February Art Appreciation Series Welcome to the Pillars, we hope you are enjoying your February Birthdays home and this great community of people. There are a couple of changes and additions to the Pillars Peace Project monthly calendar. As we move through the month, please let the activities team know what feedback you Writers Group have. What we've added - a monthly political discussion group and writers group. What we've Get-To-Know Your Neighbor changed - Lara’s weekly music program, Balance and Stability, TED Talks, Art Appreciation and Meet your Southeast Seniors Events Neighbor Social. Please see the monthly and weekly calendars for the specific dates and times. Starting this Cooking With Jeremy month, we will have a special social hour and that will be held on Wednesday, 02/17. In February, we've also Updates From The Executive Director added a conversation about spoken word poet Amanda Gorman and a discussion group about the film, Ma Pillars Photo Gallery Rainey's Black Bottom. We will send out more information about the details in the weekly calendar. Thank you for contributing to the University of Minnesota Physical Therapy partnership and its success. The students have really enjoyed getting to know all of you. If you have any feedback for this partnership, please let me know so I can pass it along. Wedding photo guessing game In honor of Valentine's Day this month we invite you to play a wedding photo guessing game! Email your wedding photo to Megan at meg16433@fairview.org or stop by the front desk with a physical copy of your wedding photo. The reception team will scan it over to Megan and return your original copy. We will be featuring the photos on our in-house channel (1-2) and in the dining room. Photos will be numbered and whoever identifies the most number of wedding photos correctly wins a prize! Please submit your photos before February 19th. Guessing submissions will begin on February 20th and end on the last day of February! art appreciation series Come join us this month on February 1st and 15th for our new art appreciation series! We will be looking at a local multi-organizational initiative called "We Are The Story". We will view the virtual exhibits and interviews with the curators at the Textile Center. This exhibition is part of a larger initiative, "We Are The Story", organized by the Textile Center and the Women of Color Quilters Network (WCQN). It was curated by WCQN founder Carolyn Mazloomi, who conceived of the project when Minneapolis became an epicenter for nationwide protests following the police killing of George Floyd. 02 PILLARS PRESS | ISSUE 2

On March 17th, we will be February 24 Sigurd Hoppe celebrating Ireland! February 26 Karla Leupold writers Group If you have an interest in writing or currently working on a project, please join us on Thursday, 02/18 at 4p. During the first meeting, each participant will have about 20-25 minutes to share with the goal of getting to know each other as writers. Please bring something that inspires you or a writing project that you are working on. We will meet twice a month, the March meeting dates are 03/04 and 03/18, 4p in the 7th Floor Club Room. Get-To-Know Your Neighbors: Tony Scallon 1. Where are you from? I am originally from a small farm in Iowa that the family still owns. I attended Ellsworth Community College in Iowa and then Mankato State University and The University of Minnesota, studying the first History and later Special Education achieving my Specialist in Education degree in 1994. 3. Lunch Bunch with Southeast Seniors The Fascinating Life of Hallie Q. Brown Wednesday, February 10th 1:30-2:30 pm, 7th Floor Club Room Hallie Q. Brown was an author, educator, and equal rights activist in the late 19th and early 20th centuries. Her legacy continues through the Hallie Q. Brown Community Center in St. Paul by providing critical human services, promoting personal growth, and developing community leadership. In honor of Black History month, we’ll explore the life and work of this amazing leader and her impact on America. As Executive Director of the Hallie Q. Brown Community Center, Jonathan Palmer leads a team fulfilling the mission to improve the quality of life in our community by providing access to critical human services, fostering and promoting personal growth, and developing community leadership. Active senior programs including the Magnificent Golden Agers and the Retired Men’s Club. Jonathan also serves on several Civic Boards and Community Advisory Committees. He has been recognized by the City of Saint Paul and Ramsey County for his leadership toward the community. Southeast Lunch Bunch: Winter Sunlight Watercolor Wednesday, February 17th 12-1:30 pm, 7th Floor Club Room Whether or not you consider yourself an artist, try your hand at painting a beautiful winter scene with step-by-step guidance from instructor Megan Dolezal. We'll focus on painting a winter sunset scene, with sunlight streaming through the trees. A basic supply package will be provided and delivered to you prior to our gathering. Megan Dolezal has a BA in studio art and has been