Farm Fresh Produce As we reach the end of Summer, there are some new menu changes on the horizon that we are excited to share with you! Recently, we partnered with a local farm to provide us with fresh, organic produce. This new partnership has allowed us to add things like our NEW Heirloom Tomato Burrata Salad to the menu featuring farm fresh heirloom tomatoes and delicious burrata cheese. Andre Skula Executive Chef We have also added some produce and other goods to our menus from a local farm in Huntley, IL. Their corn is out of this world and their bakery pies are some of the best. Their pies are baked fresh daily and are featured on our dessert menu! Keep an eye out for more farm fresh produce options in the next menu change, coming around mid-September. The team and I are working hard behind the scenes as we build the upcoming menu around these seasonal, fresh ingredients. Heirloom Tomato Burrata Salad Going with the theme of farm fresh produce, you won’t want to miss our upcoming farm-to-table wine dinner on September 23rd with Frank Family Vineyards. Stay tuned for additional details! In the meantime, we invite you to join us for our Checkerboard Vineyards Wine Tasting on September 9th. Or, if you’re interested in something more private, one of our exclusive Chef’s Table Dinners featuring a custom designed menu for you and up to 9 of your closest friends may be the perfect fit. End of Summer Goodbyes Goodbye Willow Tree While we avoided storm damage most of the Spring, we have seen our share this Summer. Most notably, the Willow (or giant golf course weed) between 9 & 18 green. This tree was removed after being damaged by high Ben McGargill winds, but not to my chagrin. Willows are very weak, fast growing trees that Superintendent of Grounds and Greens usually fall apart like this after about 30 years and require daily cleaning when planted this close to greens and bunkers. The mound it sat on (along with many large tree roots) was removed to better tie the two greens complexes together. Goodbye Oak Tree We had an Oak fall on Hole 13 in a storm that occurred one week after the Willow was damaged as well as another Oak that split apart on Hole 2. Fortunately, no one from our staff was under the tree while they were repairing the 13th greenside bunker! End of Summer Cookout August is the month we say goodbye to all of our students on staff as they return to school. However, before we send them off and the Summer officially ends, Spray Technicians, Benjamin and Felix, like to treat the grounds crew staff to an authentic Mexican cookout at the grounds and greens building!
