WHY DOES CITIZEN SALMON

MUCH BETTER?

Buying in small quantities daily enables us to fillet
and blast freeze the fish in an extremely short period
of time. Our fish move from boat to freezer in less
than six hours, while most other companies are
lucky to get their catch in the freezer in less than 48
hours. What this means is that we stop the
degradation process more quickly and therefore
lock in the freshest flavor and higher quality. More
than half of Alaskan wild seafood is shipped to
China for processing, going through multiple cycles
of freezing and thawing that compromise its
integrity and quality.

                 SEAFOOD SUSTAINABLE?
                 We understand that is hard for you to confidently source sustainable seafood. Alaska’s state
                 constitution includes mandates to ensure sustainable fisheries, and many people in Alaska rely
                 on the seafood harvest to feed their families and to earn their living. The long-term survival of
                 their fisheries is something they guard carefully. Aaron and his stewardship-minded family of
                 fishermen help to ensure that their harvest remains sustainable for generations to come. Since
                 Alaska is so vigilant in guaranteeing a sustainable harvest, you might occasionally see a fishery
                 shut down early to ensure sufficient future stocks, especially with shrimp, Copper River salmon
                 and King Salmon.

02              WHAT'S THE DIFFERENCE BETWEEN WILD-CAUGHT
                AND FARMED SALMON?
                There are places in the world where farmed seafood is an ecologically sensible choice.
                However, prized Pacific salmon species are only available from wild-caught stocks. Pacific
                salmon has a color and flavor that farmed Atlantic salmon cannot compare to. Farmed salmon
                are fed cheap food sources such as animal byproducts and are fed carotenoids to turn their
                flesh red artificially. Our wild salmon have grown up eating wild food such as krill that gives a
                Sockeye its brilliant red color naturally. Citizen Salmon Alaska only sells wild Alaskan seafood.

HOW AND WHEN DO THEY
PACKAGE THEIR FISH?
Unlike most Alaskan salmon fisheries (where boats may
be out to sea for days before their catch makes it to a
processor), Aaron’s local small boat fisherman return to
the harbor for processing within 5-6 hours of the catch,
where the fish are filleted and blast-frozen in small
batches immediately to lock in freshness at its peak
flavor. Each fish is vacuum-sealed in a protective shrink-
wrap for freshness.

Citizen Salmon Alaska does more than salmon! They
currently fish a variety of wild Alaskan fish -- including
sockeye salmon, king salmon, halibut, Alaskan side-
stripe shrimp with roe, yellow-eye rockfish, scallops, and
Alaskan king crab colossal. These fish become available
at different times throughout the season.

 03              HOW DO I ORDER FISH FROM CITIZEN SALMON?
                 WHAT SIZE ARE THE PORTIONS? HOW DOES IT WORK?

 Orders are made “a la carte” -- no subscriptions! You get to decide what you want, when you want, and
 Citizen Salmon will ship it directly to your door within a few days.

 Products can be ordered in 5, 10, 20, or 50 lb increments, with a significant savings/pound the more
 you order. Fish come in 6-8 oz. portion sizes, each individually frozen and vacuum-sealed. Shipping is
 built into the cost – so there is no additional charge for shipping. When you order, be sure to use our

DOES YOUR PRICE INCLUDE
SHIPPING COSTS?
Yes, the price of all our products includes FedEx
shipping from Homer, Alaska, to any location in the
continental United States. The fish will arrive frozen
directly to your doorstep, and will remain frozen
until you arrive home that day from work -- even on
hot days. You should place your fish immediately
into a freezer once you receive your package.

 04              WHY DOES YOUR SEAFOOD COST MORE?

                 If you compare Citizen Salmon Alaska’s wild-caught salmon to fillets bought from a big-box
                 store, you will notice that the quality is astronomically better. Our choice fillets are processed
                 locally at the peak of freshness, rather than being processed cheaply internationally. We also
                 pay our family fisherman a premium price above the standard “dock price” that the large
                 processors pay. This helps ensure the livelihood of our local fishing families It also guarantees
                 our selection of their freshest prime catches of the day, right off the dock. The price also
                 reflects the cost of shipping built in!

05              HOW MUCH FISH SHOULD I ORDER?

                On average, if two people eat once per week then you will need about 50 pounds a year.

