Lobster and lionfish plus goat cheese and honey are the sea and farm-to-table highlights infusing Restaurant Weeks menus across the island, accentuated with a winter season bounty of locally grown produce. It’s the best time of year to dine out and eat up. 2
After Restaurant Weeks, bring local harvest to your own dining room table. Just follow these step-by-step recipes, favourites of our harvest heroes. Tucker’s Farm Goats Cheese Souffle INGREDIENTS: 450ml milk 2 fresh bay leaves 80g butter 80g plain flour 125g Tuckers Farm goat’s cheese 50g finely grated parmesan Lobster 6 egg yolks 6 egg whites Thermidor 1 cup (250ml) thin cream INGREDIENTS: DIRECTIONS: 1 medium (1 1/2 pound) cooked lobster 2 tablespoons butter Step 1: Preheat oven to 180°C. Lightly grease eight 1 shallot, finely chopped 200ml-capacity ovenproof ramekins. Combine the 1 ⅜ cups fresh fish stock milk and bay leaves in a medium saucepan over ¼ cup white wine medium heat and bring to a simmer. Remove from ¼ cup double cream heat and set aside. Meanwhile, melt the butter in a ½ teaspoon hot English mustard medium saucepan over medium heat. Add flour and 1 tablespoon fresh lemon juice cook, stirring, for 2 minutes or until mixture bubbles. 2 tablespoons chopped fresh parsley Gradually add hot milk mixture to the flour mixture, Salt and freshly ground black pepper to taste stirring constantly until well combined. Cook, stirring, ¼ cup freshly grated parmesan cheese for 3 minutes or until sauce boils and thickens.
