FOREWORD As an organisation we have achieved many milestones during the past 34 years. Last year we celebrated our 30th Auction and this year marks our 20th year with Nedbank as our partners. One of the fundamental principles of the Cape Winemakers Guild is to raise the standard and international standing of South African wines. We achieve this by improving the quality of our wines through knowledge sharing and mutual support. Our annual Auction affords members the opportunity to experiment and select the best wines available to go under the hammer. It is also an ideal platform for the public to acquire some of the best wines produced by our members. Through the Nedbank Cape Winemakers Guild Development Trust we play an important role in the transformation of the South African Wine industry. Our Protégé Programme started in 2006 and we currently have eight Protégés in training. We are also involved with education of cellar workers and together with Vinpro have started a Viticulture Protégé Programme. All this would not be possible without the contributions of the Cape Winemakers Guild members through various fundraising projects, as well as generous donations from the Nedbank Foundation. SOUTH AFRICA’S FINEST WINEMAKERS Innovation, benchmarking and the sharing of knowledge spanning over thirty three years of winemaking excellence, is the proud accomplishment of the Cape Winemakers Guild. The Guild, an association of some of South Africa’s finest winemakers, has evolved into a body of 46 members who jointly represent the pinnacle of South African wine achievement. All experts in their respective fields, Guild members have played a significant role in the development of the South African wine industry. From the making of champion port-style wines, the establishment of Méthode Cap Classique and Cape blends, to the opening up of new, cooler wine regions, the introduction of sustainable farming and environmentally responsible wines, Guild members have always been at the forefront of innovation. 8
MEMBERSHIP Membership, by invitation, is extended to winemakers recognised for their high standards of craftsmanship, who have been responsible for producing outstanding wines for a minimum of five years and are actively involved in operations in the cellar from harvest to bottling. The CWG meets regularly as a technical tasting group, providing its members with an opportunity to evaluate wines from around the world and to share their knowledge and ideas – ensuring that CWG members remain leaders in the art and science of winemaking. AUCTION The annual Nedbank Cape Winemakers Guild Auction takes place on the first Saturday every October and showcases rare and unique wines produced in small quantities exclusively for this auction by Guild members. The auction is open to the public and attracts wine collectors and local and international buyers from the retail and hospitality industries. Telephonic and Proxy bidding options are available for buyers who wish to bid but are unable to attend on the day. The 2015 Nedbank Cape Winemakers Guild Auction, the Guild’s 31st, will take place at Spier, Stellenbosch, on Saturday 3rd October 2015 from 09:00. To bid on the auction and for access to the Bidders’ VIP Lounge, pre-registration is required before Friday 25th September 2015. THE NEDBANK CAPE WINEMAKERS GUILD DEVELOPMENT TRUST The Nedbank Cape Winemakers Guild Development Trust was established in 1999 to support social development through further education in the South African wine industry. In 2014 the Cape Winemakers Guild joined forces with Wine Training South Africa (WTSA) and has donated R400 000 to assist with the SETA accreditation of WTSA courses. This has enabled WTSA to establish a national qualification whereby cellar workers can develop their winemaking skills through formal training. The Nedbank Cape Winemakers Guild Development Trust and Protégé Programme are funded by donations from the Nedbank Foundation as well as proceeds raised by Guild members at various charity auctions. 11
