THE SPA HOTEL, HALLGARTEN DRUITT & EWGA WINES PARTNERSHIP We have worked closely with our wine partners Hallgarten Druitt & EWGA wines to ensure that we have created a wine list that is balanced, versatile and that will enhance your dining experience in our 2 Rosette Orangery. Our wine list will offer you an exciting mixture of high quality wines from around the globe, offering a balance of classic wines alongside some hidden gems. Throughout this list you will find some of the world’s great wine and champagne growers; Laurent-Perrier from France, Saint Clair from New Zealand, San Marzano from Italy to name just a few. Alongside such prestigious producers we also work closely with less well- known wineries and featured in this wine list are some superb and unique wines. We feel the selection of wines available complement the excellent food offering at The Spa Hotel and showcases the quality and diversity of the Hallgarten Druitt & EWGA portfolio’s and most importantly offers distinctive wines that taste great. The House of Laurent-Perrier was established in 1812 and is located in the heart of the Champagne region at Tours-sur-Marne. Owned by the Nonancourt family it remains the largest independent ‘Grande Marque’ Champagne House. Careful selection of grapes, full attention to all stages of the winemaking process and ageing of each wine according to its needs, are the requisites for the development of the individual character of each and every wine. CHAMPAGNE (125ml) £ (175ml) £ (250ml) £ (Btl) £ 1. Laurent-Perrier Brut NV 13 70 Delicate and complex nose, full flavour with plenty of fruit in the mouth with a good balance and long length. 2. Laurent-Perrier Ultra Brut 95 Made without the addition of the sugar dosage found in most champagnes, this delicate champagne is crisp and dry with mineral notes 3. Laurent-Perrier Cuvée Rosé 19 98 Made from 100% Pinot Noir, this is clean and wonderfully fresh with a suppleness on the palate and a lingering finish. 4. Laurent-Perrier Brut Millésimé, 2008 90 White gold in colour with a fine sparkle. The nose displays both mineral and chalky notes giving way to elegant grapefruit and white fruit aromas. 5. Laurent-Perrier Demi-Sec, Harmony 75 Rounded and delicate, thanks to a high proportion of Chardonnay and a well-balanced dosage. 6. Laurent-Perrier Grand Siècle 230 Honeyed, nutty aromas with hints of almonds and freshly baked brioche. Round and rich, with an amazing combination of complex elegance and power. SPARKLING (125ml) £ (175ml) £ (250ml) £ (Btl) £ 7. Favola, Prosecco Brut DOC, Veneto, Italy 6 30 A fresh, fragrant and fruit Prosecco with aromas of pear and apple. On the palate it is off-dry and lively with an attractively crisp finish. 8. Sacchetto Prosecco Rosé Brut, Veneto, Italy, 2020 7 34 A refreshing blush pink sparkling rosé with appealing floral aromas and appealing strawberry fruits, supported by light, soft bubbles. 9. Goring Estate, Goring Brut NV, Sussex, England 50 An elegant, complex English sparkling wine combining a youthful purity of fruit with subtle toasty, nutty notes.

