About Us

  Based on Orcas Island in the San Juan Islands of Washington State, we specialize in single-
varietal preserves made from heritage rainshadow orchard fruit. Grown by small family farmers
 & homesteaders– many varietals come from trees that have been producing for over 100 years, on
                                        the remaining tracts of a once thriving orchard industry.

      Inspired by this legacy and partnering to revive and sustain it, we make the highest quality,
   locally sourced, organic fruit preserves nature and careful craft can provide. Made in an old-
    school style that emphasizes structure and pure, ripe, naturally grown fruit -- we classically
    prepare them by hand in copper pots, with organic unrefined cane sugar, a squeeze of organic
lemon, and fresh herbs from our kitchen garden. We don’t use commercial pectin and rely on time,
      evaporation, and concentration for set; for us, it’s all about the fruit and drawing out its full
        potential. We think this fruit is really special; we hope our preserves help tell their story.

  Our line of cutting preserves and spoon preserves are tailor-made for sweet and savory pairing,
  as well as cooking – they’re the perfect pantry staple. A natural accompaniment for cheese, our
   preserves upgrade a cheese platter to sublime. They bring a sense of gravitas to any meal– an
   appreciation for tradition: for the bounty the land can provide, and the simple human ingenuity
                                                            that inspired us long ago, to preserve it.

Spoon preserves, more like a traditional jam, have a softer set than our cutting preserves.
They are equally at home on toast, dessert, or cheese, and are rich with whole pieces of fruit.

Cutting preserves are ‘membrillo’ style, highly concentrated fruit purees, but softer,
      for easy spreading – perfect for cheese & charcuterie pairing. Known as ‘fruit
cheese’ in Europe, this classic recipe was originally used to take advantage of fallen
                      orchard fruit. Great starters for glazes, vinaigrettes, & sauces.

Spoon Preserves
(NEW) Orange Peppered Pear: Heritage island Bosc pears rendezvous with organic California
citrus juice and heaps of zest, jazzed up with a hearty dose of freshly ground organic black
peppercorn for a smooth preserve that is a soulmate for gooey brie, and a go-to for the
marmalade-lovers. $6.36/unit/MSRP $12.00

Okanogan Apricot: We've partnered with a small family orchard that's been growing fruit in the
Okanogan Valley right across Highway 20 for decades -- to bring you a classic -- apricot jam
made in the French confiture style, made with the most delicious, naturally grown apricots that
warm central Washington sun can provide. Slather it on creamy blues or morning oatmeal.

Donut Peach with Lime: Glorious heirloom Saturn peaches (aka 'Donut,') grown
meticulously and naturally by Smallwood Farms in Okanogan, Washington, shaped like a
donut and accented with organic lime juice. Pair with stinky cheese (Taleggio!!) and salty meat
(coppa, coppa, coppa, but really...coppa). $6.36/unit/MSRP $12.00

Tomato Jam: This year’s batch includes beautiful ruby Amish paste tomatoes from Maple Rock
Farm on Orcas, sun-ripened and kissed by the ocean breezes in Crow Valley and yellow and red
Brandywines from Mama Bird Farm on San Juan, We tease out their sweetness with curls of
organic lemon zest, and a pinch of San Juan Sea Salt. The hubby swears by it on a ham

Shiro Plum with Mint: A 2016 Good Food Awards Winner, we love the brightness of this
Asian varietal – and find it pairs fabulously with mint. This preserve is among our most versatile
– awesome with toast, excellent with cheese, and perfect for anything you’d use a mint sauce on

Island Plum (formerly 'Italian Plum with Anise Hyssop'): Orcas Island’s beloved Italian Plums
(Prune Alley, in the middle of town, used to be a country lane through an orchard of Italian
prune trees) shine in this well-rounded preserve--accented with garden-grown anise hyssop.
Deep purple, rich, with just a hint of licorice. Try with chocolate mousse. $6.36/unit/MSRP

Pear Balsamic: Crafted with Bartlett pears from century-old heirloom orchards, and reduced
down with syrupy organic old world balsamic vinegar, we can’t get enough of this on Taleggio,
Asiago, & blues. Try it over ice cream or straight from the spoon. $6.36/unit/MSRP $12.00

Orcas Pear with Bay: Orcas pears cook beautifully into this rosy preserve, with notes of ginger
from our fresh garden-grown bay leaves. Highly versatile, this preserve adds interest to
pannacotta and cheesecake, and a sweet, herbal note to cheese pairings. Incredible sandwiched

Rhubarb Lavender: Crow Valley red Valentine rhubarb meets garden-grown English lavender.
The perfect balance of tart and sweet with just a touch of floral, this deep pink preserve is
gorgeous with soft, creamy cow’s milk cheeses, a buttered baguette, or dolloped over custard or

Quince Marmalade: A nod to the ‘first fruit’ and the origin of ‘marmalade,’ this classic preserve
deserves a renaissance. Bright, unique, and swoon-worthy. Use it as you would a contemporary
marmalade, and enjoy the notes of honey and earth. A unique accompaniment to sheep’s milk

