Garden to Table Kotare classes and Korimako Lewis had a challenge this week; three dishes to cook during the session with a brunch theme. They used our school-grown potatoes to make their own Hash Browns, a crunchy Coleslaw with our own cabbages, carrots and homemade Egg Mayonnaise and the newest hit of Garden to Table; Baked Beans. There were admittedly a few reluctant faces when we mentioned baked beans but making their own was a delicious win as we used tinned tomatoes, onions and spices to create a delicious, moreish sauce. We really enjoyed being out in the warm winter sunshine in the garden this week. We took advantage of the good weather to do some bigger jobs; pruning and fertilising fruit trees, weeding out the greenhouse, clearing out the bean and strawberry beds, potting up swan plants and putting up nets to keep the pesky birds off our spinach! It is an important time of year to clear out old crops and put depleted nutrients back into the soil before Spring and the kids have done a great job this week.