PROTÉGÉ PROGRAMME By cultivating, nurturing and empowering promising oenologists and viticulturists, the Cape Winemakers Guild Protégé Programme plays an active role in the transformation of the industry to ensure its long term health and sustainability. The Protégé Programme was launched in 2006 to give aspirant winemakers the opportunity of working alongside and being mentored by the members of the Guild. Since then, 9 Protégés have graduated from the programme and now work as winemakers within the South African wine industry. In 2014, following the success of the programme, the CWG joined forces with VinPro and launched the CWG VinPro Protégé Programme. This gives recently graduated viticulturists hands on training regarding the intricacies of cultivation practices to ensure quality grapes for the production of diverse wine types and styles. This year, we have seven winemakers participating in the three year Oenology Protégé Programme and one viticulturist participating in the two and a half year CWG VinPro Viticulture Protégé Programme. Beyerskloof Traildust Pinotage 2013 ITEM NO. 100% Pinotage Wine of Origin Stellenbosch 01 Winemaker Beyers Truter The grapes were hand-picked in February 2013 from block A (bush vines) which is planted on the famous Bottelary gravel soils. The grapes came into the cellar at optimum ripeness, with the following analyses before fermentation: 24.9°B; pH - 3.52; TA - 7.6 g/l. The juice stayed on the skins for 3 days at an average temperature of 26°C. Punch-downs were done every 2 hours during fermentation and the juice was separated from the skins at 4.5°B. After malolactic fermentation the CWG selected Pinotage went to 225 litre new French oak barrels for 19 months. Tasting Notes: Dark red colour. Rich blackcurrant, dark cherries and cedar oak aromas. A big-structured Pinotage with intense dark fruit flavours. A complex middle leads to a smooth and pleasant finish. Great balance between fruit and oak will allow this Pinotage to age in the bottle for 10 years and more. Lot no. Rust en Vrede CWG Estate 2012 ITEM NO. 60% Cabernet Sauvignon, 30% Syrah, 5% Merlot, 5% Petit Verdot Wine of Origin Stellenbosch Winemaker Coenie Snyman 02 The grapes were picked between the 12th and 20th March and the components vinified and matured separately. The grapes were fully destalked and sorted. During fermentation in open fermenters, the cap was punched down four times a day. Maceration for 14 to 31 days, followed by maturation in 300 and 500 litre barrels for 22 months. Bottled on 10th February 2014. Tasting Notes: Vibrant, deep ruby. Lush and layered aroma of ripe cherry, jasmine and ganache; backed by leather and pencil notes. This savoury, graphite palate is well rounded by dark currant and dark chocolate and shows the complexity of Christmas cake. This full- bodied wine with its silky tannin is juicy with a fresh berry finish. This wine is packed in wooden boxes. Lot no. Jordan Chardonnay Auction Selection 2014 ITEM NO. 100% Chardonnay Wine of Origin Stellenbosch 03 Winemaker Gary Jordan This reserve Chardonnay is traditionally made using natural, wild yeast with the grapes coming from the acclaimed Nine Yards Chardonnay vineyard. Intensely concentrated lemon-lime flavours and slow fermentation in 228 litre Burgundian oak barrels for twelve months has resulted in a classic style with a new world twist. Quartzite veins through the 600 million year old granite sub-strata provide the backbone for the mineral flavours. Regular barrel rolling accentuates the rich, leesy character in this elegantly expressive wine. Tasting Notes: An iconic Chardonnay with intense, mineral, lemon-lime flavours and hints of butterscotch and vanilla. The full, rich mouthfeel and balanced oak integrate superbly with the tropical fruit finish. This wine is packed in wooden boxes. Lot no. Boekenhoutskloof Syrah Auction Reserve 2013 ITEM NO. 100% Syrah Wine of Origin Coastal Region 05 Winemaker Marc Kent A blend of our finest barrique from our Porseleinberg site in the Swartland, and a barrique of our finest from a Stellenbosch vineyard with very close proximity to False Bay. Each block was vinified separately in concrete, using wild yeasts and matured in old French oak for 27 months. After assembling the wine, it was egg-white fined and bottled for the auction. The Drift Farm “Die Kans Vate” Single Vineyard Barbera 2013 ITEM NO. 100% Barbera Wine of Origin Overberg 07 Winemaker Bruce Jack This is a small single vineyard Barbera planted in 2004. The wine was made in traditional open