SUMMIT VIEWS OCTOBER 2020 A MESSAGE FROM BRIAN Friends and Family of Summit Health and Fitness: I am writing my first newsletter article as Managing Partner of Summit Health and Fitness with mixed emotions. I stand on the shoulders of giants and would be remiss if I did not begin by acknowledging Tony Giustina for his numerous contributions to Summit over the past 9 years. We will miss you and I thank you for everything you have done for us here at Summit. I also have the pleasure of publicly acknowledging our fabulous Group Fitness Director Jan Rominger for 20 years of service this October. A simple ‘thank you’ for all you have done here at Summit Health and Fitness does not feel adequate. We are truly blessed to have you as part of our Team and for the immeasurable impact you have had on the health and wellness of our Members. I look forward to many more years sharing your knowledge and passion with our Members. Thank you to my Summit Business Partners for the opportunity to lead, and to our Employees and Members for their commitment and support during a challenging 2020. This is truly a community I am proud to be a part of and look forward to all that we are able to accomplish together. This year for me has been about ‘learning to be comfortable in uncomfortable situations.’ I have never been a runner, have completed a 10K twice in my life, but have made a decision to push myself physically and psychologically by participating in the Big Brothers Big Sisters Virtual Half Marathon. I will be sharing my beginner’s training program for half marathon preparation on our social media. Please join me in this journey, join me for a training run, and enjoy the exercise tips I will be providing over the next 6 weeks. Our instructors are so happy to be back teaching in person again and we’d like to thank you so much for your flexibility and understanding during these challenging times. We will be offering classes inside (with masks), outside (no masks required if distanced 6 feet apart), and on Zoom. To help you stick with your 2020 fitness plan, here are some of the best fitness quotes that may inspire you to keep on going. “O N L Y I C A N C H A N G E M Y LI F E . It’s easy to become stuck in old habits; if you’ve always found excuses to skip exercising, your brain will continue to find ways to avoid hitting the gym. But change is possible as long as you put in the hard work necessary. Just as there are days when you don’t feel like going to work, there will be days when you don’t feel like hitting the gym. In those moments, what will get you through is the habit of moving every single day without fail.
A simple puree of canned HEALTHY & SIMPLE pumpkin, coconut milk, and warm spices come together in this healthy and easy soup. PUMPKIN SOUP INGREDIENTS ½ T Olive Oil 1 Sweet Onion, Diced 1 T Garlic, Minced 1 t Ground Ginger 5 C Cauliflower, Chopped or Riced 4 C Vegetable Broth 1 15 oz Can Pumpkin (Unsweetened) 1 T Maple Syrup 1 t Salt ½ C Full Fat Coconut Milk INSTRUCTIONS Sautee onion and olive oil until translucent (5 minutes) on medium heat. Add garlic and ginger and cook 1 minute more. Add cauliflower, broth and pumpkin and turn heat to high to bring to a boil. Cover and reduce heat to simmer for 20 – 30 minutes or until cauliflower is tender. Stir in maple syrup, salt and coconut milk. Remove from heat and use an immersion blender to puree. You can alternatively pour the soup into a blender and blend until smooth.
