ABSINTHE In 1792, Pierre Ordinaire, a French doctor living in Switzerland, first invented absinthe as a medical elixir. In 1797, Major Dubied bought Dr. Ordinaire's recipe and began commercial production of the spirit with his son-in-law, Henri-Louis Pernod, in Val-de-Travers, Switzerland. In 1805, with entrepreneurial spirit, Pernod moved production to a larger facility across the border to Pontarlier, France. Though Pernod only distilled some 16 liters of absinthe in his first year, the business and the spirit soon proved a success. At the height of absinthe's popularity, over thirty-six million liters were consumed in France annually, and there were over 30,000 absinthe cafes in Paris alone. Following nearly a century long ban, legal absinthe returned to Val de-Travers, Pontarlier, and the world in the early 21st Century. From the Alps to the Rockies to the Cascade Mountains quality absinthes are now being distilled and enjoyed. Mirabelle's absinthe selections will be served with classic, Parisian Service: one ounce of the absinthe of your choice, a sugar cube perched atop a gold Toulouse Lautrec absinthe spoon slowly dissolved by water, drip by drip, from our absinthe fountain, until an approximate 3:1 water to absinthe ratio has been achieved. VIN DE LIQUEURS Vin de Liqueur is a blend of juice and eau de vie aged together. Many regions in France produce their own prized versions: Champagne Historically, “ratafia” was any drink consumed when ratifying an agreement or treaty. Modern ratafia’s aromatic creaminess is still a wonderful way to seal a deal or end a meal. Champagne Geoffroy Ratafia de Champagne $16 Cognac In 1589, Pineau des Charentes was discovered by accident when a farmer filled a presumably empty barrel with grape must. It turned out that this barrel contained some unaged Cognac and several years later, when the barrel was opened, the beautiful blend was discovered, drank, and adored. For centuries, only the Norman farmers and their neighbors were able to enjoy this beverage due to an obscure law that forbid its sale, until the regulation was repealed in 1981. CHARTREUSE In 1605, Francois Hannibal d'Estrées, Marshal of King's Henri IV's artillery, gifted the French monastic Order of Chartreuse with a manuscript describing an elixir. The manuscript's recipe contained complex and esoteric instructions of alchemy, maceration, and distillation. The Carthusian apothecaries studied and experimented for over a hundred years. In 1737, the Monastery's Apothecary, Frère Jerome Maubec, perfected the formula of the “Elixir of Long Life” or “Liqueur of Health,” as it was then called. Only two Chartreuse monks know the blend of 130 plants used to make Chartreuse, as described in the 1605 manuscript. The recipe is one of the best-kept secrets in the world. GREEN CHARTREUSE $20 The original “Elixir of Long Life.” This herbal liqueur is vibrant in color and has a bold vegetal character. It has distinct notes of basil, rosemary, and pine. YELLOW CHARTREUSE $20 In 1838, the Chartreuse Monks modified their recipe and crafted this milder and sweeter liqueur. It is lower in alcohol and has flavors of saffron, honey, and chamomile. CHARTREUSE V.E.P. Green OR Yellow $40 The “V.E.P.” stands for “Vieillissement Exceptionnellement Prolongé” or “exceptionally prolonged ageing.” These are mellower and nuanced barrel-aged versions of the Chartreuse spirits.