top fermenters with manual punch-downs. We played bagpipes and cello (obviously not at the same time) to the barrels to harmonise the tannin and give stability to the colour. It was always going to be a special wine – right from the start. We chose the best barrel for the Auction. Tasting Notes: The wine shows intense fynbos and buchu aromas, framing dense blackberry and mulberry with a hint of toasty oak. Saronsberg Die Erf Shiraz 2013 ITEM NO. 100% Shiraz Wine of Origin Tulbagh Winemaker Dewaldt Heyns 08 Hand-picked from our most consistent Shiraz vineyard (block 27), grown on gravelly soils at the foot of the Saronsberg. The grapes were bunch sorted, destemmed (10% kept whole bunch) and berry sorted. Only 60% of the berries were gently crushed into an open fermenter, the remainder kept whole. The must was de-juiced by 12% and given a four-day cold soak. Fermentation was allowed to start naturally, inoculated only after two-thirds of fermentation was completed. The wine was left on the skins for two weeks post-fermentation before being pressed into a new Allier French oak barrel. The wine was left on its lees for 10 months, spending 20 months in total in barrel. Tasting Notes: The wine has a deep, dark purple colour with prominent red berry, delicate violet and floral flavours and undertones of spice. Intensely interventionist fruit selection was followed by an extremely non-interventionist winemaking approach. Rijk’s CWG Pinotage 2012 ITEM NO. 100% Pinotage Estate Wine of Origin Winemaker Pierre Wahl 12 To ensure maximum fruit and colour retention, the grapes were hand-picked in the cool of the night. The crushed berries were given a 56 hour cold maceration prior to fermentation. Pigeage took place 3 times a day to extract tannin and colour. Skins were pressed at 5°B. Malolactic fermentation took place in barrels. Matured for 22 months in one new and one second fill French oak barrel. Tasting Notes: This dark red coloured wine has intense red fruit aromas of cherry, strawberry and cranberry, with underlying coconut and cinnamon spice on the nose. Simonsig Heirloom Shiraz 2013 ITEM NO. 100% Shiraz Wine of Origin Stellenbosch Winemaker Johan Malan 16 Full, ripe Shiraz grown on deep red weathered shale soil was picked at the end of March and fermented in a concrete tank with regular pump-overs. Slightly cooler fermentation at 24°C added fresh fruit and softer extraction. Maceration lasted 4 weeks and the wine was racked straight into new Nevers oak seasoned for 36 months. Regular rackings helped to soften the tannins and expose the fruit. Bottled after 18 months. Tasting Notes: Fresh sour cherry and dried herbs dominate the spicy French oak aromas. Forest floor and earthy truffle notes mask any sweet flavours. Lovely wild herb, white pepper and dried fynbos characters combine to show the full spectrum of Shiraz fruit expression. Paul Cluver Auction Selection Pinot Noir 2013 ITEM NO. 100% Pinot Noir Wine of Origin Elgin 17 Winemaker Andries Burger The grapes were selected from our highest lying Pinot Noir vineyards and are all new clones - 667, 113, 115. Harvested, cold soaked for 8 days with the fermentation starting naturally and then inoculated. Punched down twice a day. After fermentation, only free run juice was transferred to barrel for malolactic fermentation. The wine was then left in barrel, of which only 25% was new, for 11 months before bottling. Tasting Notes: ‘Understated’, the colour is gentle and alluring, the nose reticent but intriguing. All in all, captivating! Initially, red stone fruit combined with sweet cherry blossom fragrances dominate. Underlying, there are whiffs of raw meat and wet, warm earth. There are also hints of wild mushroom and pepper. Silverthorn Wines Big Dog Méthode Cap Classique 2010 ITEM NO. 60% Chardonnay, 40% Pinot Noir Wine of Origin Western Cape Winemaker John Loubser 18 The Chardonnay and Pinot Noir were both gently whole-bunch pressed. The Chardonnay juice was barrel fermented and aged in old French oak barrels in order to enhance creaminess and palate weight. The Pinot Noir juice was fermented in stainless steel tanks to accentuate the berry fruit characters. After blending, the wine was bottle fermented and spent 53 months on the lees before being disgorged and spending an extra 