Les Boules Blanc, Pay d’oc, France, 2019 4.6 6.3 8.6 23 This Southern French blend is very French, with its floral and citrus notes, it is unpretentious and easy-drinking. 11. Sacchetto Pinot Grigio, Venezie, Italy, 2019 5 6.9 9.6 26 A fresh, fruity and dry Pinot Grigio with aromas of apple and exotic fruits, a luscious texture and a moreish hint of bitter lemon on the finish. 12. Chéreau Carré Muscadet de Sèvre et Maine Sur Lie ‘La Griffe’, 33 Loire Valley, France, 2019 A pure wine delivering delicate citrus fruit and floral aromas with notes of green apples. Refreshing, with crisp acidity and a bright minerality on the palate, through to a lemony hint on the finish. 13. Mesta Organic, Uclés, Verdejo, Spain, 2019 28 A crisp, aromatic wine, showing great purity of aromas and a precise expression of the Verdejo variety. Fresh notes of grass, fennel and white pepper lead to a dry and refreshing palate, with excellent balance and a persistent finish with a subtle hint of minerality. 14. Domaine de L’Elite Mâcon Villages, Burgundy, France, 2017 45 An easy-drinking Mâcon, showing an aromatic and floral nose with citrus overtones. Creamy and textured on the full, but beautifully balanced palate, with refreshing notes of pear, peach and apricot on the palate through to a clean and rounded finish. 15. La Forge Viognier, France, 2018 34 Bright pale gold in colour. Very elegant aromas with notes of stone fruits and tropical fruits combined with a slight hint of toast and oak. Rich and full-bodied, this creamy Viognier reveals intense stone fruits aromas such as peach and apricots. 16. San Silvestro, Gavi del Commune di Gavi DOCG ‘Fossili, 41 Italy, 2019 This crisp white wine shows incredible mineral, zesty citrus and floral notes, with a hint of spice and characteristics hints of bitter almond. Prominent mineral characters linger on the long and precise finish. 17. Rioja Blanco, Bodegas Ugarte, Spain, 2019 6 7.9 11.1 30 Ripe white fruit, zesty with delicate herbaceous notes, rich and velvety flavours, very expressive, fresh sensations, delightfully smooth on the palate.

Pazo do Mar, ‘Coral do Mar’, Rías Baixas, Albariño, Spain, 2019 39 This estate grown and bottled Albariño shows typical stone fruit and citrus characters as well as tropical notes, all held together by a crisp backbone of clean, fresh acidity. 19. Domaine Grand roche, Chablis, Burgundy, France, 2018 55 Fresh, bright aromas of citrus fruit and floral notes are elegantly enveloped in subtle, smoky mineral notes. Crisp on the palate, with refreshing, vibrant white fruits complemented by a hint of butter, good structure through to a dry finish. 20. Domaine Gérard Millet Sancerre, Loire Valley, France, 2019 49 An elegant Sancerre, with vibrant Sauvignon notes of grapefruit and lemon, good weight and a clean crisp finish. 21. Soave, Torre dei Vescovi, DOC Vincenza, Italy, 2018 29 Straw yellow colour. Delicate with notes of white flowers. Pleasant bitter taste with a medium body and proper acidity. 22. Domaine Ferrand, Pouilly Fuissé, Burgundy, France, 2017 62 A rich, complex wine with aromas of exotic fruit complemented by subtle hints of vanilla. The palate is round and buttery with ripe apricot flavours enveloped in delicate oak nuances through to a long finish. 23. Weingut Villa Gutenberg, Johannisberger Erntebringer 35 Riesling Kabinett, Rheingau, Germany, 2019 A heady sensation of apple, pear, sweet peach and honey on the nose, leads to a perfectly balanced ‘sweet and sour’ palate of floral and citrus notes with a delightful, lingering finish. 24. Château de Tracy, Pouilly Fumé, Loire Valley, France, 2019 65 Complex nose of blackcurrants, boxwood and subtle hints of tarragon, followed by lemon and exotic fruits all underpinned by minerality. The palate is tangy and fresh with a lovely richness echoing the fruit flavours found on the nose. Very elegant with a long, complex finish. 25. Domaine Marc Morey, St Aubin 1er Cru Le Charmois, 85 Burgundy, France, 2018 Complex aromas of lemon peel combined with orange, vanilla and just a hint of smokiness, lead to a full bodied texture and the citrus characters which are echoed on the palate. Abundant minerality and a fresh acidity keep the palate lively, followed by a clean finish with elegant, buttery elements. 26. Domaine René Monnier, Puligny Montrachet 1er 125 Cru Les Folatières, Burgundy, France, 2017 The site enjoys excellent sun exposure and warmer temperatures, producing aromas of dried yellow fruit, white flowers, citrus and acacia flowers. This wine is a classic expression of terroir, fully concentrated and savoury, with refreshing acidity and a mineral backbone.

