The Cooking School Message From the Manager Welcome to the Tops Cooking School! Happy New Year to all! It has been quite a year…however...we are all ready for 2020! My team and I have already begun talking about our Future Chef Summer Camps which you will see advertised in our next calendar. I have been reading your surveys throughout the year and attempting to integrate ideas of classes that you, our customer, would like to see. Please continue to fill out your surveys! We listen! October, November and December classes absolutely soared in both West Seneca and Amherst. We have never seen such high attendance for all our classes in many years! My team and I had recognized the need for additional Future Chef classes, so, we responded and you, the customer, did not let us down! They were almost all sold out by the end of October. Your response to the additional classes was beyond our wildest dreams! Moving forward, we will continue to bring new ideas for additional specialty and regular classes for our Future Chef’s If you have any ideas or if your child has any special topic they would like to participate in, please let us know. Let’s face it, some of our Future Chefs could become real Chefs one day! Throughout October, we continued participating in numerous local business health and wellness fairs. We made a lot of new friends throughout our travels and received interest from some businesses for future team building events, whether in the Cooking School or at a location of their choice. If anyone is interested in a team building event, please call the Cooking School for additional information. We were very excited for Audrey Zybala from Sweet Pea Bakery to do her hands-on cake decorating class! It was an incredible event! She will be returning in March to do another decorating class that will be themed for Springtime and will again show you some of her tips and tricks of how to decorate like a pro! My friend, Chef Darian Bryan, will be returning once again to present a demonstration class for Valentine’s Day! He will be cooking up a stellar menu, so, we hope to see you and your loved one attend this special early Valentine’s Day dinner! The Cooking School is happy to welcome a new instructor, Andrea Tarshus, to our culinary team! Due to her diagnosis of celiac many years ago, she started creating her own gluten-free/keto friendly menu and food. I have sampled it, and it is delicious! We hope to see you joining one of her classes this quarter! I would also like to thank Linda Duncan who has been an assistant and instructor in W. Seneca for over 10 years! She chose to begin instructing Adult classes with some of her ideas and recipes she has tried over the years for her own family of seven! I hope you will support her in her new adventure of becoming an Adult Instructor! Lastly, I would like to thank my entire staff of instructors and assistants! Without them, we could not bring you the service and variety of content in our schools! Thank you to all! The Cooking School Look Who’s Cookin’ In Our Kitchen The Plating Society Darian Bryan, Executive Chef and owner of The Plating Society, is also the Executive Chef at Fisher-Price headquarters in East Aurora. Darian was born and raised in Clarendon, Jamaica. He found his love for cooking at a young age while helping his mother with the local cook shop in town. Darian was able to come here seven years ago and has accomplished much in that time. He earned his Associate degree at ECC Culinary and started Caribbean Cuisine Week that happens every semester at the Statler Dining Room, ECC City Campus. Upon graduation, he worked at Hutch’s Restaurant. Darian earned his Sous Chef certification through the American Culinary Federation (ACF). He volunteers his Culinary teaching skills to ECC during Caribbean week each semester, his church’s healthy foods initiative, and has even had the chance to cook for the Prime Minister of Jamaica at the Simply Red Heart Association Festival. At age 23, he was awarded the Western New York Changemakers 30 Darian Bryan Under 30 Award and recently received the esteemed Iron Chef award for WNY. Executive Chef and Owner Darian is the personal Chef for a few Buffalo Bills players and has appeared of The Plating Society on the Culinary Stage at the Erie County Fair as well as the Tops Taste Of Buffalo Cooking Stage this past July. Audrey left a career as a high school English teacher to fulfill a lifelong dream of baking and making people happy through her food. She is completely self-taught and believes everyone deserves to indulge in delicious food. That is why at her bakery she offers gluten free, vegan, dairy free, egg free, nut free soy free, corn free…pretty much everything, but flavor free desserts! Since its opening four years ago, Sweet Pea has had two separate kitchens in order to prevent cross-contamination and offer completely safe foods to all customers. Audrey is excited to share her passion for teaching and baking with all of you! Audrey Zybala Spring Fling Decorating Class! Hands-On Owner of Sweet Pea Bakery Monday, March 23, 6 - 8:30pm Amherst Only $35 per person ! We had so much fun in November with Audrey, she decided to come back in March!! Only this time, she will teach the class how to decorate cupcakes using some of the newest decorating tips! Learn how to make roses and other flowers, piping, etc. You will learn numerous other techniques to decorate your cupcakes in a Spring Theme – just in time for Easter too! All ability levels are welcome! Please note any specific dietary restrictions, as Audrey can provide gluten free, dairy free and vegan cakes. 2
KIDS’ KITCHEN Kids’ Kitchen - Little Chefs These classes are held in both schools on the dates listed. Parents are requested to inform us of any food allergies at the time of registration. We try our best to accommodate all food allergies with substitutions. For safety reasons, we ask that your children come to class in a closed shoe or sneaker. No open toed, heeled or sandal/flip-flops allowed. Please tell us if you have any coupons or gift certificates at time of registration. Family Fun Night FAMILY FUN NIGHT These special classes are designed to be fun for the whole family! We will be creating a delicious menu that you will enjoy as family time as we cook and eat together! Please join us for these very special events! Classes will be offered in the Amherst School and taught by Ms. Alyssa. This class is designed to be a family activity. All children ages 7 years and older must be accompanied by an adult. WEEKNIGHT FAVORITES! Saturday, January 25, 6-8:30 pm, Amherst $20 per person or $60 for a family of 4 Our favorite comfort foods hit all the right notes: they always taste yummy, fill us up and make us feel good! But there’s one problem; most comfort foods come with fillers, preservatives, sugar, dye and a little too much fat. You can easily make and adjust your family’s favorite meals to exclude the ingredients you don’t need, and even amp up the level of flavor!