6 months on the cork. Tasting Notes: The Chardonnay imparts distinct citrus and chalky characters with hints of subtle oak, while the Pinot Noir adds bright strawberry notes. Nitida Sauvignon Blanc Barrel Twenty Eight 2014 ITEM NO. 100% Sauvignon Blanc Wine of Origin Durbanville 21 Winemaker Bernhard Veller We have been working with barrel fermented Sauvignon Blanc for many years and believe this to be a classic example. Partially fermented in seasoned barrels and some new wood, with grapes from great vineyards, this wine was bottled after 10 weeks barrel ageing. Further, this wine has been matured for 12 months in the bottle allowing the further development of classic Sauvignon Blanc cool climate characteristics. Tasting Notes: Complex wine highlighting nuances of cold climate Sauvignon Blanc and hints of new wood. Green and yellow fruit, quince and litchi, supported by crisp acidity. On the nose there is a dominant note of lemon and crisp apple fruit, with just a touch of yeast and cashew. On the nose and palate entry - fresh lime and ripe citrus. Rich raspberry notes burst on the palate with a creamy and gentle mousse, ensuring richness and finesse. On the palate the mousse is rolling and full. A softer, pillowing breadth starts to fill in, yet the wine stays very focussed and savoury, with lovely weight and texture. Cederberg CWG Teen Die Hoog Shiraz 2013 ITEM NO. 100% Shiraz Wine of Origin Cederberg 27 Winemaker David Nieuwoudt Cold maceration for four days, inoculated with selected yeast strain and pump-overs every six hours during fermentation. Fermentation at 25 – 28°C for about five days. 20 days of extended skin maceration and malolactic fermentation in new oak barrels. Barrel maturation took place in 225 litre medium toast, tight grain oak barrels for 15 months. Tasting Notes: The Shiraz shows great fruit intensity with aromas of mulberries and blackberries with a combination of liquorice and violets on the nose. Strydom Family Wines Paradigm 2012 ITEM NO. 74% Cabernet Sauvignon, 16% Merlot, 5% Cabernet Franc, 5% Petit Verdot Wine of Origin Stellenbosch Winemaker Rianie Strydom 28 The grapes were all hand harvested and separately fermented during the cool morning hours. Fermentation was done in open top tanks with pump-overs and punch-down by hand 4 to 5 times during the first half of fermentation and twice a day during the last part of fermentation. Total maturation for 14 to 16 days. Malolactic fermentation was in French oak barrels. After racking off the lees, the wine was further matured for 18 months in 50% new French oak barrels with the balance made up of second and third fill barrels. Tasting Notes: Paradigm – “A standard or typical example”. A classic and beautifully balanced wine with a core of dark fruit still tightly wrapped in fine-grained, chalky tannins and a savoury aftertaste - as you would expect from a Bordeaux style blend. Waterford Estate Chardonnay Auction Selection 2011 ITEM NO. 100% Chardonnay Wine of Origin Stellenbosch 29 Winemaker Kevin Arnold Fruit selected from within a single vineyard underwent natural alcoholic fermentation in 500 litre Burgundy barrels. Malolactic fermentation was prohibited and the wine was allowed to age on the gross lees for 12 months. Tasting Notes: Vibrant aromatics of citrus blossoms, lime cordial and a touch of roasted almond from the oak. The palate is elegantly rich and well structured, relating to the intensity of the 2011 vintage. Ernie Els CWG 2013 ITEM NO. 60% Cabernet Sauvignon, 30% Shiraz, 10% Merlot Wine of Origin Stellenbosch Winemaker Louis Strydom 30 The grapes were hand-picked in the cool of early morning. Grape bunches were gently destalked and lightly crushed. On the sorting table, all excess stalks and rotten berries were carefully removed by hand. Fermentation took place in small 300 litre open top oak barrels with yeast WE 372 being added to the juice. The wines were punched down manually 5 times a day ensuring maximum colour extraction from the skins. Each variety was separately vinified and blended after 18 months of maturation. Tasting Notes: This wine has a pitch black core with a deeply rich hue, leading to a nose that dazzles with vanilla, blackberry, liquorice and cherry. Whiffs of wild flowers and a touch of cedar spice add refined