Recipe of the Month Jesus’ “I am” Statements Spinach Salad By Ruth Olsen 1 lb fresh green spinach 1 (8 oz) can sliced water chestnuts, drained 1 small onion, chopped 6 bacon strips, cooked and crumbled 4 hard-boiled eggs, chopped Dressing: 1 cup salad/olive oil ½ cup vinegar ¾ cups sugar 1/3 cup ketchup 1 Tbsp Worcestershire sauce Wash and tear spinach into bite-size pieces and place in a bowl. Add water chestnuts and onion. Mix together oil, vinegar, sugar, ketchup and Worcestershire sauce to form dressing, and pour over spinach mixture. Top with chopped eggs and bacon. 6