painting in watercolor for over 15 years. Megan enjoys encouraging her students, getting excited by the progress they make, and then celebrating their accomplishments some more (painting is very exciting to her). Cooking With Jeremy: Chocoflan Ingredients Flan 1 13.4-ounce can La Lechera dulce de leche or 1 1/2 cups prepared dulce de leche 1 12-ounce can evaporated milk 4 ounces cream cheese, at room temperature 1 1/2 teaspoons vanilla extract 1 pinch kosher salt 5 large eggs Chocolate Cake 1 1/3 cups all-purpose flour 1 cup sugar 1/2 cup unsweetened cocoa powder 1 teaspoon baking soda 1/2 teaspoon baking powder 1/2 teaspoon kosher salt 1/2 teaspoon ground cinnamon 6 tablespoons unsalted butter, cubed, at room temperature 1/2 cup brewed coffee, cooled 1/2 cup buttermilk 1 large egg 1 teaspoon pure vanilla extract For serving (optional) Dulce de leche, chopped nuts, whipped cream, and/or ground cinnamon Recipe from: https://smittenkitchen.com/2020/07/dulce-de- leche-chocoflan/ 06 PILLARS PRESS | ISSUE 2
Cooking With Jeremy: Chocoflan Directions 1. Heat your oven to 350ºF 2. Make the flan: In a blender, combine the dulce de leche, evaporated milk, cream cheese, vanilla extract, and salt and blend until smooth, 20 to 30 seconds. Pour in the eggs and blend for another 10 seconds until smooth. 3. Make the chocolate cake: Sift the flour, sugar, cocoa powder, baking soda, baking powder, salt, and cinnamon directly into the bowl of a stand mixer fitted with a paddle attachment, or a large bowl for use with an electric handmixer. Mix on the lowest setting until just combined, then add the softened butter and continue mixing on low speed until the mixture resembles wet sand. Stop the mixer and scrape down the sides of the bowl if needed. 4. In a liquid measuring cup, combine the coffee, buttermilk, egg, and vanilla extract, then slowly pour it into the flour-butter mixture with the mixer running on low. Scrape down the sides of the bowl and beat the mixture on high for a full minute. 5. Bake chocoflan: Liberally coat a 10-cup Bundt pan with cooking spray. Add the cake batter, smoothing out the top with an offset spatula or spoon. Carefully ladle in the flan so you disturb the cake batter as little as possible. Transfer the Bundt pan to a roasting pan or baking dish large enough to fit the Bundt pan. Grease a piece of foil and place it greased side down onto the Bundt pan, folding it over the edges to loosely seal it. Transfer to the oven, then pour water into the roasting pan or baking dish to come up 2 to 3 inches. 6. Bake for 2 hours to 2 hours 15 minutes, checking for doneness after 1 hour 45 minutes, using a skewer inserted into the cake to make sure it’s baked through. There should be little to no crumbs sticking to the skewer when you pull it out. 7. Carefully remove the Bundt pan from the roasting pan and let it cool to room temperature before placing it in the fridge to cool completely, at least a couple of hours. 8. To serve: Once you’re ready to serve, carefully run a knife around any edges that are still sticking, then invert onto a serving platter, gently shaking it up and down if it’s being difficult. If desired, serve with dulce de leche and a sprinkle of chopped nuts or with whipped cream and a sprinkle of cinnamon. 07 PILLARS PRESS | ISSUE 2
Message from Executive Director, Becky It is hard to believe we are entering our second month of the new year. We kicked off January with a thoughtfully and creative New Years' brunch for all to enjoy. The delicious eggs benedict prepared by Chef Jeremy was outstanding, the mimosas looked ever so refreshing and the decorations and novelties were perfect! We are so fortunate to have such caring, creative and energetic staff to help make these events so enjoyable. This month we celebrated our three Activity Professional staff with our Minnesota theme: “10,000 Reasons Why We Love our Activity Staff”. We are so grateful for Erin Erdahl, Lara Hermanson, and Megan Plummer for all the wonderful programming they provide. If you did not get a chance to write a special message on their sign, please stop by the private dining room. It’s not too late. In the month of February we celebrate our talented Culinary Services Team – Chef Jeremy, Chef Erik, Chef Haidee, Dee, Anaf, Lanie, and our newest team member "Jayden" who goes by Jay. We thank everyone who received their COVID vaccinations on January 22. It was a great day and very well attended with 96% of residents and 84% of staff getting the vaccination. Our next vaccination date is set for February 19. We are feeling extremely optimistic and hopeful 2021 is moving in the right direction. While we wait for that second vaccination, we appreciate everyone staying the course and maintaining safe distances, and following our visitor guidelines. It is so nice to see and meet some new faces, as you welcome your visitors into the building. We are still using the sign-up genius to schedule those appointments. All visitors need to stop at the front reception desk and be screened. Show your Pillars Pride by purchasing our new apparel wear available to residents and staff.
