe card for you to take
home and practise in your own surroundings.
