Preface Cordial congratulation On your decision in favour of the IME Pizza – dough moulder Representation of the machine The dough forming machine was projected for the exclusive food preparation use. It characterizes for the cold-rolling of dough to the bread and cake dressing in order to facilitate the shaping of pizze, pancake, bread, tartlets and so forth without changing the qualities of the dough in this case. Every dough forming machine (Pic 1, Pic 2) consists of: - a steel case, - two steel slides, - two role groups with respective protector that are touched from belts – electrical motor –operation through a card fed by the tension net (220V), at which with weak tension (12V) the commands like switching ON/OFF are combined. Field of action Under normal conditions of work the worker needs the place representedly as in Pic. 2.1 in order to be able to use the machine optimally. Dangers The machine can contain dangers although it corresponds to the safety regulations in the electric, mechanics and hygiene field, if: - it is unsuitable used, - at harm of the protection and the safety devices, - with non observance of the rules to installation, starting, use and maintenance. Important!! All ways of installation and maintenance must be carried out by qualified personnel and authorized by the manufacturer. No responsibility for wrong installation or handling is taken over. Safety statements Important: Reading the directions for use attentively before initiation. Caution: In order to preclude possible hazards which are to be put down to fluent, mechanical parts, fires or hygienic mistakes, the following safety regulations must be kept: A – Keep the place of work functional. Disorder contains danger of fire. B – Consider the environmental conditions. Do not practise the machine in moist, wet insufficiently illuminated rooms, or near flammable liquids or gas. C – Keep away children and unauthorized persons. Prohibit the approximation to the machine or to the place of work. D – Use the machine only in the field of the limit of performance. E – Adequate clothing Do not carry hanging down clothes or accessories, that could possibly scramble in mobile parts. Carry Anti-slip shoes. Wear a hair net and gloves fo r hygienic reasons. F – Protect electricity cables. Do not pull at the cord in order to pull the power plug. Do not expose the cord to high temperatures, sharp rims, water or solvents . G – Avoid unsure positions. To select the most expedient place, to gua rantee a steady balance around. H – Let prevail highest attention. Do not neglect the job, do not work in an unconcentrated way. J - control that the machine is not damaged. Controlling the safety devices before initiation of the machine. Guaranteeing that the mobile doors are not blocked, any components are not damaged and all parts are proper mounted in order to guarantee the functioning. Rules for the user The place the machine is set up, should show following qualities: - dry, - water and heat springs in corresponding distance, - adequate aeration and light, according to hygiene law and safety regulations. The floor must be in a level way and just in order to allow a complete purge. Do not set up any subjects near the machine which could hinder the natural ventilation. Important! The electric net must correspond to the norms or laws of the european states. The equipment with a tested grounding is especially necessary.. Make sure, that the tension frequency and height of the plant corresponds to the values, that are shown as well in the technical qualities (1.2) as well as on the designation plate behind the machine. INSTALLATION The machine is supplied with a closed wrapping. After the wrapping of the two protectors and the machine is away, proceed as follows: - bring the machine into the planned position, - to divert protective film (pic 3) , not employ averages that damage the surface - Clean the machine, slides and the two protectors with a sponge or cloth and warm soap water. Rinsing with clear water. Abrading with a dry, tender cloth. Do not employ steel wool, barn flux or corrosive substances which could damage the surface. Damage the surface in no case from hygienic viewpoint. - Cut the 2 rings, that block the pole and the small scale (only 030,40) Mod. Ø 40: Proceeding during the arrangement of the 2 protectors (Pic 10) as follows – the screws E - F - M - N solve - position the upper protector so, that the punctures E - F are exactly about the subordinate ones - tighten the screws up to the blocking of the protector – to proceed in the same way during the fixing of the lower protector. - to proceed in the same way during the fixing of the lower protector. Mod. Ø 30.40: During the arrangement of the upper slides and the 2 protectors you must proceed as follows (Pic 11). - Positioning of the slides in the way, that the punctures A, B, C agree exactly with the measuring rods A, B, C and press up to the complete linking. - position the upper protector so, that the punctures D - E agree exactly with the subordinate ones. - to tighten the screws up to the blocking of the protector - proceed in the same way fixing of the lower protector with the punctures R - S Seite 6