HOW IS THE FISH PACKED FOR
SHIPPING?
After the fish is blast frozen, it remains in a freezer for 3
days to make sure it is rock solid, before it is shipped to
customers. All orders are shipped overnight via FedEx
from Homer, Alaska. Your order is packed in an
insulated Styrofoam box, with freezer packs, to make
sure it remains frozen for the entire journey.

 06               WHAT IF IT'S HOT OUTSIDE, AND I DON'T GET HOME UNTIL
                  LATE. WILL MY PACKAGE STILL BE ALLRIGHT?

                  Yes. Your fish is packaged for a 24 hour journey, and the Styrofoam/ice packs will be able
                  to handle this situation. As long as you retrieve your package the same day it arrives, your
                  fish should still be frozen. You should consider your traveling plans before ordering your
                  fish, to make sure you will be home the day it arrives.

 07               WHAT HAPPENS IF THERE'S A PROBLEM WITH SHIPPING?

                  Citizen Salmon has a 100% guarantee. If your order arrives in less than perfect condition,
                  they will get another box on its way as soon as possible to replace it. Please photograph
                  and email Aaron pictures of the compromised product immediately (to
                  citizensalmon1@gmail.com), so they can get you a replacement product.

 08               IS MY ORDER SHIPPED IMMEDIATELY?

                  Not necessarily. It may take a few days from the time of your order for Citizen Salmon
                  Alaska to ship it. Aaron has allotted specific days of the week as his “shipping days.”
                  Usually he ships twice per week. (So don’t be alarmed if your fish doesn’t arrive the day
                  after you order).

09             COULD WE DO A GROUP ORDER TO GET A BULK COST SAVINGS?

               Yes! Shared Legacy Farms didn’t have the freezer space to store a large group order and
               then distribute it to all our members. Instead, we opted to allow you to order the product
               yourself and have it be shipped directly to your home.

               To get that awesome price savings for a large order, feel free to partner up with other
               members of our CSA (or friends/neighbors/family) and organize a small group order. Talk
               in our Facebook group (or your friends and neighbors) and find people to collaborate
               with. If you choose this option, remember that one of you would have to place the large
               order and pre-pay, and you would be responsible for collecting the payment from your
               partner CSA members on your own, as well as distributing it once it arrives. Don’t forget to

10             IS YOUR FISH SUSHI GRADE?

HOW MUCH ROOM WILL 10
LBS. OF FISH TAKE UP IN MY
FREEZER?
About 1 1/2 ft.³ of space. We always recommend people
purchase a small chest freezer because there is a huge
savings by ordering a 50-pound box of fish. The savings
alone will pay for a small 5 to 7 cubic foot freezer that
you can keep in your garage or basement.

 11              DO THE SALMON HAVE PIN BONES?

                 Yes. Properly pulling pin bones without damaging the texture of the raw flesh requires
                 the salmon to remain refrigerated for 2 to 3 days for the flesh to soften without tearing.
                 We prefer to keep the fillets in their natural and beautiful state and preserve the freshness
                 as much possible. Removing pin bones after your fish is thawed or after it is cooked is very
                 simple. Here in Alaska, we always keep the pin bones intact and remove them after
                 cooking. They are soft and flexible and easy to remove and will not harm you if you
                 accidentally eat them.

12              HOW LONG WILL FISH LAST IN MY FREEZER?

                A dedicated chest freezer is the best way to store any frozen product as it stays much
                colder. In the chest freezer fish will be good for 12 to 18 months. A typical kitchen freezer
                ensures 6 to 8 months of quality product. In Alaska we will take out unused salmon out of
                the freezer after a year to smoke or can it for future use so nothing goes to waste.

HOW CLEAN ARE THE WATERS
WHERE THEY FISH?

From hazardous waste clean-up drills to advocacy for
our fishery, Citizen Salmon fishermen are extremely
stewardship-minded and treasure their pristine waters.
Their fishing waters are fed by a variety of fresh water
sources such as mountain streams, snow and glacier
run-off.

                 To help you plan out your shopping needs, the wild-caught Alaska fishing season follows
                 this schedule. Some varieties may sell out due to popularity.

                 Halibut  ⇒ March 6th- November 15th
                 Spot Shrimp ⇒ April 15-29th
                 Copper River Reds ⇒ May 15-June 15th
                 Sockeye, King Salmon ⇒ June 21- July 31st
                 Silver Salmon ⇒ July 20th- September 1st
