F E ATURE IN CONVERSATION WITH CHEF VIK Recently promoted to Chef de Cuisine for The Padang, SCC’s signature restaurant, we spoke to Chef Vik about his journey as a culinary master. Why did you decide to become a Chef? I started off stewarding and working as a kitchen helper in the hotel industry at a young age of 16 years. Over time, I realized that my fascination for cooking grew stronger and I enjoyed watching cooking shows and learning new cooking techniques. I was mentored by celebrity chef, Emmanuel Stroobant, and landed my first job in 2009 as Chef de Partie under his mentorship. Since then, I have been on a continuous quest to improve upon my recipes and learn as much as I can. Tell us about your journey as a Chef with SCC. It was a different environment for me when I first started off in SCC. For me, having a good team and establishing a standard way of preparing menu items are essential in this industry. I prefer to lead a team by being on the ground with them and I guide them to ensure that the proper cooking techniques and plating process is followed through. This is important to ensure that Members receive the same or even, better dining experience with The Padang Restaurant. I am thankful to the management for their strong support and for trusting the vision I have for the restaurant. What is your favorite cuisine to cook? I enjoy cooking French and modern European cuisines, mainly because of my past experience dealing with more intricate recipes. How do you get your inspiration? I think that the people we work closely with play a huge role in motivating us. This is something I picked up from my mentor. Leadership is an important factor in inspiration. What’s your favourite dish on the menu and why? Do you think you can further innovate the menu? The Scallops! Definitely but I would like to focus on the modern To be honest, when I first started as a Chef with SCC, European cuisine instead of the Asian varieties because scallops had been a constant dish on the menu, but we already have a very good Asian menu at The Oval the dish lacked substantial ingredients. So I decided to and Verandah. I would like to see how we can incorporate enhance the serving of scallops by introducing additional gluten-free options without compromising the taste of ingredients such as ‘Onion Broth’ and ‘Smoked Ham’ our dishes. My vision is for The Padang Restaurant to so that the dish achieves a total fruition to its taste. The be known for its Western cuisine, and I look forward to scallops are a favourite for me because it allows me to welcoming you to the restaurant. experiment with more variations and ingredients. 12 THE PADANG SEP / OCT 2018

S P O RTS N EWS Building Friendships SCC RECIPROCAL CLUBS: Through Sports Sports has a most wonderful way of bringing people together. The SCC helps make it easier for its Members to establish contact and facilitate the building of relationships through visits, tours and sports tournaments with its reciprocal clubs around the world. At the recent Soccer7’s, we caught up with Members from two of SCC’s reciprocal clubs where football teams have been participating in the tournament for many years now - the Royal Bangkok Sports Club (RBSC) from Thailand and the Yokohama Country and Athletic Club (YCAC) from Japan – and asked what has motivated them to return to the SCC each year. Ever since we participated back in 2009, the SCC Soccer Tournament itself has improved a lot in terms of the quality of the teams that participate, the hospitality and management, and the people working behind the curtains. It has really offered us a lot of pleasure and joy for the game we love; it is fantastic to be able to play right in the centre of the Padang, the heart of the beautiful city of Singapore. We would like to be invited once again, we really appreciate the warm hospitality we get to enjoy from the Club and the Members and staff; we appreciate every single minute of it. Joe Takeda - Yokohama Country and Athletic Club (YCAC) YCAC was honoured at the Soccer7’s Gala Dinner for 10 straight years of participation in the SCC Soccer Tournaments since 2009. The first time I came to Singapore to represent RBSC at the SCC Soccer Tournament was in 1998. Since then, I’ve returned 10 times, and I see myself continuing to visit SCC to play, upgrading from the Open category to the Legends category. Singapore is a nice place to visit, and it is a great feeling to be able to play on the pitch in the middle of the city. Whenever we come, we enjoy ourselves as a team, and it is also a chance for us to meet old friends. We’ve made many friends with other teams who participate regularly in the Tournament over the years - YCAC is a good friends of ours, and of course SCC is always good to us. S P O RTS N EWS SCC 1ST INTERSECTION CUESPORTS TOURNAMENT 2018 VENUE : MENS BAR DATE : 21ST JULY 2018 Written by Victor Yeong, Billiards and Snooker Section Convenor After a month of planning, we were finally ready for Finally, I would like to acknowledge and thank some the Intersection Cuesports Tournament! By the closing people, without whom the tournament would not registration date, we had received entries from Golf, have been possible: Billiards and Snooker Section Bridge, Squash, Dart/Balut, Cricket, Lawn Bowl, General Committee for their support and assistance; Janet and Committee and Billiards and Snooker Sections. Rui Yang for their untiring organisation work and assistance to manage the tournament properly; and Our objectives: GCB and GC for their support for the event. • An introduction of Snooker and Pool to Club mem- bers. See you next year! • Raise awareness of the facilities available, especially the Pool Table which was recently installed and offered free of charge for members’ play. • Create an opportunity for SCC Members to socialize and bonding. At 11am, we started our first game between the Squash and the Billiards and Snooker Sections and hopefully the beginning of a new tradition in SCC. While the friendly tournament progressed, free flow of beers and light snack were served. During the first round of the Knock Out format, players were to play to the end of the frame as for some, this was their first experience in Snookers and Pool. After the first round, a time limit of 20 minutes was imposed and there was some fierce competitiveness especially from the Golf, Cricket, Lawn Bowl and Squash Sections. By 5pm, our finalist emerged: Golf Section who qualified from the winner pool and Cricket Section qualified from the loser pool. Golf Section emerged Winner with a 3-0 victory in the final and became the first winner of the inaugural SCC Intersection Cuesports tournament 2018. Golf Section won the Challenge Trophy and $300 F&B Voucher, while the Cricket Section won a $150 F&B Voucher. There was a good spread of buffet dinner for all participants after the event which ran into the late evening together with the free flow of beers. I hope all participants enjoyed the one-day event; we certainly achieved our objectives. Our next event will be the Coaching Clinic in September, and we invite you to register your interest with the Marker. SEP / OCT 2018 THE PADANG 31

At what is approximately the half-way mark, we can see the “race” for “Baluteer of the Year” is hotly contested. While a mere 230 points or so separates the current ‘top three’, the situation can dramatically alter as we move towards December.