Apple Caramel: Tart heirloom island Gravenstein apples from a historic orchard cut the
sweetness of this deeply caramelized preserve, great with soft, creamy cheeses, classic sharp
cheddars and goudas. A crowd pleaser, it can even hang with peanut butter. Did I mention

Pink Bartlett: crafted with heirloom Bartlett pears from an original 1900s Orcas Island orchard,
this delicate pear paste, gently spiced with a pinch of pink peppercorns, is beautiful with blue
cheese, cheddars and goat cheese. $5.36/unit/MSRP $10.00

Quince: the inspiration for the line, this preserve exemplifies the ancient tradition of long-
steeping quince. Like a classic membrillo, but a tad softer for easy spreading, it’s excellent with
aged manchego or any sheep’s milk cheese, cheddar, and Parmigiano Reggiano. Beautiful as a

Ruby Red Apple (formerly 'Crabapple'): this preserve is more tart than your standard apple, with
the slightest hint of bitter from tiny crabapples--making it particularly suited to cheese. We love
it with gooey, soft-ripened ones, gouda, semi-hard, and hard cow’s milk cheeses, or a dry

Italian Plum: made with Italian plums from original, historic Crow Valley orchards, this plummy

Hot Pepper Plum: This limited edition preserve comes from a combination of island-grown Shiro
Plums and Korean Hot Pepper Powder, traditionally used in kimchee. It is the ideal fusion of
sweet, tart and spicy (but not too hot!). When the triple-cremes and aged goudas elude us, this,
with a slather of cream cheese, is perfection. $7.00/unit/MSRP $13.00

Brandied Pink Pearl Apple: Our Pink Pearls come to us via speedboat from wee Waldron Island-
-a real treasure. Tart & sweet, with pink blushed yellow skin, it looks like any other apple until
you take a bite and discover its pretty pink flesh. We couldn't help but swoon... We've paired
these pretty gals with a generous splash of another local delicacy - Orcas Distillery’s Aged Apple
Brandy, distilled from heritage local apples - for a deliciously indulgent twist. It's like an apple hot
toddy, ready for the long winter nights. Extra, extra special, we're eating this one right off the

Shrubs - sweetened drinking vinegars
Our historically inspired drinking shrubs, made with heirloom fruit, sweetened with organic cane
sugar & balanced with organic vinegar, are super concentrated syrups tailored for your drinking
pleasure. We recommend 1 part shrub to 5-8 parts sparkling water for a uniquely refreshing fruit
tonic and festive non-alcoholic option that looks great in a flute. Or swap in a splash of your
favorite liquor to spice things up. Perfect for inspiring the inner bartender and chef in you.

(NEW) Island Pear Taking a cue from our signature Orcas Pear with Bay Spoon Preserves,
we’ve whipped this flavor into shrub form for a taste of the islands just right for sipping.
Deep pear flavor accented with the softly ginger-y kick of fresh bay lends itself to a perfect
beachside soda or grillside Collins glass with vodka or bourbon and lots of crushed ice.

(GFA 2018 WINNER) Ruby Spiced Apple: Tart Everest crabapples are juiced and
accessorized with star anise, cinnamon and black pepper for a warm spice especially suited
for cool days and dark rum. We're also fond of kicking up the spice in a zingy ginger beer.
Pairs exceptionally well with bourbon & whiskey too (we did the research) Of course, we
find this one will keep you going back for more, with or without the boozed up addition--it's

Lemon Lavender: We do our darndest to use every scrap of the fruit we work with, and this
effort towards resourcefulness led us to dipping lemon rinds in sugar. We adore the
pleasantly bitter notes it yielded and could think of no better pairing than the English
lavender put up from our garden, hanging above the pots. This shrub is screaming to join
your French 75, and sings sweetly on its own with seltzer. $7.50/unit/MSRP $15.00

Quince: the earthy and rosy soft floral tones of the ancient fruit are concentrated in a syrup
that sings on its own, added to seltzer water, or jazzed up with bourbon or sparkling

Island Plum: made with Italian plums from original, historic Crow Valley orchards, this
deep purple plummy concoction is gorgeous alone with sparkling water - but adds depth and
just the right sweetness and acidity to bespoke cocktails. Also wonderful used as a glaze for
tarts or added to vinaigrettes for a touch of fruitiness (bitter greens, blue cheese,

Shrubs - sweetened drinking vinegars

Tomato: crafted with heirloom Maple Rock Farm tomatoes from Orcas Island, organic cane
sugar, and organic white wine vinegar this shrub is the perfect expression of summer, bottled
up for winter drinking and cooking. We think it makes an exceptional addition to a Bloody
Mary or as a substitute for sugar in a classic Old Fashioned. It's a surprisingly delicious and
refreshing spritzer with sparkling water alone. Fantastic added to a vinaigrette or used to
glaze fish, steak, shrimp, or chicken. $7.50/unit/MSRP $15.00

(OUT OF STOCK) Rhubarb: marks the kickoff to harvest season for our kitchen, and our
cheeks often match its color as we giddily begin to process the fuchsia stalks. This new
addition has been flying off our farmers’ market tables and we put the pedal to the metal to
make more for wholesale! Whiz it into a marinade for ribs and serve a matching cocktail
alongside tequila or mezcal and a salted rim (may also induce blushing cheeks).
