REFLECTIONS Hello Connect Club Friends! Christmas is coming! This has been a long trying year, but it is exciting to know that Christmas is in our future! COOKING WITH THE CONNECT CLUB Mini Meat Loaf Sheet-Pan Meal Ingredients • 2 large eggs, lightly beaten • 1 cup tomato juice • 3/4 cup quick-cooking oats • 1/4 cup finely chopped onion • 1/2 teaspoon salt • 1-1/2 pounds lean ground beef (90% lean) • 1/4 cup ketchup • 3 tablespoons brown sugar • 1 teaspoon prepared mustard • 1/4 teaspoon ground nutmeg • 3 large potatoes, peeled and cut into 1/2-inch pieces • 3 tablespoons olive oil, divided • 1/2 teaspoon garlic salt, divided • 1/4 teaspoon pepper, divided • 1 pound fresh asparagus, trimmed and halved Directions • Preheat oven to 425°. In a large bowl, combine eggs, tomato juice, oats, onion and salt. Add beef; mix lightly but thoroughly. Shape into six 4x2-1/2-in. loaves; place on a sheet pan or large shallow roasting pan. Combine ketchup, brown sugar, mustard and nutmeg; brush over loaves. • Combine potatoes with 2 tablespoons oil, 1/4 teaspoon garlic salt and 1/8 teaspoon pepper; toss to coat. Add to pan in a single layer. Bake 25 minutes. • Combine asparagus with remaining 1 tablespoon oil, 1/4 teaspoon garlic salt and 1/8 teaspoon pepper; toss to coat. Add to pan. Bake until a thermometer inserted into meat loaves reads 160° and vegetables are tender, 15-20 minutes. Let stand 5-10 minutes before serving.

It was very popular among inmates who wrote to Johnny and perhaps that is why he become a very vocal advocate for Prison Reform. His first Prison Concert was at Huntsville State Prison in 1957, a full 10 years before his famous live albums at Folsom Prison (1968) and San Quentin (1969). Most people don’t know those were just two of many prison concerts Johnny Cash played. Show us your conviction, and come party in the Big House. Double PP $1,249 • Single PP $1,499 We will begin our tour with a visit to the National Museum of the US Airforce, the oldest and largest military aviation museum in the world. We will enjoy a Rock N’ Roll party with dinner and a show by BackTraxx. Next up is a special 3-hour Independence & Incarceration Tour featuring Wheeling’s Independence Hall and a visit to WV’s Gothic-looking prison. We will tour the Old West Virginia Penitentiary. Here is where things get really exciting! Our coach will drive through a high arched entrance under the North Guard Tower and into The Yard. We will start the evening with a Jailbird Feast and participate in a costumed Convict & Cop Competition! The Ark & July 11 - 17, 2022 Appalachia This great tour combines America’s largest faith-based attraction, The Ark Encounter, with the arts and music of Appalachia plus the historic grace of the Boone Tavern Hotel. Our days will be filled with both artistic and divine inspiration, while our evenings will be filled with enough live entertainment and southern cooking to have our lips a smackin’ and our toes a-tappin.’ Our journey takes us to the state-of-the-art Creation Museum which brings to life the pages of the bible and a visit to the Ark Encounter that holds jaw-dropping exhibits where you will experience close-up encounters with stunning animals and some life-like recreations from Noah’s day. We will enjoy a visit and tour of Cumberland Falls State Park and a stop near Sterns KY for a ride on the Big South Fork Scenic Railway. The roots of many of country music’s biggest stars can be found along Country Music Highway US 23. Tucked into the hills of Eastern Kentucky is the home of Loretta Lynn. We will travel along US 23 to see a number of amazing superstars and sights.
