Most of the water on Islay is brown, even the water in the burns is brown, and winter gales drive salt spray far inland, and this saturates the peat, which is dried again by the briny, sea weedy breeze. All these characteristics go into the whiskies of Islay. WHISKIES Highland £ Single Malt from the Highlands takes on many shapes and forms. Typically, single malt from the region is put into four sub regions, named for the cardinal compass points. To the north there are big bodied single malts, with cereal sweetness and richness. Toward the south there are lighter, fruitier whiskies with a definite dryness. To the east there are some full-bodied, dry whiskies with lots of fruit and pungency. The Western Highlands offer full body and real power with peaty, smoky overtones, nearer the coast there are some more maritime flavoured whiskies too. Cocktails Fizz £ KIR ROYALE 16 Laurent Perrier Champagne with Crème de cassis blackcurrant liqueur. APEROL SPRITZ 10.5 The perfect companion to a summer’s day. Made with Italy’s No.1 aperitif, Aperol. Created in Italy in 1919, its low alcohol content and distinctive orange and rhubarb-root ingredients make it a classic Italian sparkling cocktail that stands out. Served in an ‘orangery wine glass’ over ice, topped with soda and garnished with a slice of orange. PEACH BELLINI 9 Invented between 1934-1938 by Giuseppe Cipriani, founder of Harry’s Bar in Venice, Italy. Peach puree, served in a flute topped with Prosecco. Martini MARGARITA 9 Patron Silver tequila, Cointreau and lime juice. Shaken over ice and served as you like it. ESPRESSO MARTINI 9 Once called ‘the stimulant’ at The Pharmacy in 1990’s Notting Hill. Absolut Vanilla vodka, Tia Maria, espresso. Shaken to froth and garnished with coffee beans. FRENCH MARTINI 9.5 Premium vodka, Chambord black raspberry liqueur and pineapple juice. Shaken over ice, garnished with a raspberry. PASSION FRUIT MARTINI 10 Absolut Vanilla vodka, passion fruit syrup, fresh passion fruit. Shaken over ice, garnished with fresh passion fruit and sparkling wine on the side. GRASSHOPPER 8 This cocktail is like a chocolate after dinner mint in a glass. If you want to skip dessert, go straight for the grasshopper. Crème de cacao, crème de menthe, fresh cream, shaken over ice. Cocktails £ Tall CLASSIC MOJITO 9 Havana, Cuba, is the birthplace of the Mojito, although the exact origin of this classic cocktail is the subject of debate. One story traces the Mojito to a similar 16th century drink known as “El Draque”, after Sir Francis Drake. MANGO MOJITO 9 We took one of the most popular fruits to relish, and turned it into a Mojito. Made with Bacardi Blanca, mango, fresh mint and sugar syrup. Served over crushed ice, garnished with mint and topped with soda. TOM COLLINS 9.5 Served in a Collins glass over ice, we use Spa Hotel London dry gin, fresh lemon and soda served over ice. PASSIONATELY PINK 9 Aperol, Bosford Rose gin, passionfruit syrup, apple juice, garnished with fresh raspberries. Rocks RASPBERRY BRAMBLE 9 Spa Hotel London dry gin, Chambord, lemon, sugar syrup, served over crushed ice, garnished with a fresh raspberry. WHITE RUSSIAN 9 Vodka, coffee liquor and milk, made on the rocks poured over ice. OLD FASHIONED 8 The first use of the name “Old Fashioned” for a Bourbon whiskey cocktail was said to have been at the Pendennis Club, a gentlemen’s club founded in 1881 in Louisville, Kentucky. In this case we use Woodford Reserve, with sugar syrup, bitters and ice stirred with fresh orange. SOUR 8 This tangy cocktail is perfect for night or day, choose from Amaretto, whisky, midori sour, all served with lemon and sugar syrup. Served over Ice. Egg white optional. Mocktails VIRGIN MOJITO 6 A renowned refreshing ‘mocktail’ made without the alcohol this time. Apple juice, mint, lime and sugar syrup. Topped with soda and garnished with mint. VIRGIN RASPBERRY BRAMBLE 6 Raspberries, squeezed lemon juice, sugar syrup, topped with soda and garnished with fresh raspberries. LEMANGO SPRITZ 6 Mango syrup, Lemon syrup, freshly squeezed lemon, topped with soda.
