Art Gina Eggers, #3732 The Perfect Summer Lunch... And the Perfect Pita In early May, Mark and I took a camping trip to South Dakota’s Black Hills. The campgrounds there reopened on May 2nd, but without facilities. We figured Pita Bread we could isolate at home or isolate in our Airstream. The weather was cold, but the roads were deserted and the people few and far between. There wasn’t 14 oz. flour (bread flour or all-purpose or wheat is fine anything open, and when we ran out of bread, the first thing that came to mind too). This is about 2 ½ cups that can be made in a few hours is pita bread. If you’ve not made bread before, 1 package instant yeast (Red Star is my favorite) or 2 ¼ tsps. the versatile and easy pita is multi-useful. You can use it to dip into a meal with 10 oz. water (room temperature) a sauce. You can split it and make sandwiches. You can slather it with hummus, 1 T honey which I can make into a meal all by itself. Leftover or stale pitas can be made A good glug of olive oil (about 1 oz.) into a delicious snack chip. Split them in half (top half from bottom half), then cut 1 ¼ tsp. salt them into wedges. Place the wedges on a cookie sheet. Brush with olive oil and 1. Mix everything together except the salt, mixing until sprinkle with a dried Parmesan garlic seasoning. (My favorite is Johnny’s. It’s well combined. Let sit for 15 minutes, then add the salt dried Parmesan with garlic and seasonings for garlic bread in a shakable plastic and knead with your hands in the bowl for 5 minutes. To container.) Bake the wedges in a 350 degree oven until they crisp up and start knead, pull up one side of the dough and stretch over to turn brown. These are delicious! For the small cost of membership in the Airstream Cub International, we have gained friendships, experienced generosity, and opened our eyes to a warm community of fellow Airstream owners. We are traveling full-time in our Airstream Interstate. We have been planning this portion of our life for a long time. In October of 2018 and 2019, respectively, Connie and I left our careers in the hands of younger and more energetic professionals and set out in our motorhome. We share the same wanderlust, and our journey is open-ended. Prior to leaving our home in St. Paul, Minnesota, we joined the Club. Our plan was to combine stays with Club members, friends from our curling and gymnastics world, and with family along the way. Roughly, heading east, with no timeline. Santa Fe Opera Festival was to have been my 2-month summer concert engagement, but I learned during this trip that it was cancelled. CLUB NEWS Campground closure info was changing daily, but I took a risk. It was a weekday, and Rimrock Lake, off Highway 12, hadn’t yet gotten busy. And since the adjacent true campground was closed, it was “free”. I called the ranger office to confirm. Sadly, its easy proximity to Yakima also meant that it had seen some hard use. I spent one morning’s walk picking up a few bags of trash and recycling from the road. When I left the next day, there were fresh beer cans on that same route. Although I brought my double bass with me, I hadn’t touched it all month. Watching concert after concert disintegrate was demoralizing. Santa Fe Opera’s cancellation was the last nail in that coffin, and even looking at the bass just made me sad. The double bass is a social instrument in a now socially-distant world.
