Seasonal Delights The Perfect Spring Racing Antipasto John Headley, Chef and Manager of Darriwill Farm, Hamilton INGREDIENTS (For 8 people) Smoked ocean trout, dill & baby Insalata Caprese – Smoked Rainbow Trout – 1 (300gm) caper dip – Shaw River Mozzarella – 2 balls Smoked Chicken Breast – 1 (250gm) Smokehouse smoked ocean trout - 200gm Vine ripened tomato – 3 Caperberries – 12 Baby capers - 30gm (rinsed & drained) Baby Capers – 20gm Irrewarra Baguette – 2 Lemon - 1 x rind & juice Spanish onion – 20gm Istra Sliced Prosciutto – 150gm Dill - 10 fronds (finely chopped) Fresh basil – 12 leaves Mount Zero olives – 1 jar mixed Chives - 8 fronds (finely sliced) Mount Zero Olive oil – 50ml Mount Zero Dukkah – ½ jar Mount Zero Pink Lake salt & ground pepper – Murray River Sea Salt & Cracked Pepper – to Muntham Estate olive oil – 250ml to season season Fromage des Clarines – 1 Double cream - 250ml (whipped to soft peaks) Maffra Mature Cheddar – 200gm Cream cheese - 250gm *All gourmet produce can be purchased in the Pouring cream - 100ml delicatessen at Hamilton’s Darriwill Farm store Tomato paste - 1-heaped tbsp Method Smoked ocean trout, dill & baby Assemble the antipasto caper dip Place the whole rainbow trout and the Pick ocean trout, discard all bones, and ocean trout dip on a platter; put the mixed chop roughly.
