David’s advice for wine novices who may be overwhelmed by wine selection is to “stick with the names you know. It makes sense to order within your comfort zone, at least initially, and when you’re ready, start experimenting. There really are no hard lines when it comes to pairings.” “Red wines don’t have to go with meats, whites don’t have to go with fish. There are some situations where the opposite wine pairs better with the dish. Pinot Noir actually goes well with salmon dishes. An oak-aged Chardonnay, like the one on the Club’s wine menu, pairs well with pork loin.” As for his personal drink of choice during the winter months, David prefers Bourbon Manhattans, Apple Cider Brandy and at times likes to keep it simple with a cold beer. David’s enduring piece of advice is simple: “Drink what you enjoy!” Crab Avocado Toast into bites of fresh root vegetables for added texture. To tie everything together, the avocado toast is topped with a splash of fresh blood orange for a citrusy bite to brighten the flavor. For a classic side dish, Chef Adam serves up his Roasted Brussels Sprouts with Bacon Jam, which he considers “more exciting than a simple bowl of vegetables.” The use of Brussels sprouts in this dish speaks to the way he works to incorporate sustainable ingredients from Wisconsin into everything he makes. The bacon jam and pecan garnish bring a touch of light-yet-hearty flavor to the roasted Brussels sprouts, providing a welcoming and ingenious twist on the classic vegetable dish. Plus, you can never go wrong with bacon! DRINK UP! FO O D & D R I N K Tailgate Twists WHEN THE WORDS “TAILGATE PARTY” ARE UTTERED, images of brats, beer and chips and dip often come to mind. And not by accident, they are delicious mainstays in the tailgate snack and beverage lineup. But how does one stand out without disrupting the classics that make tailgates great? Executive Chef Adam Struebing and our in-house Beverage Manager David Ginocchio have a few ideas to make your game-day party the talk of the town! Chef Adam’s Rutabaga Beer Cheese Dip is an easy-to- make dip inspired by a concoction he used to make in a slow-cooker in high school. To complement the dip, he took inspiration from another winter favorite—cranberries—which he masterfully blends into a Cranberry Salsa using local, organic cranberries from James Lake Farm. You can purchase Chef Adam’s tangy and spicy Cranberry Salsa at the Club ($8.99 for a 12-ounce jar) and pair it with your favorite chips. RUTABAGA BEER DRINK PAIRING CHEESE DIP SUGGESTION: (serves 8 people) SPICY MICHELADA Ingredients: Steps: Take a Beer Schooner 2 bottles of Mud Puppy Peel rutabagas and cut lightly rimmed with honey. E V E N T S J. HENRY & SONS IRISH WHISKEY DINNER Thursday, March 19th, 2020 The “luck of the Irish” will continue for those fortunate enough to attend a special dinner at the Club on March 19th. We are pleased to welcome back Liz and Joe Henry from J. Henry & Sons for a presentation and whiskey-paired meal. Their bourbon is made from heirloom red corn, developed in 1939 by the University of Wisconsin, that’s grown on their farm and aged for a minimum of five years. An outstanding four-course meal will be presented by the Club’s culinary team, and the Henry’s will be present to offer pairings and whiskey expertise. Guests will enjoy specially-prepared cocktails and mingling at 6:30 PM, with dinner to start at 7:00 PM. Price is $75 per person and seating will be limited for this exclusive event. BOOK AHEAD FOR OUR EASTER BRUNCH Sunday, April 12th, 2020 (Seating times: 10:30 AM and 1:00 PM) It’s time to make your reservations to the Club’s beloved Easter Brunch happening this April!