Bishops Leap, Sauvignon Blanc, 6 7.9 11.1 31 Marlborough, New Zealand, 2019 A full and crisp wine with intense aromas and flavours of passion fruit, underlying gooseberry and herbal tones. Mouth-watering acidity is balanced by a full flavoured palate that leads to a long lingering finish. 28. Head Over Heels, Chardonnay, 5.4 7.3 10.3 28 South Eastern Australia, 2019 Delicious fruit driven wine showing aromas of candied citrus fruits, pear drop and ripe melon flavours. 29. Tierra Antica Sauvignon Blanc, Central Valley, Chile, 2019 24 Vibrant herbaceous characters. Bright refreshing acidity and a hint of salty minerality on the long finish. 30. Berton Vineyard Metal Label Vermentino, 33 South East Australia, 2019 Quintessential Vermentino, this has a delicate pale lime colour with silver hues with bright aromas of green apple and lemon sherbet. Crisp and fruity palate with lush flavours of lime, pineapple and honeydew melon enhanced by delicate minerality. 31. Swartland Winery, Founders Chenin Blanc, 5 6.9 9.6 26 Perdeberg, South Africa, 2020 An expressive Chenin Blanc, showing vibrant aromas of ripe passion fruit, guava and pineapple, underpinned by refreshing citrus notes. Well balanced with a full, fruity palate and a refreshing minerality on the finish. 32. Saint Clair, Riesling, Marlborough, New Zealand, 2019 41 Fragrant notes of Kaffir lime and mandarin are layered with hints of orange blossom and beeswax. On the palate, distinct minerality and fresh citrus flavours of juicy mandarin, lead to a crisp mid-palate with delicate sweetness and a smooth, off-dry finish. 33. New hall, Bacchus, Essex, England, 2019 39 From the oldest plantation of Bacchus in England, this wine displays intense aromas of elderflower, red apple and melon. Refreshing on the palate, with green pepper and passion fruit notes and a refreshing minerality. 34. Lake Chalice ‘The Nest’, Pinot Gris, Marlborough, New Zealand, 2018 40 Aromas of freshly cut pear, citrus undertones. Beautifully balanced palate, layers of pear, honeycomb and a touch of sweet pastry to finish.
Rose Wines (125ml) £ (175ml) £ (250ml) £ (Btl) £ Old World 35. Les Boules Rose, Pay d’oc, France, 2019 4.6 6.3 8.6 23 This pale salmon pink rosé shows fruity aromas of grenadine and vibrant red fruits followed by a round and fresh finish. 36. Mesta Organic Rosé, Uclés, Tempranillo, Spain, 2019 26 Pale strawberry in colour, with fresh berry aromas and subtle floral notes, this shows excellent fruit concentration on the palate. A slightly off-dry finish is beautifully balanced by a crisp acidity and a refreshing, savoury note. New World 37. Discovery Beach, Zinfandel Rose, California, USA 5 6.9 9.6 26 Ripe watermelon, strawberry and cherry flavours in this ever popular sweeter style of rose. 38. Saint Clair, Pinot Gris Rose, Marlborough, 35 New Zealand, 2019 Pale watermelon blush in colour, this is a refreshing rosé with aromatic pink grapefruit, summer berries and lemon blossom on the nose. It is beautifully balanced, with a juicy palate of ripe watermelon, nashi pear and pink grapefruit flavours.

