RIPLEY-HURON FALL FAIR ADVANCED 2020 Class 4 CANNING Canning Committee: Carol Shantz - 519-396-5901, Bernice Mitchell, Donna Hastings. EXHIBIT PLACEMENT: Thursday, September 24 – 7:00 to 9:00 p.m. Friday, September 25 – 8:30 to 11:30 a.m. EXHIBIT REMOVAL: Saturday, September 26 – 4:30 to 5:00 p.m. Removal prior to this time will result in forfeiture of prize money. We are not responsible for items left after 5:00 p.m. Points are only awarded for items receiving prize money or products. If more than 7 entries in any one section, 2 additional prizes will be awarded of $1.50 each, excluding specials. If there are more than 11 entries in a section, the section will be divided in half and judged as two separate sections, excluding specials. Please use clear glass jars and watch Jar sizes. Please do not use covers on top of lids as it makes Jars hard to open. OPEN TO ALL EXHIBITORS (including men). Prizes: 1st $6.00, 2nd $5.00; 3rd $4.00 and 4th $3.00 1. Gord’s Fall Squash Soup 4 Tablespoons butter 2 cups finely chopped yellow onions 4 to 5 teaspoons curry power About 3 pounds of squash 2 apples peels cored and chopped 3 cups of chicken or veggie stock 1 cup apple juice Salt and pepper to taste Melt butter in a pot add chopped onions curry power and cook over low heat until onions are tender but not brown about 25 minutes. Peel squash discard seeds and chopped. When onions are tender add stock squash and apples and bring to a boil cook for 25 minutes or until squash is tender. Cool drained squash apples and onions and puree. Add apple juice and stock to desired consistence. Return to a boil. Ladle into sterilized jars and seal.

MORRISON BERRIES JAM SPECIAL Jars to be 250ml Autumn Festival Strawberry Field Jam crushed strawberries (4 cups) 5 1/2 cups granulated sugar 5 tart apples 2 cups water 1 lemon (save juice and peel) Wash peel and core apples. Cook in the 2 cups of water with the peel of the lemon. Cook for 20 minutes . remove peel and mash the apples until they are the consistent of apple sauce add the crushed strawberries and return the lemon peel , bring to a boil. Stir in the sugar slowly stirring frequently to prevent scorching . boil hard for 1 minute add the lemon juice from the lemon and boil 1 more minutes- remove the peel Ladle into hot sterilized jars PRIZES 1st - 2nd - 3rd - SOCIETY SPECIALS Prizes in sections 41-47 Prizes to be $6.00 $5.00 $4.00 $3.00 The following 39 to 45 -- jar size -- exhibitors choice 41. Rhubarb Butter 4 stalks of rhubarb 1 apple cored and cut into chunks ½ cup honey 2 teaspoon vanilla ¼ to ½ teaspoon of cinnamon Puree apple- rhubarb until smooth Pour into pot add honey vanilla and cinnamon Bring to a boil stirring frequently Turn to simmer and continue to cook for 15-20 minutes until desired consistency is reached Ladle into hot sterilized jars
RIPLEY-HURON FALL FAIR ADVANCED 2020 42. Fall Bounty Bean Salad 750 ml white vinegar (5% acidity or higher. (3 cups l24 oz) 550 g sugar (white. 2 1/2 cups )' 1 tablespoon mustard seed 1 teaspoon celery seed 4 teaspoons pickling salt 1 1/4 cups water/ 4 1/2 cups green beans Cut into 1/2 inch 4 1/2 cups yellow beans Cut into 1/2 inch 3 stalks celery 1 2/3 cups onion (sliced thinly) 1 cup red bell pepper (diced). 1 ½ cup kidney beans (cooked, drained) 1 ½ cup chickpeas ( Cooked, drained. Instructions: 1. Make the picking solution by combining in a large pot everything from the vinegar down to and including the water. Set aside. 2. Prep the green beans, yellow beans, celery, onion and bell pepper. You can combine all in a large pot. Set aside. 3. Put a large kettle or pot of water on to boil. 4. Put the brine on a low burner to start simmering. 5. Pour the water that you boiled over the veggies in their pot. Bring the veggie pot to a boil over medium high heat, then add the kidney and chick pea and reduce to a gentler boil for 5 minutes. 6. Drain the veggies. 7. Divide the drained veg mixture out among the jars. 8. Leave (1/2 inch) headspace. 9 Bring pickling mixture to a full boil, then turn off heat. 10 .. Divide the pickling solution out amongst the jars, leaving (1/2 inch) headspace. lf you are short of pickling solution, add a bit of heated white vinegar (not water) directly to the jars that need it. 11 Wipe jar rims. 12. Put lids on. 13. Process in a water bath or steam canner. 