So, she came up with her own recipe – the Pineapple Submitted by Carolyn Mattis Pound Cake – and it was delicious! Everybody I thought I didn’t have this loved it! From then on, almost all her wedding cakes recipe anymore. I thought (and other cakes) were just the Pineapple Pound it left with my Helen never Cakes. Pineapple Pound Cake • 2 sticks of real butter ½ cup of shortening (in tub) • 2 ¾ cups of sugar 6 eggs • 3 cups of flour 3 tsp of baking powder • ½ tsp of salt ¼ cup of butter milk • 1 small can of crushed pineapple (Dole 8 oz.) 1 tsp vanilla 1. Mix butter and shortening together. 2. Add sugar. Mix until creamy. 3. Slowly add one egg at a time. 4. Stir together flour, baking powder and salt. 5. Slowly alternate flour mixture, and butter milk together. 6. Add crushed pineapple and vanilla. 7. Pour into a greased and floured pan (not Pam). 8. Bake at 325 degrees for 1 hour and 15 minutes.
