CHEF’S CORNER SPICING THINGS UP AT HCC I have been keeping a secret for the past few months...no, Allison is not pregnant. I have been working with Spicewalla to create a Signature spice blend that we use at HCC. Wait, it gets better! We are introducing Chef Steve’s Everything Spice Rub that will be available to Steve Boeger our members with a limited production in the near future. We use it on our steaks, in marinades, and even sprinkle it on our fries when no one is looking. WHY SPICEWALLA? This chef-driven company has an unmatched level of quality to the sourcing and care of all their spices. Each blend is super fresh, sourced directly from quality suppliers, blended in small batches, and packed and p rocessed by hand. Everything that comes from them is local, sustainable, and amazing quality. WHAT MAKES SPICEWALLA SO DIFFERENT? The sourcing, selection, and blending process is personally curated by the master of spices himself, Meherwan Irani, 4 times James Beard nominated chef and founder of Chai Pani Restaurant Group. Spicewalla has been published in the New York Times, Wall Street Journal, GQ, Food & Wine, Saveur, USA Today, and Bon Appétit, among others.