Les Boules Rouge, Pays d’oc, France, 2019 4.6 6.3 8.6 23 A beautifully balanced wine, this has the refreshing zing of good Beaujolais allied to the chunkiness of a southern French blend. 40. Colli Vicentini Merlot, Veneto, Italy, 2018 4.6 6.3 8.6 23 Ruby red in colour with complex and intense aromas with elegant notes of ripe red fruit, spice and vanilla hints. Smooth, elegant taste with good structure and full body. 41. Bove Montepulciano d’Abruzzo DOC ‘Avegiano’, 32 Abruzzo, Italy, 2016 Generous aromas of red berries, wild strawberries and delicate hints of oak and liquorice are echoed on the palate. A soft and approachable style of wine, which is well structured and beautifully balanced. 42. La Forge, Carignan, Pays d’Oc, France, 2018 34 Intense deep purple colour with ruby red tints. At first spices and blackberry, the second nose develops wood and cocoa aromas finishing on toasted oak notes. Full-bodied rich and mellow with velvety tannins. Complex flavours on the middle palate, liquorice flavours on the finish. Long lasting. 43. Cantine San Marzano, Primitivo Salento IGP ‘ll Pumo’, 28 Puglia, Italy, 2019 An intense aroma of plum, cherry and spice, with hints of rosemary and vanilla. A full-bodied wine, yet soft and balanced, full of ripe fruit flavours in an easy drinking style. 44. Bodegas Ondarre, ‘Rivallana’ Crianza, Rioja, Spain, 2017 6 7.9 11.1 31 Spicy fruit aromas are complemented by subtle notes of vanilla from oak ageing. Savoury and ripe fruit flavours combine on the palate resulting in a traditional Rioja style. 45. Bonacchi Chianti Riserva DOCG, Tuscany, Italy, 2016 34 A traditional Chianti showing aromas of cherry fruit, blackberry, blackcurrant and red fruits with hints of vanilla. The palate is full and velvety, with harmonious balance through to a long, enveloping finish. 46. Château Lestrille, Le Secret de Lestrille, Bordeaux, France, 2015 61 A rich, powerful wine with a beautiful balance between roasted aromas and intense black fruit flavours. Structured, it has velvety tannins and well integrated oak, complemented by complex dark berry flavours, hints of cigar box and a smooth, elegant finish. 47. Casa del Valle, El Tidon Tinto, 24 Cabernet Sauvignon tempranillo, Castilla, Spain, 2018 Warm, earthy and mellow aromas with spice and ripe blackberry fruit with toasted wood in the background. Fruity and smooth.

Carlo V, Cabernet Sauvignon Merlot, Veneto, Italy, 2015 36 Complex and intense with elegant notes of ripe fruit, with hints of vanilla and spice. Smooth and elegant with good structure and full body. 49. Domaine Pierre Naigeon, 130 Gevrey Chambertin Vieilles Vignes, Burgundy, France, 2016 Alluring raspberry and cherry with notes of dried fruits on the nose. Medium to full bodied with a little earthiness, this well structured wine shows balanced oak, with fine ripe tannins. Silky and smooth on the palate this is classically elegant. 50. Ca’Rugate, Valpolicella Ripasso Superiore DOC, Veneto, Italy, 2017 48 Dry and velvety with an intense bouquet and a supple, lingering finish. 51. Olivier Ravier, Fleurie, Beaujolais, France, 2019 43 Quintessential Fleurie with subtle floral aromas surrounding a core of deep red fruits. The palate is full of finesse, with a rich and silky texture and an attractive hint of bitter cocoa on the finish. 52. Roccolo Grassi Amarone DOCG, Veneto, Italy, 2015 148 A rich and opulent wine, showing intense aromas of ripe dark berried fruits with a hint of bitter almond. Beautifully concentrated deep fruits are layered with nuances of elegant oak and savoury notes, through to a smooth palate, with supple tannins and a fine, lingering finish. 53. Bodegas Ondarre, Ondarre Gran Reserva, Rioja, Spain, 2011 46 The complex and mature bouquet offers rich fruit aromas, along with hints of spice and notes of raisined fruit layered with tobacco and leather. Elegant and velvety, this is classic Gran Reserva Rioja. 54. San Silvestro, Barolo DOCG ‘Patres’, Piedmont. Italy, 2016 62 A stylish Barolo, with expressive aromas of dried fruit, roses and tar. The deep fruits are layered with minerality on the smooth and mouth-filling palate and sweet tannins weave through to a very long, elegant finish. 55. Domaine de la Solitude, Châteauneuf-du-Pape Rouge 70 Rhône Valley, France, 2017 A rich and opulent wine with ripe blackcurrant aromas layered with notes of the garrigue and cistus flowers. Full bodied but with a soft texture on the palate, with ripe fruits that combine with notes of cocoa and cherry and a hint of liquorice on the finish. 56. Château Pichon Baron, 2eme cru classe, Pauillac, France, 2011 195 A lovely, lightly perfumed nose with the appealing fruit aromas of blackcurrant and notes of cedar, Minerally, gravel and violets. The fruit in the mouth is forward and surprisingly powerful.

