Tropical Fruit Glazed Ham A glazed ham is a great choice for a Christmas centrepiece. It's already cooked, so you just need to glaze it and warm the ham through. Keep the glaze chutney-sweet, with just a touch of savoury, and you'll never go wrong. Ingredients 440g can crushed pineapple in juice 150g sugar 1 cup mango chutney 2 cups tropical fruit juice 2 tsp curry powder Prawn Cocktail with An Asian Twist 2 tbsp fish sauce Recreate an old favourite but hold the mayo. 8-10kg whole leg of ham Ingredients mixed fresh tropical fruits such as rambutan, mango, pineapple, papaya, passionfruit, starfruit, limes and jackfruit, 400g prawns, cooked and peeled to serve 1 avocado, finely diced Method 2 tablespoons mint, chopped Combine the pineapple, sugar, mango chutney, fruit juice, 2 tablespoons coriander or parsley, chopped curry powder and fish sauce in a pan and bring to a simmer. 2 spring onions, sliced Simmer for 20-30 minutes, stirring occasionally, until thick 60ml lime juice and glossy. 1 clove garlic, smashed Remove the skin from the ham, making sure to keep as 1 teaspoon honey much of the fat as possible attached to the meat. Soak the shredded cabbage in cold water and refriger- ate for two hours, then drain well. 2. In a large bowl, whisk the olive oil, vinegar, mustard, maple syrup, ginger, sea salt and pepper. Whisk in the white wine to lighten. 3. Add the cabbage, beetroot, radish and rocket and lightly toss. Scatter with pomegranate seeds and return to the fridge to stand for one hour (or bit more or less) before serving.