14 Process jars for 15 minutes; increase time as needed for your altitude. 43. Cauliflower Pickle 44. Meatless spaghetti sauce 45. BERNARDIN BEST OF SHOW Taste of Autumn Apple Raspberry Jam 3 cups crushed raspberries 1 lemon rind and juice 7 cups white sugar 2 cups unsweetened apple sauce 1 pouch Bernardine fruit pectin Wash and crush raspberries, grate lemon and squeeze juice to measure ¼ cup. Combine crushed raspberries applesauce, lemon juice and rind. Whisk in Bernardine fruit pectin. Bring to a boil stirring constantly add sugar boil hard for 1minute remove from heat, Skim off foam with a metal spoon ladle into sterilized jars. makes about 8 -250 ml jars 1) Must use a 250 ml jar Bernardin Snap Lids Must have proof of purchase of the Bernadin pectin judging will be based on texture appearance & creativity

BERNARDIN GIFT PACK COMPETITION A) include a description of the gift entry B) Must include at least 3 filled mason jars (to be judged on taste and appearance) sealed with Bernardin snap or Bernardin collection Elite snap lids C) Must be submitted in appropriate container not necessarily a basket D) Maximum cost container and components not to exceed $20.00 E) Entry may be decorated for any theme (holiday get well etc. ) and may include appropriate additional items such as soap, candles, candy, soup mixes etc F) Judges select winner based on creativity quality of home canned product perceived value and appropriateness of presentation G) Photo will be taken of class winner by committee PRIZES 1st - 2nd - 3rd - 49. BERNARDIN JAM AWARD Fall Plum Jam 4 ½ cups prepared plums (about 2 to 3 pound) ½ cup water 7 ½ cup sugar 1 package of Bernardin pectin Remove pit Chop unpeeled plums finely, place in a large saucepan. stir in the water. Bring to a boil stirring frequently. simmer on medium low heat for 5 min stirring frequently. measure exactly 4 ½ cup of plums into a large saucepan add sugar -mix well -bring to rolling boil on high heat cook 1 minute stirring constantly remove from heat immediately stir in pectin stir and skim foam for 5 minutes to prevent fruit from floating to surface Pour immediately into warm sterilized jars filling to within ¼ inch from rim cover with lids – may takes 24 hours to set 1) Must use a 250 ml jar Bernardin Snap Lids Must have proof of purchase of the Bernadin pectin judging will be based on texture appearance & creativity. RIPLEY-HURON FALL FAIR ADVANCED 2020 50. BERNARDIN BEST OF SHOW Jar size to be 500 ml Autumn Equinox Peach Salsa 4 cups finely chopped peeled peaches 1/2 cup finely chopped onions 1/2 cup chopped red peppers 2 to 4 jalapeno peppers finely chopped 1/4 cup finely chopped cilantro 2 cloves garlic minced 1 to 1/2 teaspoons cumin 1 teaspoon lemon zest 1/4 cup white vinegar 3 / 3/4 cups sugar divided 1 box pectin Combine peaches onions peppers cilantro garlic cumin lemon peel and vinegar in large saucepan set aside. Mix 1/4 cup of the sugar and the pectin add to peaches mixture and blend well. Bring to full rolling boil on high heat stirring constantly still in remaining sugar 3 1/2 cup return to full boil and boil 1 min remove from heat stir and skim off the foam for 5 mins to prevent the fruit from floating. We are not responsible for items left after 5:00 p.m. Points are only awarded for items receiving prize money or products. NOTES: Nuts and nut by-products may be used in baking. Entries to be homemade by exhibitor. Please attach entry tags to outside of bag. All entries must be baked prior to fair day judging. Contents not to exceed 25 dollar value. 5. Brownie Caramel Pecan Bars 1/2 cup sugar 2 tablespoons butter or margarine 2 tablespoons water 2 cups (12-ounce package) Semi-Sweet Chocolate Chips, divided 2 eggs 1 teaspoon vanilla extract 2/3 cup all-purpose flour 1/4 teaspoon baking soda 1/4 teaspoon salt 1 cup pecan pieces Caramel Topping (recipe follows) 1. Heat oven to 350°F. Line 9-inch square baking pan with foil, extending foil over edges of pan. Grease and flour foil. 2. Combine sugar, butter and water in medium saucepan. Cook over low heat. stirring constantly; until mixture boils. Remove from heat. Immediately add I cup chocolate chips; stir until melted. Beat in eggs and vanilla until well blended. Stir together flour, baking soda and salt; stir into chocolate mixture. Spread batter into prepared pan.