Head Over Heels Shiraz, South Eastern Australia, 2020 5.4 7.3 10.3 28 A generous and concentrated palate offers flavours of blackberry, black cherry and plum. Complex oak character of coffee, vanilla and caramel complement the full fruit flavours and create a long rich and satisfying finish. 58. Viña Edmara, Casablanca, Pinot Noir, Chile, 2018 5.4 7.3 10.3 28 A stylish and cool climate style Pinot Noir with smoky cherry and strawberry fruit enhanced by vanilla notes. 59. Doña Paula, Lujan de Cuyo, Malbec, Argentina, 2019 6 7.9 11.1 30 A full flavoured Malbec with sweet, spicy and intense aromas of ripe red fruits through a soft and velvety palate with a rich finish of tarragon and rosemary. 60. Ernst Gouws & Co, Pinotage, Stellenbosch, 40 South Africa, 2018 Distinctively rich ruby in colour, with bold aromatics of dark chocolate, stewed fruit and spice with a fresh and silky finish. 61. Saddle Creek, Shiraz Cabernet, 26 South East Australia, 2018 Smooth with coffee and cedar notes - a classically styled Bordeaux from this esteemed estate in St Julien. 62. Raymond Vineyards, ‘R Collection’, 55 Cabernet Sauvignon, California, USA, 2019 Rich in flavour with aromas of dark red fruits, blackcurrant and vanilla notes combined with a touch of clove. 63. Las Perdices, Syrah Viognier, Argentina, 2017 36 Ruby red in colour, complex aromas of cherries and blueberries followed up by the subtle fragrance of apricot and white peach. On the palate, it shows all of its potential; smooth, round, meaty and flavourful.
Dessert Wines & Fortified Wines (50ml) (50ml) £ (Btl) £ 64. Michele Chiarlo, Moscato d’asti DOCG ‘Nivole’, Piedmont, Italy 27 A rich, delicate and well-balanced dessert wine from the Muscat grape. Gently sparkling, the fruit dances lightly on the tongue. 65. Ca’Rugate Recioto della Valpolicalla DOC L’Eremita, Veneto, Italy 7.5 54 Dark intense ruby red in colour. On the nose it shows black fruit and berry notes, with hints of wild herbs and spice. The palate is sweet, luscious, rounded and balanced by velvety tannins. 66. Quady, Essensia Orange Muscat, California, USA 4.4 26 Vibrant orange in colour, this wine delivers luscious sweet oranges and apricots on the palate. The bittersweet orange marmalade notes balance well with the zesty citric acidity. 67. Saint Clair Awatere Valley Reserve Noble Riesling, 5.5 38 Marlborough, New Zealand The palate has a luscious texture and notes of pear and stone fruit with a long lingering honey and lemon zesty finish. 68. Quady, Starboard Batch 88, California, USA 4.3 50 Rich and spicy, port-like wine with luscious ripe blackberry, raisin and chocolate truffle flavours on the palate and a fine acidity and soft tannins. 69. Barros Late Bottled Vintage, Douro Valley, Portugal 4.9 60 Aromas of fresh mint and orange peel with a richly sweet palate backed by a honeyed finish. “A taste of sunshine”. 70. Barros Colheita 1996, Douro Valley, Portugal 7.2 87 Rich and spicy, Port-like wine, with concentration and character, with deep plum and violet hues and luscious ripe raisin and chocolate flavours on the palate. 71. Barros Colheita 20 Year Tawny, Portugal 11 100 Rich and complex combination of dried fruits, spices and subtle hints of wood. Elegant, well-structured and full-bodied, with a long and engaging finish.
