RYAN PEASE AND DAMIAN GRINDLEY BRECON ESTATE In westside Paso Robles, a shaded pathway leads to a cantilevered terrace where small-batch wines are poured and enjoyed under the shade of a towering oak. This is Brecon Estate. BY MELISSA CHAVEZ A t this boutique winery on the outskirts of west Paso Robles, guests such as Al Garcia, who is visiting from L.A. County, enjoy Damian and Amanda Grindley’s cache of wines in a peaceful, natural environment. “We’ve been coming to Brecon for six or seven years,” said Al, giving his glass of Syrah another swirl. “My friends and I like bringing our wives to Paso Robles. It’s just nice to get away, you know, and enjoy the wines up here.” Brecon Estate’s approach to hospitality is understated, accessible and very local in feel. But for owner Damian, grape-growing and winemaking is serious business. From spelunking in caves with wife Amanda, a native-born Australian, to maintaining a vineyard operation subject to the whims of Mother Nature, this Welshman has toiled in Central Coast vineyards for more than two decades. “Our vineyards are within a five-mile tractor drive,” said Damian. “It’s not one of these ‘passion’ things, it’s a seven-day-a-week job!” he added, grinning. growing and quality of the fruit that drew Damian to Paso Robles and convinced him to assemble his family here. But more recently, something else caught his attention. “I live on the property and walk through the vines,” said Damian. “I began to notice that I kept running into Ryan Pease, who also works in the industry, amongst the same sets of vineyards from where I sourced grapes for my wines. I’d be in one row and Ryan would be in another row. There was a sort of simpatico, a natural synergy about it, even in the way we sourced the same fruit. His hands-on approach reminded me of myself 10 or 15 years ago and the dynamism that younger winemakers have. Sometimes you have to reach out and grab them before somebody BY MELISSA CHAVEZ else does.” After completing his Cal Poly degree, Ryan devoted another year of classroom study to wine and viticulture and cellar work. In 2007, he joined winemaker Matt Trevisan at Linne Calodo as a vineyard and cellar hand before working at Epoch Wines for two seasons of harvest. Seven years later, Ryan returned to Linne Calodo as assistant winemaker for two harvests before creating his own “Paix Sur Terre” label of Rhone-style varietals. In Ryan, Damian saw a solid work ethic, mutual appreciation for mineral-driven hilltop Rhône grapes, and a habit of seeking the best of everything in Paso Robles to make great wine. Damian understood how Ryan could enable him to continue BY MELISSA CHAVEZ his boutique wine production at the elevated level that Brecon’s loyal patrons and wine club members have come to expect. In nearby Templeton, Ryan lives with his wife and two daughters. When the mood strikes, he enjoys cooking classic French cuisine for family and friends to pair with his own wines. For Damian, working with Ryan is less business partnership and more kinship between winemakers who love doing what begins in the vineyard, continues in the cellar and culminates with the consumer. The 2018 True Acacia Head Albariño is grown “one hill in from the ocean,” says Damian. Influenced by Brecon’s signature acacia wood aging process, this crisp and refreshing varietal is aromatic with stone fruit that opens cleanly with citrusy notes. BY MELISSA CHAVEZ Grenache grapes are infused with Tannat, Syrah, Malbec, and a skosh of Viognier grapes in this impressive summery wine. Also in the tasting room is the 2017 Brecon Reserve Petite Sirah, crafted from intensely concentrated clusters of Palisades clone grapes grown in ridgetop calcareous soil on “the cooler side of Camp Roberts.” Accented with Petit Verdot and Cabernet Sauvignon to lend structure to the wine, this ripe and silky royal purple potion was ready to pour after just fourteen months of aging. Arriving soon is Brecon Estate’s 2017 Meritage. Stylistically similar to Brecon Cabernet Malbec (which seems to fly out the door), this Meritage features a quartet of Malbec, Cabernet, Cabernet Franc, and Petit Verdot grapes. An update from Brecon Estate “We will be available from 11 a.m. to 5 p.m. daily for wine pickups,” said owner Damian Grindley. “If you would like to place a new order or pick up an existing one, please call (805) 239-2200. We’ll have it ready for you. “Unfortunately, all tastings and events have been suspended at this time. But rest assured – the second we are able to continue our business as usual, we will do so! “In the meantime, our team continues to practice their voice projection to maintain proper social distancing for those who do come to pick up their Brecon wine, and we are fortunate to have an abundance of alcohol onsite for cleaning purposes! We will continue to provide updates as more information becomes available. KROBAR Distillery Producing Sanitizer for Hospitals, Emergency Responders and Local Businesses The Paso Robles-based distiller is currently working around the clock producing KROBAR Sanitizer to meet the huge demand from hospitals, and emergency service and public works departments. The sanitizer is also available to residents. To do its part during the COVID-19 crisis, KROBAR Craft Distillery is repurposing its distillery from distilled spirits to hand sanitizer. Last week, the Paso Robles-based small business quickly changed its production facility to produce high-alcohol sanitizer, called KROBAR Sanitizer, to help equip area hospitals, emergency services and public works departments, and the general public. Word-of-mouth news of the distillery’s pivot to hand sanitizer production resulted in an outpouring of calls from hospitals, as well as local government agencies, both locally and throughout California. As a result, KROBAR’s owners and staffers are working around the clock and upping production. KROBAR has already donated hand sanitizer to local, regional and state agencies, including: Atascadero Fire Department, California Highway Patrol, Cal Fire, City of Bakersfield, Community Health Centers of the Central Coast, Compass Health, Mee Memorial Hospital (Salinas), Paso Robles Fire Department, San Luis Obispo Fire Department, SLO Paramedics and the SLO Food Bank. Make sure the flour mix is pressed onto the wet chicken. Slowly put the chicken into the oil. The chicken should not be crowded in the pan/pot. Just enough so they all have some space. Cook until a dark golden brown. This is probably about six minutes. But you can check with a thermometer, pull out a piece and check a couple of places to make sure its 165 degrees. Southern Fried Chicken Pull the rest out and let sit. (I check pretty much every piece for the right INGREDIENTS temperature, thicker pieces might need a few more minutes). The Central Coast is a large area filled with cowboy-friendly ranch lands, sunny warm hills, miles of romantic coastline and picturesque wineries. Similar to the Rhône Valley, this region also extends north-south along the coast from San Francisco to Santa Barbara. The wide range of climactic conditions similar to the Rhône Valley in France also gives this New World area a unique spectrum where the Rhône varieties flourish. Rhône varietals can be some of the most dynamic and delicious wines, especially those from this consistent growing region of the Central Coast. These wines can also offer great value for their quality.