RIPLEY-HURON FALL FAIR ADVANCED 2020 3. Bake 15 to 20 minutes or until brownies begin to pull away from sides of pan. Meanwhile. prepare Caramel Topping. Remove brownies from oven; immediately and carefully spread with prepared topping. Sprinkle remaining 1 cup chips and pecans over topping. Cool completely in pan on wire rack. being careful not to disturb chips while soft. Lift out of pan. Cut into bars. CARAMEL TOPPING: Remove wrappers from 25 caramels candies. Combine 2 tablespoons butter or margarine, caramels and 1/2 tablespoon milk in medium microwave-safe bowl. Microwave at HIGH (l00%) 1 minute; stir. Microwave an additional 1 to 2 minutes, stirring every 30 seconds, or until caramels are melted and mixture is smooth when stirred. Use immediately. Cake must be covered, plastic dome should be used. Plastic Wrap not accepted. Entry tag securely attached to outside. Plates or board will not be returned as the first place cakes will be auctioned. PRIZES: 1st - 2nd - 3rd - B. Chocolate Chip Cookie Bars – no mixes Exhibit three (3) 1 1/2" square pieces on unbreakable plate in a Ziploc bag with entry tag securely attached to outside. PRIZES: 1st - 2nd - 3rd - 10. BAKING CONTEST Chewy Cherry Bars CRUST: 1 cup all-purpose flour 1 cup oats 1 cup lightly packed brown sugar 1 tsp baking soda 1/2 cup golden flavour Crisco shortening FILLING: 2 eggs 1 cup lightly packed brown sugar 1/2 tsp almond extract 2 tbsp all-purpose flour 1 tsp baking powder 1/4 tsp salt 1 cup flake coconut 1 cup maraschino cherries, drained and coarsely chopped 1/2 cup chopped walnuts ICING: 1/4 cup Crisco shortening 1/2 tsp almond extract 2 cups sifted icing sugar 3-4 tbsp milk or cream CRUST: Combine flour, oats, brown sugar and baking soda in mixing bowl. Cut in shortening until crumbly. Press into 13" x 9" (3.5L) cake pan. Bake at 350°F (180°C) for 10 minutes. FILLING: Beat eggs, brown sugar and extract together thoroughly. Combine flour, baking powder and salt. Stir into egg mixture; mix well. Stir in coconut, cherries and nuts. Spread evenly over crust. Bake at 350°F (180°C) for 25 minutes, or until lightly browned. Cool completely. ICING: Beat all ingredients together until smooth and creamy. spread over bars.

Twisted Parmesan Breadsticks 1½ cups warm water 2 tbsp sugar 1 tbsp active dry yeast 3½ cup all-purpose flour 1 tsp salt To brush on top 4 tbsp butter ½ cup grated Parmesan cheese In a small bowl mix the water, yeast and sugar together and let sit for 10 minutes. In the bowl of your mixer add the flour and salt and mix. Pour the yeast water to the bowl and using the dough hook mix for a couple minutes until smooth. Let the dough rise for 15 minutes. Roll out the dough on a floured surface into a large square. Brush the top with melted butter then sprinkle with Parmesan cheese. Fold the dough in half and cut into 15 to 20 strips. Twist each strip and place on an ungreased cookie sheet. Let the twists sit for another 15 minutes to rise a bit. Preheat oven to 400°F. Line baking sheets with parchment paper. Beat butter and sugars until combined. Add eggs and vanilla. Beat in remaining ingredients. RIPLEY-HURON FALL FAIR ADVANCED 2020 YOUTH POSTER COMPETITION - SPECIAL Entry Rules 1. “Promoting Your Fair” – Name and date of fair must be clearly shown on poster. 2. Must be hand drawn. 3. Poster size: Minimum – approximately 22cm X 28cm, without border Maximum –approximately 28cm X 44cm, without border 4. Each entry must be centered on a CARDSTOCK or BRISTOL BOARD exposing approximately a 5.5cm border on all four sides. 5. Name of fair, district #, contact person, owner of poster, complete mailing address must be clearly labeled on the back of each entry. 6. The winning poster from each class at each fair will be eligible to enter the district competition. District winners are eligible to enter at the provincial competition. 7.