ELECTRIC SUPPLY The machine is connected through a cord onto the electric net. Onto this cord a coupler 10:16A (Pic 4- 5) must be mounted, which corresponds to the norms of the EU-states and is compatible to the machines connection socket. Between socket and the tension net do not employ reduction couplers or temporary couplers. SET UP OF MACHINE The socket must be easy attainable without displacement of the machine. The distance between machine and socket must be so small that the cord (Bild 6) is not tense. In addition the machine must not stand on the cord. The machine is provided with the following command appliances and pilot lights: Black ON/OFF counter CONTROL UNITS To switch on: press the black counter after above, the machine is ready. USE FOR THE SHAPING OF THE PANES After the machine is turned on with the black press button and the two role pairs are set in motion, the working phase begins. To flatten before the introduction to the aperture of the upper protector 2, the slightly floured and risen dough balls (4-6 hrs.) at a place of the edge, to simplify the gliding around between the upper roles.3 After this throughput a first reduction to the S thickness got the dough occupied and an oval form. The recommended regulations have pointing out character since they must be tried out for following qualities: State, weight, thickness, size and form of dough. The machine is equipped with fitting regulations for pizze of middle weight. REGULATION OF THE DOUGH THICKNESS IMPORTANT: All regulations must be carried out with disconnected machine. In order to satisfy the different needs, several dough thicknesses can be tuned at the machine. Turn the levers A - C (Pic 7), resp. A - B (Pic 8) into position I - VI, whose releasing is attained through drawing of the black button. When a smaller thickness is required ( - ) turn clockwise.For a bigger thickness (+) turn against the clockwise. In order to receive best results it recommends, to stop the regulations differently. For instance A levers in position of IV levers resp B levers in Position II CAUTION: In order to avoid the fraying of the dough only pass through once the two role pairs. SHAPING REGULATION (Mod. Ø 30,40) In order to receive a round pane 6 (Pic. 8) , it is indispensably to adjust the sensitivity of the scale (Arm G + small scale F) to the different weights of the dough, so it turns itself uniformly between the lower roles before the entry around 90° . REGULATION OF THE SCALE With this regulation the speed of the throughput of the dough is controlled. After loosening of the blocking-screw one can shift the counterpoise of G along the arm, and calibrate the scale through that. For example strong Sensibility: adjusting the counterpoise to the inner arm – Recommended for small dough weight. small Sensibility: adjusting the counterpoise after outside – suitable for high weight CAUTION: Make sure that the small scale is always in resting position in upper position. REGULATION OF THE SMALL SCALE This regulation varies the rotation rate of the dough. By swivelling of the blocking screw it is possible to change the position of the counterpoise F according to the sensitivity. This happens through engagements into one of the 3 punctures. For example: strong Sensitivity - small dough weight -> inner puncture medium Sensitivity - medium dough weight -> middle puncture small Sensitivity - high dough weight -> outer puncture. After regulation of counterpoise blocking with screw again. Caution ! Pulling the coupler before any maintenance operations, including cleaning. For the case, that the machine badly or not at all functions, one should turn to the manufacturer (see chapter 7). Seite 10
CLEANING in view of the hygienic rules and the general functioning of the machine, the cleaning must be carried out after every use. Removing flour and dough residues with the aid of a suitable pencil. Taking the two protectors, the small scale (030,40), and the two chutes from their position (Pic 10,11) To loosen the two N springs then, the dough stripper plates of P - Q to pull out, and to swivel the adjustment levers in position VI of the biggest role aperture K. The machine and all components, also the dissolved ones, to be cleaned with a cloth or sponge and soap water. Avoid metal sponges, scrub detergents or corrosive solvents that could attack or damage the components from hygienic viewpoint. To rinse with clear water and to abrade with a tender cloth dryly. Mounting the dough stripper plates, springs, chutes and the protector in the same precedence. Make sure, that all components are attached in the correct position (Pic 10,11). Seite 11

Claims, that emerge later are also to be announced immediately in writing, this at the latest within the legal warranty time period. If the customer refrains from the immediate defect- signalling, the product is regarded so as being approved of. The customer has the immediate occasion to give to us the check of the state of the device on site. b) The guarantee occurs fundamentally through improvement. Price reduction claims come only then to the effect, if we have agreed explicitly in writing. c) We provide guarantee for all devices supplied by us - except for used merchandise, for which we do not take over any guarantee - this within 6 months from actual delivery of the product at the Customers. Within this period of time we render full material replacement. Freight and wrapping costs and/or way time and ride costs are charged by us in any case. d) We only guarantee, that within proper connection to the prescribed tension as well as at perfect voltage ratios, correct service as well as installed in conformity to regulations, from which Operating manual clear maintenance, expert installation through a licensed electrician the usually presupposed or explicitly guaranteed services and functions are filled. Notes on safety 1.) Read the device operating manual exactly before initiation and consider ! 2.) All maintenance and cleaning jobs to be carried out only at switched off device (Main power switch on „0). 3.) Service of the device only of trained personnel. 4.) Putting main power switches on „0" also in case of stoppages. 5.) All repair jobs (in particular with electric troubles) may be carried out only by specialists at the machine. 6.) Use only accessories and attachments which are indicated in the operating manual. The use of other accessories can mean a danger for you. 7.) This device is exclusively for the preparation of Suitable doughs and masses. Case of fault power- and/or. gas pipe supply to be interrupted through main power switches (or for example protection, etc power plug.). Do not start device under no circumstances again if device or incoming lines show damages or the reason for malfunction is unclear. In this case the device must not be used before after an inspection through a professional service again. Hot oil (for example near deep fat fryers) not to temper with water. Seite 16
