The Vasse homeowners currently have chillies, sage, parsley, basil and gourmet edible garnishes growing. See page 15 for a summer inspired recipe. Social Gatherings The Vantage at Vasse homeowners regularly get together on the grassed area adjacent to the Clubhouse construction area. It’s BYO chair, drinks and nibbles. At this event pictured, Lynn’s homemade Salmon dip was sensational! Safe Travels A lot of our homeowners’ have been off enjoying their lives travelling around our beautiful state, Julie & Pete included. On their return to Vasse, Pete cleaned the caravan while Julie made a mad dash to the hairdresser, now both caravan and Julie look a million bucks. 9

Summer Recipe Haloumi, pomegranate and rocket salad Ingredients Method Preheat oven to 180C. Line a baking tray with 1/2 cup (50g) walnut halves baking paper. Scatter walnuts over the tray 1 tablespoon honey and drizzle with honey. Bake for 5-7 minutes 2 tablespoons pomegranate molasses or until walnuts caramelise. Remove from 1 tablespoon lemon juice oven and set aside to cool. 2 teaspoons Dijon mustard Combine the pomegranate molasses, lemon 1/4 cup (60ml) extra virgin olive oil juice, mustard and 2 tbs oil in a screw-top jar 180g pkt Lemnos haloumi, cut in half and shake until well combined. Season with lengthways and thinly sliced salt and pepper. 1 bunch rocket, leaves coarsely torn Heat the remaining oil in a large frying 50g baby spinach leaves pan over high heat. Add the haloumi; cook, 1 pomegranate, seeded turning, for 2 minutes or until golden brown and heated through. Remove from heat. Combine rocket and spinach in a large bowl. Drizzle with dressing and gently toss to combine. Arrange on serving plates. Top with haloumi and walnuts and sprinkle with pomegranate seeds. Serve immediately.
