With a good serving of veggies (and a great way to sneak these into the bellies of picky eaters), sloppy joes o er a great well-rounded meal that is cost-e ective and prepared in little to no time at all! Try substituting ground beef with ground turkey OR lentils for an even healthier alternative! No buns in the house? No problem!! Toasting up some sliced bread will make the perfect “cushion” for this delicious and lling meal! A reminder that canned and frozen veggies always work well. Logistics: Total prep time will take you about 5 – 10 minutes. Cook time will range between 20 – 30 minutes For a total start to nish time of 30 – 40minutes! Cook your “meat” (ground beef, turkey, or lentils) to their appropriate internal temperature with the onion and celery. 2. Add remaining ingredients, combine well. 3. Let simmer for 20 minutes. 4. Cooking on a Budget Cheddar Chicken Casserole Don’t let the name confuse you – this cheesy and delicious pasta-based casserole pairs a ton of avor with a good dose of healthy ingredients. This quick and easy dinner is the perfect meal for weeknights or weekends and is sure to become an instant favorite in your home! We are providing the full-scale (family-sized) recipe below but invite you to cut this in half for a great solo or couple’s x! Logistics: Total prep time will take you about 10 – 15 minutes. Cook time is 50 minutes. For a total start to nish time of about an hour! What you’ll need: 3 cups of dried pasta – feel free to use whatever is on hand, but we recommend Rotini or any other type that will hold its shape while also gripping sauce well. 1 large boneless, skinless chicken breast (cubed) – previously shredded / frozen chicken works well here too (2 cups worth!) ½ teaspoon Italian seasoning (or any seasoning that is on hand and to your liking!) hazoxcompliancesolutions.com
Cooking on a Budget ½ teaspoon Garlic Salt ¼ teaspoon Pepper 2 tablespoons Olive Oil (feel free to use Vegetable or Canola instead) 1 can of Cream of Mushroom (or Cream of Chicken) Soup 1 cup Sour Cream ½ cup Milk (whatever is on hand!) 2 cups of Broccoli (fresh or frozen – if frozen, steam rst and lay out to dry to avoid watering down your casserole) 2 cups of shredded sharp cheddar cheese 1 cup of regular cheddar cheese (use whatever is on hand here – the taste won’t be a ected drastically if you’re using cheddar, mozzarella, or any other blend!) ½ cup of French’s Crispy Fried Onions (crackers or toasted bread crumbs work well here too!) How to: 1. Preheat your oven to 375 Degrees F (190 Degrees C). 2. Boil pasta and cook for 1 minute less than al dente, refer to package for cooking time. 3. While the pasta is cook, season chicken with Italian seasoning, garlic salt, and pepper. 4. Heat olive oil in a skillet, add the chicken and sear, tossing occasionally, for about 3 - 4 minutes. 5. Add broccoli and cook for an additional 3 - 5 minutes, drizzling some additional oil as needed. 6. In a small bowl, combine the soup, milk, sharp cheddar cheese, and sour cream, then add the cooked chicken and broccoli. 7. Drain the pasta and combine it with the casserole ingredients. 8. Lightly grease a 9 x 13inch casserole dish (or whatever is available) and add the casserole lling. Top with regular cheddar cheese, cover, and bake for 20 minutes. 9. Remove the cover, top with crispy fried onions, and bake for an additional 8 minutes. 10. Allow the casserole to cool slightly, then it’s time to serve, eat, and enjoy! hazoxcompliancesolutions.com

Whether it has been years or hours (no judgment!), this recipe is sure to please – a healthy dose of veggies (this is salad based, after all) combined with delicious avors that are SURE to have everyone asking for “more, please!” Logistics: Total prep time will take you about 10 minutes. Cooking on a Budget 6 cups of lettuce (or cabbage), shredded 4 Mini Dill Pickles, sliced 1 cup of Thousand Islands Dressing OR: “Special Sauce” 1/2 cup Mayonnaise 4 tablespoon Dill pickle relish ( nely chopped pickles work too!) 2 tablespoon Yellow mustard 1 teaspoon White wine vinegar 1 teaspoon Paprika 1 teaspoon Onion powder 1 teaspoon Garlic powder How to: 1. In a skillet over medium-high heat brown the ground beef, cook the lentils OR thaw the frozen patties and chop up. 2. When almost cooked through add the onions and continue cooking until the “meat” is cooked and the onions are translucent. 3. Drain the grease, and add salt and pepper to taste, then set aside. 4. In the same skillet add a small amount of olive oil and the shredded lettuce or cabbage. 5. Sauté until lettuce or cabbage is slightly softened, then salt and pepper to taste. 6. Divide the lettuce or cabbage between bowls, top each with a portion of the “meat”. 7. Sprinkle each with 1/4 cup of shredded cheese and top with pickle slices. 8. Quick and easy, this tomato soup pairs amazingly well with grilled cheese, tuna melts, or even just some toasted, buttered bread! Great for dinner with plenty to spare for lunches the rest of the week! Enjoy! Logistics: Total prep time will take you about 5 – 10 minutes. Cook time is 20 minutes. Cooking on a Budget 1 tablespoon olive oil 6 cloves of garlic, minced 1 whole onion nely chopped 1 teaspoon salt 1 teaspoon sugar 1 teaspoon Italian seasoning (or whatever is on hand/to your liking) 1/2 teaspoon black pepper 1/2 cup of heavy cream (to make 1 cup of heavy cream, mix 2/3 cup of whole milk with 1/3 cup melted butter – basically a 2:1 ratio!) 1/2 cup of parmesan (or any on hand) cheese, grated/shredded How to: 1. Heat olive oil over medium high heat, adding and sautéing onions for 3-4 minutes until soft. 2. Add garlic and cook for 1 minute. 3. Stir in tomatoes, stock, salt, sugar, seasoning and pepper. 4. Bring to a boil, then reduce heat and simmer for 15-20 minutes. 5. Using a stick blender (or any on-hand blender), blend soup until smooth. 6. Mix in cream and cheese. 7. Serve topped with additional cheese, this makes an AMAZING accompaniment to grilled cheese, tuna melts, or even served on its own with some bread and butter! hazoxcompliancesolutions.com

This ‘recipe’ has a LOT of variables – mainly, each individual’s topping preference, so be sure to have some fun with this one! Logistics: Total prep time will take you about 5 – 10 minutes. Cooking on a Budget What you’ll need: Tortillas or atbread, enough for each person to have the serving amount of their choice 1 can of tomato paste or pizza sauce (whatever is on hand) 2 Cups of Shredded Mozzarella (again, to each person’s preference) Butter or margarine Toppings: Pepperoni Sausage Peppers Onion Tomato Olives Etc. - the possibilities are endless, have fun with this! How to: 1. Spread butter onto ONE side of your tortilla or atbread and place in warmed skillet over medium heat. 2. Add tomato paste or pizza sauce and then cover with shredded mozzarella cheese. 3. Add toppings of your choice. 4. Cover the skillet and cook until cheese is melted, and toppings are ‘cooked’ 5. Remove from skillet, plate, cut into 4 “slices” and enjoy! 6.
