News from Knox - A February 2021 Update from our church Annual Reports and the Annual Meeting: This year’s annual report and annual meeting are going to look a little different… thanks to Covid 19. Elders will be contacting the congregation to ask whether you would prefer a printed or an electronic version of the annual report in the next few weeks. These calls will determine how many printed copies of the annual report will be produced. Our office administrator, Kathy Kestle will require to know final numbers by February 21st. Annual reports will be emailed the last week in February. Those preferring a paper annual report will be contacted to either pick it up at the church or have it delivered sometime in the last week of the month. If you have questions, comments or concerns regarding the annual report, you are invited to contact your elder or Rev. Mavis Currie. Your concerns will then be directed to the appropriate person. On Sunday March 14th at 11:30am, we will hold a zoom congregational meeting for all who are able to attend. The zoom link will be emailed out a few days before the meeting. It is our hope that this meeting will primarily be an opportunity to hear from the Board of Managers re. our finances for the past year. It will also allow us to approve the budget for 2021. Finally, it will be fun to just everyone’s face – so we hope you will join, if you are able to zoom! Upcoming Book Study on Zoom This month, we are reading “The Gown” by Jennifer Robson. “The Gown” takes us inside the workrooms where one of the most famous wedding gowns in history was created, the wedding gown of Princess Elizabeth. The book introduces the reader to three unforgettable heroines, their points of view, and their lives woven together by the pain of survival after World War 2, the bonds of friendship and the redemptive power of love. This book study will be taking place on Tuesday February 9th at 2pm. If you have not yet registered, please contact. Rev. Mavis Currie.
February Zoom Bible Studies – Wednesday February 10th and Wednesday February 24th 10:30am -11:30am. Join one or both! Register by email or calling Mavis. You will be sent the scripture passage and a short discussion outline on the passage being studied. We have been averaging around 12 people at our zoom Bible studies. Staying Mentally strong in the midst of the Pandemic – Wednesday February 24th at 7pm with guest speaker (and Knox elder) Jennifer Holt. Jennifer Holt is an established Psychotherapist with over 21 years of experience in professional practice. She is qualified as an Expert Witness and graduated from The University of Western Ontario in 1998 with a Masters Degree in Education (Counselling Psychology). Currently, Jennifer owns the private practice, Holt Counselling & Consulting Services located in London, Ontario. She also travels throughout south-western Ontario to provide services for clients whom otherwise would be unable to attend counselling. Prior to opening her private practice, Jennifer has had several job titles such as Counsellor, Manager, and Sex Offender Specialist. She has worked for non-profit agencies such as: Changing Ways – helping men end men’s violence against women and children; Womanpower Inc. – helping women find employment; and the Sexual Assault Centre of London (SACL) for female survivors of sexual assault. As a teacher and guest lecturer, Jennifer regularly shares her knowledge and experiences with students at The University of Western Ontario, Althouse College, King’s College, and Fanshawe College. Her accomplishments are numerous and varied, as are her affiliations with career related organizations and institutions. Sympathy Extended to… Kathy Kestle, following the loss of her mom. Zoom Art with Stella for adults – In February, we will be holding a Sunday afternoon “Art with Stella” zoom for ADULTS! This class uses items that all of us would have in our own homes. An opportunity to get creative. Want to try it out? Pre-register by contacting Rev. Mavis Currie. Shrove Tuesday Pancakes: Tuesday February 16th is Shrove Tuesday – the last day before the church turns its eyes toward the cross and walks through Lent toward Easter. The word “shrove” is derived from the anglo saxon word “shriven” which refers to confession of sin. On this night before the more serious and austere time of Lent, Christians often saw Shrove Tuesday as a day to eat up the fat and sweet foods in the house. Last year at Knox, we gathered in Rodney hall for pancakes, sausage and fruit cocktail prepared by the Men’s Club on Shrove Tuesday. This year, we will need to stay home… but we can still have pancakes and sausage! Below is a tried and true pancake mix for February 16th for you and your family. Shrove Tuesday Pancakes INGREDIENTS • 2 cups all purpose | plain flour, (290 g | 10 oz) • 1/4 cup granulated sugar or sweetener, (60g | 2 oz) • 4 teaspoons baking powder • 1/4 teaspoon baking soda • 1/2 teaspoon salt • 1 3/4 cups milk, (440ml) • 1/4 cup butter, (60g | 2 oz) • 2 teaspoons pure vanilla extract • 1 large egg INSTRUCTIONS 1. Combine together the flour, sugar (or sweetener), baking powder, baking soda and salt in a large-sized bowl. Make a well in the centre and add the milk, slightly cooled melted butter, vanilla and egg. 2. Use a wire whisk to whisk the wet ingredients together first before slowly folding them into the dry ingredients. Mix together until smooth (there may be a couple of lum ps but that's okay).
(The batter will be thick and creamy in consistency. If you find the batter too thick -- doesn't pour off the ladle or out of the measuring cup smoothly -- fold a couple tablespoons of extra milk into the batter at a time until reachin g desired consistency). 3. Set the batter aside and allow to rest while heating up your pan or griddle. 4. Heat a nonstick pan or griddle over low-medium heat and wipe over with a little butter to lightly grease pan. Pour ¼ cup of batter onto the pan and spread out gently into a round shape with the back of your ladle or measuring cup. 5. When the underside is golden and bubbles begin to appear on the surface, flip with a spatula and cook until golden. Repeat with remaining batter. 6. Serve with honey, maple syrup, fruit, ice cream or frozen yoghurt, or enjoy plain! Please take a picture of your pancakes for online church on the first Sunday of Lent!!