depth and complexity, all coated by incredibly fine, chalky tannins. The only one of its kind and skilfully blended by Guild Cellarmaster Gottfried Mocke, this bottle reflects the passion and camaraderie of the members of the Cape Winemakers Guild. The bottle comes in a sturdy wooden presentation box proudly adorned with the Guild’s emblem. Proceeds from this bottle will be donated to the Nedbank Cape Winemakers Guild Development Trust and will go towards the Guild’s Oenology and VinPro Protégé Programme, a mentorship programme for young, upcoming winemakers and viticulturists. Kanonkop CWG Pinotage 2013 ITEM NO. 100% Pinotage Wine of Origin Simonsberg Winemaker Abrie Beeslaar 32 Old, unirrigated bush vines with yields of 3-5 tons/hectare were used to make this wine. The grapes were destemmed, sorted, crushed and fermented in open top “kuipe” for four days. The wine underwent malolactic fermentation in barrel and spent a total of 18 months in barrel. Tasting Notes: Deep red colour, with red berries and a touch of dark chocolate on the nose. The fruit carries through to the palate with a richness that only comes from old vineyards. Villiera Meteor Méthode Cap Classique 2008 ITEM NO. Chardonnay, Pinot Noir, Pinot Meunier Wine of Origin Stellenbosch 33 Winemaker Jeff Grier A selection of perfectly healthy, early picked fruit was whole bunch pressed in a pneumatic bag press. Only the cuvée (500 litres/ton) was settled and naturally fermented. The final cuvée is comprised of all 3 Champagne varieties; Chardonnay, Pinot Noir, Pinot Meunier. The blend is dominated by Chardonnay to improve maturation potential and a portion was fermented in used barrels for extra complexity. The red grapes add body, roundness, and flavour. After stabilisation and addition of liqueur de tirage, the wine was bottled for second fermentation. After 5 years on the lees, this sparkling wine was riddled and disgorged. A small addition of dosage has ensured great balance. Tasting Notes: Rich, biscuity and slightly spicy on the nose with a hint of berry fruit and roasted almonds on the palate, developing finesse and complexity on the aftertaste. The wine has evolved over the last couple of years, developing more intensity and a creamier texture and will still benefit by another year or two in the bottle. 40 cases of this wine were previously sold on the 2013 Auction. Spier Frans K Smit Auction Selection 2011 ITEM NO. 47% Cabernet Sauvignon, 36% Merlot, 17% Cabernet Franc Wine of Origin Stellenbosch Winemaker Frans Smit 34 This wine was fermented in 400 litre roller barrels and a 1 000 litre open top fermenter, followed by 24 months in barrel maturation. A light egg fining rounded off the tannin structure. Tasting Notes: Dark edged, this wine shows prominent ripe blackcurrant on the nose with hints of cassis and spicy undertones. Miles Mossop Wines Saskia-Jo 2014 ITEM NO. Chenin Blanc Wine of Origin Swartland 35 Winemaker Miles Mossop This is a blend of 85% Chenin Blanc and 15% Clairette Blanche. The Chenin Blanc grapes are from a single old bush vine vineyard from the northern part of the Paardeberg in the Swartland, growing in sandy soils of granite origin. The Chenin Blanc was picked at around 24°B. The Clairette Blanche is from a similar site and was picked at a very low sugar (19.5°B) to preserve the acidity that is inherently low in this variety. The grapes were whole bunch pressed. The juice was then run to 400 litre barrels after minimal settling and the fermentation was allowed to start naturally. After fermentation, the wine was topped and matured ‘sur lie’ for 10 months in French oak, with regular lees stirring. Only 2nd and 5th fill barrels were used. Tasting Notes: This wine has a stunning, light golden hue. The aromas on the nose are amazingly intense and complex. There are hints of white peach, pineapple and quince jelly. There is a hint of toasted almonds and citrus blossom. The palate is full and rich. This wine is packed in wooden boxes. Lot no. Malolactic fermentation took place in barrel. Matured for 18 months in 30% new small French oak barrels. Tasting Notes: Deep intensity in colour with perfumed violets and white pepper spice on bouquet, with some meaty and oriental spice undertones on the palate. Great balance between fruit and oak.
